Hey, did you know there was such a thing as chocolate cake day, Well, apparently, this January day is known for it. Not that I really need a "unique" holiday to celebrate with a chocoate cake, but since there is a cake holiday, let's celebrate!
I made these chocolate toffee cupcakes a few months ago for a friend's birthday. And then promptly forgot to share them with you.
Can you believe I've been holding out on you? I have had these amazing cupcakes just sitting on my computer waiting to be shared with you, my fabulous readers.
I was justโฆuuummmโฆwaiting for the right dayโฆlike chocolate cake day. Wink, wink. Yes, let's go with that, rather than the fact that I just forgot about them. You believe me, right? Because I would never intentionally hold something so absolutely delicious back from you.
I should be fired as a food blogger. Baking chocolate cupcakes with homemade frosting and then forgetting about them so quickly! But if I share the recipe for these yummy cupcakes today, that would make things better, right?
Then there would be no need to fire me. Win-win for both of us today! That is, until you make and eat all these easy chocolate cupcakes, then your thighs won't be very happy with me either. And you will likely want to fire me again.
It might be best if you share some cupcakes too! I want to continue as a food blogger for a bit longer.
How To Make Toffee Cupcakes
- Place liners in your cupcake pans and preheat the oven before you start to make the cake batter.
- Jazz up the batter from a boxed cake mix with cooled coffee and some toffee bits. You will not taste the coffee in these cupcakes. Coffee enhances the chocolate flavor.
- Use coffee creamer as a substitute for milk or heavy cream in your homemade frosting. Using creamer is a great way to add flavor and creaminess to any frosting recipe.
- Let the cupcakes cool completely before adding frosting to the tops. To get the pretty bakery-style swirl, use a piping bag and frosting tip 1 M.
- Place the chocolate chips and shortening in a microwave-safe bowl and heat for 30 seconds. Stir until creamy. Spoon the melted chocolate into a plastic bag and cut off one of the corners.
- Drizzle the chocolate quickly over the top of the frosting. Add more toffee bits before the chocolate sets.

Toffee Cupcakes
Creamy frosting, chocolate drizzles, and a candy crunch make these easy Toffee Cupcakes a delicious treat. These easy chocolate cupcakes are a fun way to celebrate any event.
Ingredients
For the Cake
- 1 chocolate cake mix
- 1 cup cooled brewed coffee
- 1 cup toffee bits
For the Frosting
- 1 cup unsalted butter, softened
- 1 cup shortening
- 1 teaspoon vanilla extract
- ยฝ teaspoon salt
- 4 tablespoons liquid vanilla coffee creamer
- 8 cups powdered sugar
- โ cup chocolate chips
- ยฝ teaspoon shortening
- ยฝ cup toffee bits
Instructions
- Preheat the oven to 350ยฐF. Place 24 liners in two cupcake pans.
- Mix the batter according to the directions on the box, substituting the cooled coffee for the water as specified. Stir in toffee bits after mixing.
- Fill cupcake liners ยพ full. Bake for 18-20 minutes or until the top springs back. Cool on a wire rack.
- Beat the butter, shortening, vanilla, salt, and creamer until creamy. Slowly add the sugar and beat until the mixture is light and fluffy.
- Using an icing bag and tip 1M, swirl the frosting on top of the cooled cupcakes.
- Place the chocolate chips and shortening in a microwave-safe bowl. Heat for 30 seconds. Stir until creamy. Heat for an additional 15 seconds if necessary.
- Spoon the chocolate into a plastic bag and cut off one of the tips. Drizzle the tops of the cupcakes with chocolate. Sprinkle with toffee bits.
