Ingredients
For the Filling
- 1 cup pure pumpkin puree
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon pumpkin pie spice
- 1 box refrigerated pie crust
For the Glaze
- 1 cup powdered sugar
- 1 teaspoon pumpkin pie spice
- 1 tablespoon milk
- Sprinkles
Instructions
- Preheat the oven to 350°F.
- Mix the pumpkin, sugar, egg, and pie spice until combined.
- Place the piecrusts on the counter and cut each into eight rectangles measuring 3x4 inches. You may need to reroll the scraps to get 16 rectangles.
- Spoon the filling into the middle of 8 piecrusts, avoiding going all the way to the edges.
- Gently place the other eight piecrusts on top of the filling. Use a fork to crimp the edges all the way around.
- Use a spatula to move the pop tarts to a baking sheet gently. Bake for 22 minutes. Let them cool completely on a wire rack.
- Whisk together the powdered sugar, pumpkin pie spice, and milk. Spread the glaze on top of the pop tarts and top with sprinkles. The glaze will set fast, so make sure you add the sprinkles after glazing each one.
