 The birds are singing, the sun is shining, the sky is blue…and it is 32* outside.  Looks like spring, but feels like winter.

This time of year is so hard.  Everyone is so ready for the warm weather to just be here and stay.  We keep having tease days.  It will be really nice and warm and then it gets cold again.

The trees and flowers have decided they are just going to start blooming regardless of the temps around them.  I think I like that idea.  Just fake it until you make it, right?

In our kitchen I have decided to go all out on spring desserts and breakfast goods.  Of course there will still be chocolate and peanut butter happening too.  That is just a given around here.

This easy breakfast cake comes together in no time at all.  Now I do need to warn you.  The dough is very sticky.   You can spread this with your hands, but it will stick to you so make sure you use a non stick spray on your hands.  I also found that an Angled Spatula actually works really well to spread the dough in the pan.

The pie filling really doesn’t take that much time, and there is so much more fruit in the homemade version.  Plus, you will have extra to spread on toast or just eat with a spoon.  I vote for the spoon method!

One more quick and easy tip about this cake.  Cut the cake into slices before you drizzle the glaze on top.  By doing this you will have glaze running down all four sides of the cake.

If you are opposed to that much delicious glaze, go ahead and drizzle it first.  But I really do recommend the extra glaze.  It soaks into the sides of the cake and mixes with the pie filling on top.  It really does add a little bit of extra something to the cake.

With treats this bright and cheery, you just can’t help but smile…even if you still have to grab that winter coat when you go out.

Strawberry Lemon Snack Cake

Prep Time: 20 minutes

Cook Time: 22 minutes

Yield: 30 cake slices

Strawberry Lemon Snack Cake

Homemade strawberry pie filling makes this easy cake a delicious choice for breakfast. The lemon glaze on top adds the right tart flavor.


1 cup butter
1 3/4 cups sugar
4 eggs
3 cups flour
1 teaspoon salt
1 1/2 teaspoons baking powder
1 1/2 cups strawberry pie filling Homemade recipe here
1 1/4 cups powdered sugar
2 Tablespoons lemon juice


  1. Beat the butter and sugar until creamy. Add the eggs and beat again. Sift together the flour, salt, and baking powder. Slowly add to the butter mixture.
  2. Reserve 1 cup of batter for the top. Spread the batter in the bottom of a greased 15x10 baking sheet. The dough will be very sticky. Top with pie filling, leaving 1 inch all around. Drop small spoonfuls of the reserved batter on top. Bake at 350 degrees for 22-25 minutes. Cool.
  3. Cut the cake into 30 bars. Whisk together the powdered sugar and lemon juice. Drizzle over the top of the bars. Let set. Store in a sealed container.


*the dough is very stick, so spray your hands with non stick spray to help spread it out.

    You sure know how to make me hungry and make me want to make every recipe you post :)
    This looks so yummy…..will have to try it when I get some strawberries…

    Have a question tho. I tried to save it in my recipes, as I always save all your recipes, but it would not let me save it…..and this has not happened before… automatically saves it for me, just like does any other recipes on sites that I may want to save…. any idea why I was unable to save this one ?

      I am so glad all of my recipes make you want to bake :-) I’m not sure why there would be problem with saving the recipe. Did you try to save it using the ziplist button? Were you using a different browser? If not, maybe try using another browser. That’s about the extent of my knowledge on computer issues…sorry :-(

    OMG, these snack cakes are A-M-A-Z-I-N-G!!!!! My husband and I are having a small dinner party with friends tonight, & I decided I would bring dessert; since I had a taste for something lemony, I took a look on Pinterest for inspiration, and I stumbled upon this recipe. I figured the ingredients were readily available, and it seemed simple enough to make, so I decided to give it a try, and BOY OH BOY, they turned out scrumptious! I brought them in to work to test them out before presenting them at the dinner party, and everyone enjoyed them! It certainly is a refreshing spring treat, & that’s what I love about these not too sweet goodies. However, I did make a couple of adjustments to the recipe. I added lemon zest, lemon juice, & 1 tsp of vanilla into the batter. I love the fact that the topping’s focus is the sweetness from the strawberries. LOVE, LOVE, LOVE, will definitely be making these yummy delights again! Thanks so much for sharing! 

    I made this recipe. Seriously, these bars are OUT OF CONTROL good. I feel like the name doesn’t do it justice. I really thought it would be your standard coffee cake-with-fruit, and after I put them in the oven, I even worried a little because they didn’t even call for vanilla. Oh how wrong I was. They are insanely flavorful and mouthwateringly delicious. Like from a gourmet bakery. Okay, I’ll stop now, but seriously, I try a LOT of new recipes and this totally exceeded my expectations.
