Sorry…we don’t eat much for breakfast in this house:-)
so it ends up being a bed time snack!

But if you get up early enough to make this…
more power to you.

Cherry Chocolate French Toast Bake

Prep Time: 30 minutes

Cook Time: 20 minutes

Yield: 10 mini french toast cups

Cherry Chocolate French Toast Bake

Toasted bagels, dried cherries, and chocolate add a fun twist to this french toast bake.


3 Tablespoons butter, melted
3/4 cup cubed bagels (2 whole)
1 cup milk
2 eggs
1 teaspoon vanilla extract
1/3 cup sugar
1/2 cup shredded coconut
1/2 cup chocolate chips
1/2 cup dried cherries
2 Tablespoons cherry juice
1 cup powdered sugar


  1. Cut bagels into cubes and toast on a pan at 350* for 7-8 minutes. Drizzle with the melted butter while on the baking sheet.
  2. Whisk the eggs, milk, vanilla and sugar in a large bowl. Add the bread cubes, chocolate chips, coconut and cherries. Let set in the bowl for 20 minutes. Divide into mini foil pans or use muffin liners. Bake at 350* for 20 minutes.
  3. While baking, stir cherry juice into powdered sugar. Drizzle french toast with cherry glaze if desired. Serve while warm.

    This is one delicious looking breakfast. For a saturday. Cause we don’t eat a big breakfast during the week either. I’m a bad mom.

    You had to ruin it with coconut didn’t you? 😉 It looks delicious girl, but I am skeptical about the coconut. Hmmmm. Maybe you’ll have to come make me some, so that I can test it out.

    I know we would get along great – this sounds like a heavenly french toast/bread pudding! If I really want to be bad I think I might substitute the milk for half & half. Thanks for the recipe! These look amazing.
