- Wrap the rolls tightly. The tighter you wrap them, the better they will hold together when you slice them.
- Chill before serving. The tortilla rolls stay together and slice better when cold, resulting in clean, even pinwheels.
Storing and Freezing
Make Ahead: You can prepare the rolls up to 24 hours in advance. Keep them tightly wrapped in plastic wrap and refrigerate.
Refrigerator: Once sliced, any leftover pieces can be stored in an airtight container for 3 days. The tortillas will absorb more moisture the longer they sit.
Freezer: I don't recommend freezing the pinwheels as the cream cheese and spinach may change texture. Instead, prepare the filling a few days in advance and store it in the fridge. Then, fill and roll the tortillas the night before your party.

- ½ cup cooked crumbled bacon
- ⅔ cup shredded cheese (Colby Jack or Cheddar)
- ¾ cup loosely chopped baby spinach
- 20 slices thinly sliced deli turkey
- 8 (8-inch) tortilla shells
Instructions
