Today I have a very special dessert to share with you. It doesn’t have any extra toppings or chocolate or peanut butter hiding inside it. I know!!! What is happening around here?
For Father’s Day this year I wanted to make my husband a dessert that he actually loves. He tolerates all the crazy desserts like this Snickers Cheesecake Brownie Cake and this Peanut Butter Cup Cheesecake that I come up with, but a simple strawberry pie with Jello is really his favorite dessert.
This no bake pie recipe is best in the spring or early summer when fresh strawberries are available at u-pick farms or farmer’s markets. It’s also a great recipe because you can swap out strawberries for any other fresh fruit. You can also change Jello flavors.
I am so thankful for a husband that loves our children more than himself. He would do anything for them.
I appreciate the patience that he has with their crazy shenanigans. The other day they ambushed him with water guns as he came home from work.
His response? Grab the hose and fire right back at them. I love that he plays with them just like a big kid. And I know they love it even more.

Recently, I got this fun little strawberry huller. It makes cutting the top of strawberries so much easier.
As I was getting the ingredients ready for these easy strawberry pies, I remembered this tool in the drawer. Usually things like this get thrown into my random tool drawer never to be seen again, but this one will definitely be out every time we pick strawberries.
It was so easy to use, and I loved the perfect little hole that it creates. You don’t waste the delicious fruit because it only removes the stem.
How to make easy Mini Strawberry Pies:
These easy Mini Strawberry Pies start with store bought graham cracker crusts. Yes, you can make your own, but sometimes life calls for an easy option.
Boil together water, sugar, and cornstarch to create a simple glaze, and then add strawberry Jello to give it the bright red strawberry flavor. Let this cool for 10 minutes while you prepare the strawberries.
Remove the stems and slice or dice the strawberries. Spoon them into the little graham cracker crusts and pour the Jello mixture on top. Make sure to pour the Jello on slowly. Let it soak down into the berries before you pour more on top. Place the pies in the refrigerator for a few hours, and then add a swirl of Cool Whip on top.
These are the perfect little pies to celebrate the special man in your life. I know my hubby can’t wait to eat a few of these mini strawberry pies for dessert tonight.
