For Father’s Day this year I wanted to make my husband a dessert that he actually loves. He tolerates all the crazy desserts like this Snickers Cheesecake Brownie Cake and this Peanut Butter Cup Cheesecake that I come up with, but a simple strawberry pie with Jello is really his favorite dessert.
This no bake strawberry pie recipe is best in the spring or early summer when fresh strawberries are available at u-pick farms or farmer’s markets. It’s also a great recipe because you can swap out strawberries for any other fresh fruit. You could also change Jello flavors, if you like.
I am so thankful for a husband that loves our children more than himself. He would do anything for them.
I appreciate the patience that he has with their crazy shenanigans. Whey they were little they used to ambushed him with water guns when he came home from work. Now that they are older, they usually hide and fire Nerf guns at him as he walks in the door.
His response? Grab the hose (or Nerf gun) and fire right back at them. I love that he has always played with them just like a big kid. And I know they love it even more.

Recently, I got this fun little strawberry huller. It makes cutting the top of strawberries so much easier.
As I was getting the ingredients ready for this easy strawberry pie recipe, I remembered this tool in the drawer. Usually things like this get thrown into my random tool drawer never to be seen again, but this one will definitely be out every time we buy strawberries.
It was so easy to use, and I loved the perfect little hole that it creates. You don’t waste the delicious fruit because it only removes the stem.
How to make easy Mini Strawberry Pies:
Crust: These easy Mini Strawberry Pies start with store bought graham cracker crusts. Yes, you can make your own, but sometimes life calls for an easy option.
Strawberry Glaze: Boil together water, sugar, and cornstarch to create a simple glaze, and then add strawberry Jello to give it the bright red strawberry flavor. Let this cool for 10 minutes while you prepare the strawberries.
Strawberries: Remove the stems and slice or dice the strawberries. Spoon them into the little graham cracker crusts and pour the Jello mixture on top. Make sure to pour the Jello on slowly. Let it soak down into the berries before you pour more on top.
Chill: Place the pies in the refrigerator for a few hours, so that the strawberry filling has time to set up.
Decorate: Use a piping bag and icing tip 1M to add a swirl of Cool Whip to the tops right before serving. And yes, you can also use homemade whipped cream if you prefer that instead.
Serve: These strawberry pie bites are perfect for all your summer parties, picnics or BBQ’s because they are small and portable.

- 1 cup water
- 3/4 cup sugar
- 2 Tablespoons cornstarch
- 1 - 3 ounce box strawberry Jello
- 4 cups diced or sliced strawberries
- 12 mini graham cracker crusts (2 packages store bought)
- Cool Whip
- fresh whole strawberries, optional
- Whisk together the water, sugar, and cornstarch. Bring to a boil over medium high heat. Reduce heat and simmer 1-2 minutes.
- Stir in the Jello until dissolved. Let the mixture cool 5-10 minutes.
- Spoon the strawberries into the mini graham cracker crusts.
- Pour the Jello mixture slowly over the tops of the pies. Let the Jello fill in and then pour more on top being careful not to over fill.
- Refrigerate until set. Top with Cool Whip and a whole strawberry, if desired.
