I love baking for every season and holiday. And since strawberry season kicks off in February here in Florida, I'm officially ready to start baking all the berry desserts.
To get started, I made strawberry cream cheese cookies. This easy cookie recipe starts with a simple strawberry cake mix. To give every bite even more berry flavor, I added freeze-dried strawberries and white chips to the dough.

- Strawberry Cake Mix: The dry powder is my shortcut for the base of the cookie dough.
- Cream Cheese: This gives cake mix cookies a soft, gooey texture that stays soft for days.
- Unsalted Butter: Set it out beforehand so it is soft and easy to mix.
- Egg: Provides the moisture needed to create a soft dough.
- Freeze-Dried Strawberries: Dried strawberries have the same flavor as fresh berries without the moisture, so they are better for baking. You can usually find them at Target and Trader Joe's.
- Cream Cheese Chips: Hershey's has these specialty chips in most grocery stores right now. If you can't find them, use white chocolate chips.
How To Make Strawberry Cream Cheese Cookies
Making pink cookies is easy and fun! You will be amazed at how fast the dough comes together and the delicious fruity scent that fills your kitchen as it bakes.

- Make the dough. Mix the dry cake mix, softened butter, cream cheese, egg, and vanilla extract in a large bowl until a thick cookie dough forms.
- Add the mix-ins. Gently stir in the white chips and chopped strawberries. Save some of the strawberry pieces for later.
- Refrigerate the dough. Place the bowl in the fridge and chill the batter for at least 90 minutes.
- Roll and bake. Use a medium cookie scoop to make 24 dough balls. Bake just until the edges are set, and the centers are soft. Let the cookies cool on the hot pan for a few minutes before transferring them to a cooling rack.
Press a few strawberries and extra chips onto the cookies while they are still hot to make the tops even prettier.

- Make sure your ingredients are at room temperature to make it easier to mix the dough.
- Roughly chop the freeze-dried strawberries to distribute them evenly throughout the cookie dough. Stir them in gently so they don't break apart.
- Save some of the chopped fruit pieces to press into the tops of the cookies AFTER baking. Do not add them before baking, as they will burn.
- Refrigerate the cookie dough at least 90 minutes before baking. The chill dough will not spread as much, keeping it soft and puffy.
- Do not overbake! Cake mix cookies look underbaked when removed from the oven. Just trust me; they will set up as they cool.
- Serve with white hot chocolate bombs for a fun dessert.
Storing and Freezing
- On the Counter: Store the cooled cookies in an airtight container at room temperature for up to 3 days.
- In the Freezer: Wrap each individual cookie in plastic wrap, then place them in a freezer bag or container and freeze for up to 2 months. Let them thaw at room temperature before serving.

Strawberry Cream Cheese Cookies
Ingredients
- 1 - 15.25 ounce strawberry cake mix
- 8 tablespoons unsalted butter, softened
- 4 ounces cream cheese, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ounce bag freeze-dried strawberries, rough chopped
- 1 ½ cups cream cheese chips, divided
Instructions
- Beat the dry cake powder, softened butter, cream cheese, egg, and vanilla in a large mixing bowl until a soft dough forms.
- Set aside ⅓ cup of chopped strawberries, then gently stir in 1 cup of cream cheese chips and the remaining strawberry pieces.
- Cover the bowl and refrigerate for at least 90 minutes.
- Preheat the oven to 350°F. Use a medium cookie scoop to make 24 dough balls.
- Place 12 at a time on a baking sheet and bake for 10 minutes. Let the cookies rest on the hot pan for 2-3 minutes, then transfer them to a piece of parchment paper on the counter.
- Press the reserved strawberry pieces and cream cheese chips into the tops of the hot cookies. Let them cool completely before storing in an airtight container.
