Most of the time if I make a pasta dish for dinner, we will substitute zucchini noodles in place of the pasta noodles. After eating fairly clean and healthy for a few years now, we actually prefer these zoodles instead.
Well, my hubby and I do. The kids still like having the real deal.
I usually save my pasta dinners for the times when we go out to eat. Since we do not eat out that often, I do not feel any guilt in ordering a meal that is mainly carbs. Exercising often and eating all things in moderation is a big key in our healthy lifestyle.
One of our favorite lean and green meals that we make often are these Parmesan Garlic Shrimp Zucchini Noodles. Our youngest is the only one who totally boycotts the zucchini for noodles.
Actually, he doesn't like shrimp either, so he usually eats a box of mac and cheese and some canned chicken for his dinner.
Every once in a while though, I get the itch to make a delicious and creamy pasta dinner made with real pasta. That really doesn't happen often, so when I get that feeling I have to act on it.
Now most of the time when we eat shrimp, I buy big bags of frozen shrimp at Sam's Club and portion out what I need for the recipe.
I love thawing half of one of the big bags and making these Homemade Cajun Shrimp Burgers for dinner They are so good on a healthy low carb wrap or on a regular hamburger bun.
But sometimes I like to cheat in the shrimp department when I do not want to spend a lot of prep time on the meal. Times like that I buy boxes of ready to go shrimp in the freezer section at the grocery store.
How to make Parmesan Shrimp Scampi
Noodles: Cook the angel hair pasta according to the package directions. Feel free to use whatever pasta you like or have on hand.
Shrimp: Sauté the package of shrimp in a large skillet until cooked through. Gently remove the shrimp and place in a bowl.
Sauce: Sauté onions and butter in the same skillet. Stir in the garlic, chicken broth, heavy cream, and Parmesan cheese. Continue to stir until melted and creamy. Season the sauce with a pinch of red pepper. If you like it spicy, add another pinch. If you do not like spicy food, leave this out and just season the sauce with salt and pepper.
Mix: Stir the pasta into the homemade cheese sauce until everything is coated. Gently stir in the can of drained tomatoes and cooked shrimp. Serve immediately.
Recipe Tips
- If you do not want to buy a ready made shrimp, sauté fresh shrimp in a mixture of butter and spices.
- Substitute zucchini noodles for the pasta to make this a delicious low carb meal.
- Control how spicy this pasta dish is by using less or more red pepper.
- Give this pasta even more spice by using a can of tomatoes with green chilis instead of diced tomatoes.
Make it a Full Meal
Since this pasta dinner is rich and slightly heavy, a salad or some steamed broccoli would be a good side dish to serve with it.
A loaf of French bread, breadsticks, or dinner rolls would be a good addition to have in a basket on the dinner table.

Easy Spicy Parmesan Shrimp Scampi
A creamy and spicy cheese sauce makes this easy shrimp scampi a delicious meal to have on the table in under 30 minutes.
Ingredients
- 8 ounces angel hair pasta
- 1 - 12 ounce box frozen SeaPak Shrimp Scampi
- ยฝ cup diced onion
- 1 teaspoon minced garlic
- ยฝ cup chicken broth
- 1 cup heavy cream
- 1 cup shredded Parmesan cheese
- 1 - 15 ounce can petite diced tomatoes, drained
- pinch red pepper
- parsley, for garnish
Instructions
- Cook the pasta according to the package directions until al dente.
- While the noodles are boiling, saute the shrimp in a large sauce pan according to the package directions. Scoop out the cooked shrimp and set aside in a covered bowl.
- Saute the onions in the remaining butter in the same skillet for 2 minutes.
- Add the garlic, chicken broth, heavy cream, and cheese and stir until melted and thick. Season with the red pepper to taste.
- Toss the noodles with the cheese sauce. Gently stir in the tomatoes and shrimp.
- Garnish with parsley and serve immediately.
