Our local grocery store offers a free cart service for their shoppers. As a recipe developer I frequent the grocery stores a few times a week. One of these days, they are going to remember who I am. Most of the times when I am there I'm weating workout gear and a hat pulled down low. There are a few times when I head to the store that I am actually ready for the day and wearing normal clothes. Plus, I rotate stores each time I go too. Fingers crossed this keeps me from being remembered.

What will get me remembered is if I actually take advantage of the cart service. You see, I have a very bad habit of parking my car, grabbing my groceries, and forgetting where I parked. And that's all in the time frame of about 30 minutes. I usually refuse the free grocery carry out and tell them I got it.

Not because I don't want the help, but because I don't want them to laugh at me when I can't find my car. Trust me, I'm sure that could be a hot topic in the break room. Or maybe I'm just paranoid, but whatever the case I'm not going to chance it. I'll continue to wander around the parking lot loaded down with all my bags rather than be giggled at. [Read more...]

The other day I was reading a magazine and saw an article on defying age. Since I just celebrated the 12th anniversary of my 29th birthday, my eye was drawn right to that info. My sweet tooth is larger than my thighs.

The only problem is that once again there are bulges to be battled. Bring on the protein shakes and salad dinners because mama wants to wear shorts this summer. Please tell me I'm not alone in these salad phases.

I just had to make one more fun treat for Easter this year. You don't mind, do you? A few weeks ago I bought some packages of marshmallow bunny Peeps, and they have been staring me down from the counter. Every time I walked past the kitchen, I thought about just putting them in the pantry for later.

But the danger in putting things in the pantry is that they would be forgotten about until the middle of June when no one wants to see marshmallow bunnies.

I had to leave them out until inspiration hit...or until someone opened them. By now our kids know better than to take candy without asking. Actually that is not true because the other day I found a bag of Reese's peanut butter eggs OPEN in the pantry. The littlest monster found my secret stash, and he has been quietly helping himself. I guess it is time to find a new hiding place.

This past weekend I realized that I am the only one in our household that likes thing neat and organized all of the time.

If you take a walk through our bedroom, there are piles of clothes on my husband's side of the bed. Then if you go into our bathroom and open both doors to our closets, you will find one neat and orderly and one covered in clothes and shoes. Any guesses who owns the neat closet?

Our three children are following in their father's footsteps too. All three bedrooms have piles of clothes, water bottles, and makeup. Ok, ok so the piles of make up are only in our daughter's room. The boys have piles of video games and dirty plates.

I am SO excited for everyone to have a copy in their hands!!!

After two years of preparation, baking, writing, photographing, and sometimes crying in a closet because writing a cookbook is hard word, everything has been turned in. I never knew how much work and time went into creating a cookbook until I was deep in the process. Thank goodness I have a loving husband and sweet friends who kept me focused and motivated to finish.

I am so happy with how everything turned out. Well, for the most part that is. There are a few photos that I wasn't super happy with, but I had to let go of a few things when the deadlines came due. No Bake Easter Nest Cookies

Enjoy these easy No Bake Easter Nest Cookies made with two different candies. Add chocolate and bright colored eggs for a traditional cookie or top them with frosting and a googly-eyed Easter chick for a fun twist.

Every couple months I get this crazy itch to make a fun treat with those adorable edible candy eyes. Something about those googly eyes makes me laugh every single time. I just can't resist them. As I was looking at the jar of eyes in my sprinkle cabinet, I realized that I never made an Easter treat last year with those eyes. What in the world was I thinking?

The last Easter eyed treats I made were these Chocolate Coconut Bunny Cupcakes and these Chocolate Covered Marshmallow Bunnies a few years ago. The creative side of my brain had to make something right away.

Last week when I was in Target I found a bag of peanut butter cup Easter eggs dipped in yellow chocolate. Right away my mind thought they would be so cute as chicks.

If you can't find the yellow coated peanut butter eggs, dip regular ones into melted yellow candy melts first.

These little Easter chicks are so easy to put together. I used a jar of fall leaf sprinkles for feathers and feet. As I dug through the jar for the yellow and orange sprinkles, I also pulled out the broken ones that looked like beaks.

Dab a little bit of white or yellow melting chocolate on each egg with a toothpick and attach the beak and eyes using tweezers. The feathers and feet were easy to just push into the sides. If you don't have the leaf sprinkles, you could also use mini Reese's pieces cut in half for the beak and feet. The wings and hair are totally optional.

The only thing I insist you add to the eggs are the candy eyeballs. They just make them so cute and adorable!

After I had the chicks all put together, I had to have something for them to sit on. At first I was going to make cupcakes because how cute would those be? But then the practical side of me wanted an easy no bake cookie instead.

Plus, with a no bake cookie you get two options for decorating them.

You can either add green frosting and the chicks. Or you can fill the nest with a gooey chocolate center and top them with colorful candy eggs. It's your call.

In less than 30 minutes you can have a tray of these easy no bake Easter nest cookies. The cookies have the texture of a rice Krispie treat. But I added chocolate and peanut butter chips to make them a little bit more delicious.

I also used Cocoa Pebbles cereal because I thought it would make the cookies more nest looking. Chocolate rice Krispies would totally work too.

One word of warning about these cookies. Hide them from your kids if you need them to last because they will be snagging the peanut butter chicks off the cookies. True story!

Easy No Bake Easter Nest Cookies made with chocolate and colorful eggs for a traditional cookie or googly-eyed Easter chicks for a fun twist.

Ingredients

2 Tablespoons unsalted butter
10 ounce bag mini marshmallows
½ cup peanut butter chips
¾ cup dark chocolate chips, divided
6 cups Cocoa Pebbles cereal
12 yellow coated Reese's peanut butter eggs
yellow and orange leaf sprinkles
edible eyes
2 Tablespoons white or yellow candy melts
½ cup vanilla frosting, tinted green
2 Tablespoons heavy cream
candy coated robin eggs

Instructions

Line a sheet pan with parchment paper.
Stir the butter and marshmallows in a large pot on low-medium heat until melted and creamy.
Add the peanut butter and ½ cup chocolate chips and stir until melted. Stir in the cereal immediately.
Use a large cookie scoop to make 24 mound on the prepared tray.. Press the center in with a tart shaper and use your fingers to round it out to look like a nest. Let set.
Melt the melting chocolate according to the package directions. Use a toothpick to dab a little bit of chocolate on the peanut butter eggs for the beak and eyes.
Press the other sprinkles into the top, sides, and bottom of the egg for hair, wings, and feet.
Swirl the frosting in the center of 12 cookies. Add a peanut butter chick and a few eggs.
Place the remaining chocolate chips and heavy cream in a microwave safe bowl. Heat for 30 seconds. Stir until melted and creamy.
Drop spoonfuls of chocolate into the remaining cookies. Add robin eggs and let the chocolate set.

Notes

*You can also use mini Reese' pieces cut in half in place of the leaf sprinkles if you like.
