I know what you are thinking..."uummm, Jocelyn, you maintain a sugary baking blog. How in the world would this be possible?"
And you are right...I have to try at least one bite of everything that I make...just for research purposes!
The problem is that I haven't figured out how to just stop at the one. I am finding that I am way to obsessed with sugar for my well being.
My thighs and my pants are not getting along, and it due to the absolute LACK of sugar restraint that I have shown recently.
*If you can't find soft coconut macaroon cookies at the store, use the filling from these Oreo Coconut Cream Truffles. Either way, these brownies will taste amazing!
It might be better to become obsessed with a treadmill or elliptical.
I might have to step up my game and start using my gym membership again.
This outdoor running stuff just isn't cutting it by itself.
Maybe I will go finish off some brownies before taking such drastic measures.
WHAT???
We all have to start somewhere, right? I started with thinking up a new plan.
After another brownie, I'll think about implementing said plan. Just don't tell my pants that I am eating brownies again.
It could get ugly real quick!
Recipe
Almond Joy Brownies
Coconut macaroons and almonds make these fudgy Almond Joy Brownies taste like a candy bar. Decadent and delicious every single time.
Ingredients
- 1 - (9x13) box brownie mix
- 1 cup chopped almonds
- 26 coconut macaroon cookies* (see note below)
- 2 cups white chocolate chips
- 2 teaspoons unsalted butter
- ½ cup toasted coconut
- ½ cup M&M's
Instructions
- Preheat oven to 350 degrees. Spray a 9x13 pan with nonstick baking spray.
- Mix up your brownie mix according to the directions on the back of the box. Stir in the chopped almonds.
- Spread half the batter in a greased pan. Flatten 24 of the coconut macaroons and lay side by side on top of the brownie batter. Break the extras into pieces and fill in the gaps.
- Cover the macaroons with the rest of the brownie batter. Bake 24-25 minutes. Let cool completely on a wire rack.
- Place the white chocolate chips and butter in a microwave safe bowl. Heat at 50% power for 30 seconds. Stir and repeat if necessary. Once melted and creamy, spread on top of the cooled brownies.
- Sprinkle with candies and toasted coconut. Let set before cutting into 24 squares. Store in a sealed container.

Oh yum, those look good. I bought a whole bunch of those bags of candy this week as they were on sale.
As for eating just one bite, I hear ya. I have gained 10lbs since I started my blog this year. Maybe I need to change my blog to Shugary Sweets I can not Eat.
