This Strawberry Lemon Snack Cake is delicious for breakfast or for any time of day. Fresh strawberry pie filling and a lemon glaze will have you smiling in no time.
The birds are singing, the sun is shining, the sky is blue…and it is 32 degrees outside. Looks like spring, but feels like winter.
This time of year is so hard. Everyone is so ready for the warm weather to just be here and stay. We keep having tease days. It will be really nice and warm and then it gets cold again.
The trees and flowers have decided they are just going to start blooming regardless of the temps around them. I think I like that idea. Just fake it until you make it, right?
In our kitchen I have decided to go all out on spring desserts and breakfast goods. Of course there will still be chocolate and peanut butter happening too. That is just a given around here.
This easy breakfast cake comes together in no time at all. Now I do need to warn you. The dough is very sticky. You can spread this with your hands, but it will stick to you so make sure you use a nonstick spray on your hands. I also found that an angled spatula actually works really well to spread the dough in the pan.

The pie filling really doesn’t take that much time, and there is so much more fruit in the homemade version. Plus, you will have extra to spread on toast or just eat with a spoon. I vote for the spoon method!
One more quick and easy tip about this cake. Cut the cake into slices before you drizzle the glaze on top. By doing this you will have glaze running down all four sides of the cake.
If you are opposed to that much delicious glaze, go ahead and drizzle it first. But I really do recommend the extra glaze. It soaks into the sides of the cake and mixes with the pie filling on top. It really does add a little bit of extra something to the cake.
With treats this bright and cheery, you just can’t help but smile…even if you still have to grab that winter coat when you go out.
