I love reading her blog and seeing the amazing
treats that she bakes. I just HAD to participate in this fun challenge.
The month's theme is summertime, and
this week, the challenge was to create a flavor
that says summer to you. I had so many different ideas for cupcakes
running through my brain.
Blackberry, peach, lime, coconut, watermelon, cobbler, blueberry...
It was hard to choose just one!
But in the end, the one flavor that I love to have in the summer
is a White Chocolate Mocha Frappuccino from Starbucks.
(Actually, I go back and forth between the caramel frappe, too.)
I figured, why couldn't I capture that in cupcake form???
And in order to really get the essence of the drink...
I just had to have one.
It was for research purposes...honest...
And I needed a green straw:-)
After thoroughly finishing my research,
(Yes, it was tasty on a very hot summer day.)
I went and bought the necessary items to make these
Mocha Cupcakes.
These smelled so good baking!
Recipe
Mocha Cupcakes
Mocha Cupcakes topped with a White Chocolate Frosting
Ingredients
For the Cupcakes
- 1 chocolate cake mix
- 3 large eggs
- ⅓ cup canola oil
- 1 cup strong brewed coffee, cooled
For the White Chocolate Frosting
- 6 ounces white baking chocolate (chopped up)
- ¼ cup heavy cream
- 1 cup unsalted butter, softened
- 1 ¼ cup powdered sugar
- ¼ teaspoon table salt
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees. Place 24 cupcake liners in pans.
- Add all the cake ingredients to a large bowl and beat on low for 1 minute. Beat on medium for 2 minutes.
- Fill cupcake liners ⅔ full and bake 20-22 minutes. Cool completely.
- Stir white chocolate and whipping cream in a small saucepan on low heat until melted and smooth. Cool for 10 minutes.
- Add the butter, salt, sugar, and vanilla and beat on high until light and fluffy. (about 5-6 minutes)
- Frost cupcakes. Drizzle with chocolate before serving if desired. Store in a sealed container in the refrigerator.

Where do you find the International Mocha Latte drink mix?

I believe I found it in the same aisle that you would find coffee. I hope you are able to find it or something similar.

I found a mocha cappuccino drink mix, I'm wondering if that will work?

That sounds like the one I used. It's ok if it's a different brand.

Is the drink mix supposed to be powdered because i have a liquid kind so would i still need the hot water

Yes, it is a powder that you dissolve in the 1 cup of hot water. If you have a liquid coffee, just substitute a cup of that for the water and instant coffee mix.

The cupcakes turned out great the only thing was that they were very sticky so do u think i should reduce the amount of coffee and if so how much

Well makes sense now! HAHA I just made this with the liquid drink form, and they turned out okay, but I'm sure the flavoring would be stronger with the powder.
I'm new to baking, and how do you know when your icing is done? I think I'm over blending it... is that even possible?

I'm glad the cupcakes turned out. The frosting should start to look like a Cool Whip consistency. This frosting is soft, but you should be able to pipe it onto the cupcakes. I always whip mine on high for 4-5 minutes.

where can I find the international delight mocha latte drink mix in stores?

I bought it at Walmart in the coffee aisle. I have seen it at Target and Meijer as well. Most grocery stores should have it too. If you can't find the white chocolate, any flavor of the International Delight would work.

for the frosting are you using the whisk attachment or the paddle attachment to beat the chocolate with the butter and such ?

I have actually used both to make this frosting at different times. If you have the wire whisk attachment, that one would work great to really whip the frosting.

Thank you for the wonderful cupcake recipe! I did not have the mocha flavored coffee in the house so substituted French Vanilla Cappuccino.. delish! The frosting was the perfect compliment for the cakes! I made mini-cupcakes for a baby shower!
