I am very excited to share a post for Triscuit and their new line of flavors and ingredients. I have always enjoyed the Triscuit crackers, so I was intrigued by the addition of brown rice, sweet potato, and red beans in their new line of crackers. These are great healthy real foods that I want my kids to eat more of. I stared at all the choices in the store for a few minutes, and then settled on the Brown Rice with Tomato and Basil flavoring to try first.

My husband and I were both hooked after the first cracker. They were crunchy with a pleasant boost of flavor from the tomato and basil. We didn’t want to stop eating them.

We are winding down from a fun summer here. School starts soon, and that means back to a schedule. A schedule also means eating regular meals with a few snacks in between. We like to watch what our children are eating through out the day. If I’m not careful they head right to the cookies and cakes.

The down fall of being a dessert blogger means there is always sugary goodness lurking in our fridge or on our cupboards. One of our rules last year was that our kids could only have fruits or vegetables as an after school snack. Now occasionally I slipped up and let them have cookies. Those were the days I was looking for my best mom award.

But seriously, we want our kids to know the importance of eating healthy. Cookies here and there are ok, as long as it is in moderation. Our family is fairly active and the kids are all involved in sports, and my husband and I enjoy working out or going for a jog. Hopefully our kids will see the relationship between eating healthy real foods and getting enough exercise. If they develop these habits now, it will be easier for them to maintain them as they get older.

I have been trying to come up with a few other after school options that my kids will love, but that will incorporate the fresh ingredients that we want them to be getting. Pizza happens to be a huge favorite around here, but obviously that is more of a full meal and not a snack. I wanted a filling snack with healthy ingredients that wouldn’t fill them completely.

This Tomato Basil Pizza Dip with fresh tomatoes and fresh basil leaves was the answer. I feel good knowing my kids are getting some veggies and also some dairy from the cheese. Plus, since it’s pizza I know that all three will eat it without any complaining. The box of Tomato and Basil crackers was gone before we knew it. The flavor from the crackers and the dip was a great compliment to each other. I know this one snack that my kids won’t mind me making all year long.

Triscuit crackers are one of the healthy crackers that you can feel great about serving to your family. They incorporate so much flavor and taste along with the real foods. Tomato Basil Pizza Dip

Prep Time: 20 minutes

Cook Time: 20 minutes

Yield: 9 inch pie plate

Tomato Basil Pizza Dip

Hot pizza dip with fresh tomatoes and basil.

Ingredients

1 can tomato sauce (8 oz.)
1 teaspoon minced garlic
2 Tablespoon finely chopped fresh basil, divided
1 teaspoon sugar
salt and pepper to taste
1 package cream cheese, softened (8 oz.)
1 cup shredded mozzarella cheese
1/2 cup chopped roma tomatoes
1 Tablespoon parmesan cheese

Instructions

  1. In a small sauce pan combine the tomato sauce, garlic, 1 Tablespoon basil, sugar, and salt & pepper. Heat on medium heat for 3-4 minutes.
  2. Spread the cream cheese in the bottom of a 9 inch pie plate that has been sprayed with non stick spray. Pour the sauce on top. Top with the mozzarella cheese, tomatoes, 1 Tablespoon basil, and parmesan cheese. Bake at 350* for 20 minutes. Serve immediately with crackers.
