Ingredients
- ¼ cup coconut oil
- ¼ cup honey
- ⅓ cup pistachio nut butter
- ½ teaspoon vanilla extract
- ¼ teaspoon coarse sea salt
- 2 cups rolled oats
- 1 cup cornflakes, lightly crushed
- 1 tablespoon chia seeds
- ⅓ cup mini chocolate chips
- ½ cup finely chopped pistachios
Instructions
- Line an 8x8 pan with parchment paper and set aside.
- Place the coconut oil and honey in a small saucepan and heat over low heat until melted. Add the pistachio butter and stir until melted and smooth.
- Dump the oats into a large mixing bowl. Pour the melted mixture on top and stir until covered. Add the rest of the ingredients and stir very well, making sure everything is coated and distributed evenly.
