I've made many batches of chocolate-covered popcorn over the years. It's a quick treat when you want a sweet snack in minutes.
This Almond Joy version was the very first sweet popcorn recipe I shared on the blog over 12 years ago. It was a hit then and still is today when I make it.
Each bite has the perfect sweet and salty flavor and is loaded with shredded coconut and nuts. It's just like eating a candy bar but in popcorn form.

- Chocolate - I like using Ghirardelli melting wafers because they melt and taste better. You can also use white almond bark or chips instead of candy coating.
- Shredded Coconut - I prefer sweetened coconut because this is a sweet snack. However, you can use unsweetened coconut flakes if you have them or like them instead.
- Whole Almonds - I had a bag of salted nuts in our pantry, so I used them. You could also use almond slices or slivers.

How To Make Almond Joy Popcorn
This coconut popcorn, loaded with almonds and drizzled with dark chocolate, is easy to make in minutes. All you do is pop the popcorn seeds and melt some chocolate. The hardest part is waiting for everything to set up.
- Pop the kernels. You can use an air popper or buy movie theater microwave popcorn. Mix the popcorn, marshmallows, and shredded coconut in a big bowl.
- Melt the chocolate. Place the white chocolate in a microwave-safe bowl and heat according to the package directions.
- Drizzle and toss. Pour the melted chocolate over the popcorn mix, then stir the mixture thoroughly until everything is coated. Add the additional coconut and gently stir before spreading it on a lined cookie sheet.
- Add more chocolate. Melt the dark chocolate, then drizzle it over the coconut popcorn mixture. Top with sprinkles, then let it harden for 10-15 minutes before breaking it into chunks.
Storage Recommendations
Store leftover popcorn candy mix in an airtight container at room temperature. It is best served within 24 hours of making it but will stay for 3-4 days.

Almond Joy Popcorn
This sweet Almond Joy Popcorn, filled with coconut and almonds and coated in white chocolate, is a sweet treat that always gets two thumbs up from friends and family. It's a great snack to share for game or movie nights!
Ingredients
- 6 cups popped popcorn
- 2 cups mini marshmallows
- 1 cup whole roasted, salted almonds
- 1 cup shredded sweetened coconut, divided
- 1 - 10 ounce bag white chocolate melting wafers
- 1 teaspoon coconut extract
- ¼ cup dark chocolate melting wafers
Instructions
- Combine the popcorn, ¾ cup coconut, marshmallows, and almonds in a large bowl.
- Melt the white chocolate according to the package directions. Stir in the coconut extract, then pour the mixture over the popcorn and toss to coat. Sprinkle with the remaining shredded coconut while the chocolate is still wet.
- Spread the popcorn on a lined baking sheet. Place in the refrigerator for 5 minutes to set up quickly.
- Melt the chocolate wafers according to the package directions and drizzle over the popcorn. Add sprinkles if desired. Refrigerate an additional 5 minutes before breaking into chunks. Store in a tightly sealed container or bag.

I just wanted to say THANKS for this recipe! I pinned it when I first saw it, because it looks so yummy, and I finally made it for a party! It was a hit! And I ended up gobbling up the rest of it when everyone left... there may have not been any in the morning to share with my kids, oops! So yummy. And since you share so many yummy things with me I thought I'd share this with you...
After making this popcorn it gave me a great idea for ice cream here is my Almond Joy Ice Cream
1 cup almond milk
14 oz. cream of coconut (find it in the booze isle)
1 ½ cups heavy cream
1 ½ cups sweetened flaked coconut (toasted)
1 ½ cups sliced almonds (toasted)
1 cup chocolate of choice (melted)
1-2 cups chopped Almond Joy candy bars
Toast coconut and Almonds (lay out on wax paper)
Melt chocolate and drizzle over the coconut and almonds. Let harden. Break up into bit size pieces. Wisk almond milk, cream of coconut, and heavy cream together.
Dump everything into ice cream freezer, and freeze.

Very funny story...unfortunately, it happens more than you think. That has happened with me when I had purchased an inexpensive, watery floral lotion that I purchased without sampling it. I loved the scent but it clearly was too watery for application while driving. I have slapped on excess lotion on my legs while driving more than one time but less than 5 times. I learned the hard way. Funny hearing that it happens to other people though. Invest in the expensive, thick lotion if you plan on using the lotion while driving...lol
