It has been a while since I have made pudding cookies.
Last summer and the year before that, I couldn't make enough different flavors, and then I just stopped. Boy, am I glad I found my way back to them! They are so soft and delicious!
Really you can use any flavor of pudding, but this past weekend I was in a chocolate kind of a mood. I was remembering these Chocolate Reese's Pudding Cookies and decided to create another flavor based on those.
We had our church life group coming over Sunday night, and I needed a snack that could be made easily. I dug through my cupboards and found a chocolate pudding mix and a bag of Nestle Buncha Crunch.
Have you had the Buncha Crunch before? It is like eating Crunch Bars in little bitty pieces. It is so good...and so easy to finish off a bag before you know it.
These cookies are easy to bake in two different ways. You can roll them into 36 balls and bake them on a cookie sheet. One thing I love about this dough is that I didn't need to refrigerate the dough. They baked just fine without spreading very much on a regular baking sheet. Tapping the tops of the cookies after they are done helps make them a little more uniform.
I also baked some of the dough in a whoopie pie pan. It creates thick, deep-dish cookies that are all the same shape without having to do any tapping. Baking them this way isn't quite as pretty as a round ball. But that's nothing a little bit of white chocolate drizzle can't hide.
The whoopie pie pan is also great for making muffin tops. That is if you need another reason to justify buying another pan.

It is one of my many hobbies...or I should say used to be. I definitely don't craft as much as I used to. This month, I pulled out my mini pizza box die cut. Holy cuteness!!! I just about died when I put together the first one. It is seriously my favorite die-cut so far. And perfect for holding one deep-dish cookie! Think of all the possibilities for baby showers and parties!
It needed a little bit of decoration on top, so I pulled the label die cuts from the disc envelope die-cut package. That's another one that is super cute for packaging individual cookies.
My favorite way to eat these cookies is fresh out of the oven. Now, yes, you do need to wait a few minutes before digging in. We don't want scorched taste buds, after all. But if you eat these while they are still slightly warm, they are incredible. You can also pop them in the microwave for 10-15 seconds the next day, and that will give you the same gooey chocolate cookie.
I think the weekend deserves more cookies like this. What do you think? I'm open to more pudding and candy options.

Chocolate Pudding Cookies
Chocolate pudding mix and cocoa powder give these soft cookies a rich chocolate taste. Chocolate chips and Nestle Buncha Crunch add a fun twist.
Ingredients
- 1 cup unsalted butter, softened
- ¾ cup packed brown sugar
- ¼ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 box instant chocolate pudding mix (3.4 oz)
- 2 cups all purpose flour
- ¼ cup cocoa powder (I use Hershey's dark cocoa powder)
- ¼ teaspoon table salt
- 1 teaspoon baking soda
- ½ cup mini chocolate chips
- 1 ½ cups Bunch a Crunch candy pieces (9 oz. bag)
- ½ cup white chocolate chips
- 2 teaspoons shortening
Instructions
- Preheat oven to 375°.
- Cream the butter and sugar. Add the eggs and vanilla and beat again.
- Stir together the dry pudding mix, flour, cocoa powder, salt, and baking soda.
- Add slowly to the creamed mixture until a dough forms. Stir in the mini chocolate chips and candy crunch pieces by hand. The dough will be very stiff.
- Press 2 Tablespoons dough into a whoopie pie or muffin top pan that has been sprayed with non stick spray. Bake for 8 minutes. Do not over bake.
- Remove the pan and let the cookies sit for 2-3 minutes before gently removing them to a wire rack to cool all the way. The cookies will be soft, but they will set up as they cool. Let the cookies cool completely.
- Place the white chips and shortening in a microwave safe bowl. Heat for 30 seconds and stir. Repeat. Stir until melted and creamy.
- Spoon into a plastic bag and cut one tip off. Drizzle over the tops of the cookies. Let set. Store in a sealed container.
Notes
*You can also roll the cookie dough into 36 dough balls if you do not have a whoopie pie pan. Place on a cookie sheet and bake 7-8 minutes. Tap the tops of the cookies with the back of a spatula when they come out of the oven.

I always use packed brown sugar when I'm baking. You should always use packed brown sugar in any recipe, unless the recipe says otherwise.

What could be substituted for the Bunch a Crunch candy?

I buy the Bunch a Crunch at Walmart in the candy aisle. If you can't find it, you could also chop up Crunch bars into bits! I hope you enjoy the cookies!

I made these for my kids and husband. I didn't have anything crunchy to add so I added a extra large 1/2 cup scoop of flour instead. I then made them much smaller and only rolled them about the size of a teaspoon. My husband ate almost the entire first batch by himself and my daughter wouldn't stop eating the cookie dough out of the bowl. These will definitely be a regular item in our cookie list, especially since my middle son said they had to be made on the first weekend of every month.

In the chocolate crunch pudding cookies you call for an ingredient called Bunch A Crunch candy pieces. What are these? Are they something like Heath toffee bits?
