Chipotle Chicken Pasta

I know this is totally abnormal for me to
actually have “real food” here…
but this dinner was so awesome I had to share it:-)
What do you think?

The Cheesecake Factory is one of my favorite restaurants to eat at.
We used to live about 15 minutes from one and would go all the time.
Now the closest one is about an hour away and not quite as easy to get to.
 
I used to always get the same sandwich.
It was a fried flatbread with chicken and avocado…so yummy!
But last year on one of our lunch dates,
my hubby and I headed to  The Cheesecake Factory
with the intent that both of us would order something totally different.
I read through the menu…
and if you have ever been there,
you realize that the word read is correct.
Their menu is like a book!!! Seriously!
I finally settled on the Spicy Chicken Chipotle Pasta.
It has asparagus in it…this is huge because as a kid I hated this veggie!
I’m thinking I must have hated how it was prepared back then,
because in this pasta it was AWESOME!
Or maybe it was just the spicy kick that hid the asparagus flavor.
Whatever it was…I loved it.
Lately I have been thinking about this yummy pasta
and how I could make it at home since dinner there
isn’t going to happen any time soon.
I googled it and read a few different variations…
but then decided to just wing it and hope for the best!
This recipe is kind of combination of all of them.
And it worked because if I closed my eyes,
I could almost imagine I was sitting at the Factory…
until someone burped.
Then I realized, Nope just at home with the monsters:-)
Chipotle Chicken Pasta

Prep Time: 30 minutes

Cook Time: 30 minutes

Yield: 8 servings

Chipotle Chicken Pasta

Chipotle Chicken Pasta topped with crispy tortilla pieces...best dinner recipe.

Ingredients

4 flour tortillas
2 c. asparagus, cut and roasted
1 Tbsp. oil
2 Tbsp. honey
1 Tbsp. butter
2 boneless skinless chicken breasts, cut in chunks
1 tsp. minced garlic
1/2 c. onion, chopped
1/2 c. red pepper, chopped
1/2 c. yellow pepper, chopped
1 can evaporated milk
4 Tbsp. tomato paste
4 Tbsp. chipotle peppers in adobo sauce, minced
1 tsp. salt
1/2 tsp. pepper
1 c. parmesan cheese
1 lb. box penne pasta, cooked
1 c. frozen peas

Instructions

  1. Cut tortillas in half and then cut into thin strips. Lay out on a baking sheet. Spray with baking spray and sprinkle with sea salt. Bake at 375* for 12-14 minutes.
  2. While tortillas are cooking, chop asparagus into chunks. Lay on cookie sheet and drizzle with olive oil. Sprinkle with a little salt and pepper. Bake at 400* for 10 minutes when the tortillas come out.
  3. In a large sauce pan, boil water for pasta. Cook pasta according to box instructions. Drain and set aside.
  4. In a large skillet, combine oil, honey, and butter until melted. Add chicken chunks and saute until completely cooked through and browned. Remove the chicken to a bowl. In the same skillet, add the chopped onions and garlic and saute for 3 minutes. Add the chopped red and yellow peppers and saute another 2 minutes. Add the chicken and roasted asparagus back into the pan.
  5. In a small sauce pan, bring the evaporated milk to a slow simmer. Stir in the tomato paste and chipotle peppers. Stir until it thickens slightly. Add in the parmesan cheese, salt and pepper. Pour over the chicken mixture. Toss with the cooked pasta and frozen peas. Heat over low heat until everything is warm again. Serve with crunchy tortilla strips on top.

  2. I LOVE LOVE LOVE me some Cheesecake Factory! It is my hubby and my favorite! The closest one to us is in Las Vegas, which is an hour and a half away :( If I can make their recipes at home, than I am a happy girl! This pasta looks DELISH! I am SO going to make this asap :)

  13. Stopping by from Newlyweds… never would have thought that honey would have been in there! We love chipotle peppers in this house. They’re good in pretty much everything! My favorite is to blend them up with some sour cream as a topping for tortilla soup.
