White Chocolate Mocha Frappuccino Cupcakes

This week starts a month long cupcake challenge
over at Hoosier Homemade.
I love reading her blog and seeing the amazing
treats that she bakes.I just HAD:-) to participate in this fun challenge.
The theme of the month is summer time, and
this week the challenge was to create a flavor
that says summer to you.I had so many different ideas for cupcakes
running through my brain.
Blackberry, peach, lime, coconut, watermelon, cobbler, blueberry…
It was hard to choose just one!
But in the end, the one flavor that I love to have in the summer
is a White Chocolate Mocha Frappuccino from Starbucks.
(actually I go back and forth between the caramel frapp too)

I figured, why couldn’t I capture that in cupcake form???

And in order to really get the essence of the drink…
I just had to go have one.
It was for research purposes…honest…

and I needed a green straw:-)

After thoroughly finishing my research,
(yes, it was tasty on a very hot summer day)
I went and bought the necessary items to make these
White Chocolate Mocha Frappuccino Cupcakes.

White Chocolate Mocha Frappuccino Cupcakes

Prep Time: 20 minutes

Cook Time: 20 minutes

White Chocolate Mocha Frappuccino Cupcakes

Mocha Latte Cupcakes topped with a White Chocolate Frosting

Ingredients

For the Cupcakes
1 white cake mix
3 eggs
1/3 cup oil
1 cup hot water
1/4 cup International Delight Mocha Latte drink mix
For the White Chocolate Frosting
6 oz. white baking chocolate (chopped up)
1/4 cup heavy cream
1 cup butter, softened
1 1/4 cup powdered sugar
1/2 teaspoon vanilla extract

Instructions

  1. In a large mixing bowl dissolve the mocha drink mix in the hot water. Add the rest of the cake ingredients and beat on low for 1 minute. Beat on medium for 2 minutes. Fill cupcake liners 2/3 full and bake at 350* for 20-22 minutes. Cool completely.
  2. Stir white chocolate and whipping cream in a small saucepan on low heat until melted and smooth. Cool. Add to the butter, sugar, and vanilla and beat on high until light and fluffy. Frost cupcakes. Drizzle with chocolate before serving if desired. Makes 24 cupcakes. Store in a sealed container in the refrigerator.

    Mmm, these look good. I’ll be printing out this recipe for sure. I’m entered in that contest too and there are lots of great entries there already.     Oh my goodness, that looks amazing! I have a major chocolate/coffee craving coming on now! lol! I am going to be making this along with the Mocha Oreo Cheesecake. It should be a sin to post such amazing recipes back to back because it just makes you drool on your keyboard. :-)

    Can you believe I’ve never been to a Starbucks, but I have bought their bagged coffee at Krogers. I would have no idea what to order. That drink and cupcake sound soooooo good! I might have to finally make a trip to a Starbucks!!! Ha! Hope y’all have a great weekend!

    Made this into a layer cake and wasn’t all that impressed with the flavor. For some reason my sister and I kept thinking it tasted like cereal, but couldn’t put our finger on what kind. :-\ The butter cream was by far the best part of this recipe.

      I’m sorry to hear you didn’t like the flavor. You might like it better made with a chocolate cake…I have done that with coffee in place of the water/mocha mix, and I think that tastes great. Isn’t that frosting the best though? One of my favs too :-)

    Thank you for the wonderful cupcake recipe! I did not have the mocha flavored coffee in the house so substituted French Vanilla Cappuccino.. delish! The frosting was the perfect compliment for the cakes! I made mini-cupcakes for a baby shower!

    for the frosting are you using the whisk attachment or the paddle attachment to beat the chocolate with the butter and such ?

      I bought it at Walmart in the coffee aisle. I have seen it at Target and Meijer as well. Most grocery stores should have it too. If you can’t find the white chocolate, any flavor of the International Delight would work.
