It was sure fire sign to me that I needed to get more brownie batter into my life.
The yummy stuff doesn't get much time in the spotlight...
and I have to say I like it more than cake batter stuff.

Recipe
Peanut Butter Brownie Batter Swirl Ice Cream
Peanut butter ice cream swirled with brownie batter and peanut butter cups...no machine needed.
Ingredients
- 1 ยผ cups dry brownie mix
- 2 Tablespoons oil
- 4 Tablespoons water
- 2 cups heavy whipping cream
- 1 - 14 ounce can sweetened condensed milk
- ยผ cup creamy peanut butter
- ยฝ cup chopped mini Reeses peanut butter cups
Instructions
- In a bowl, combine the brownie mix, oil, and water and stir until combined. Stir in the peanut butter cups gently. Set aside.
- In a mixing bowl, beat the whipping cream until stiff peaks form.
- In another bowl, stir together the condensed milk and peanut butter until creamy.
- Pour it into the whipped cream and beat on low until it is all combined. (about 30 seconds)
- Pour โ of the cream mixture into a freezer safe container. Drop โ of the brownie batter in the mixture and swirl gently with a knife. Repeat 2 more times. Freeze until solid.

I think it makes about 4 cups, so I think it should fit in the container just fine. Of course, you can always "taste test" the extras if they don't fit. ๐ I hope you enjoy the ice cream.

You are going to use a boxed brownie mix from the store. But instead of mixing up the eggs and oil with the brownie powder from the box, you are going to use the dry brownie mix and stir it into the ice cream mixture. I hope that helps!

I recently made some ice cream with brownies, but I never would have thought to add dry brownie mix and peanut butter. In fact, I don't know if I have ever had peanut butter in ice cream? I better get on that! Sure sounds yummy.
