Spring is in full force here. The trees and plants are flowering and spreading pollen everywhere. But I'll take pollen over snow any day!
I realize this time of year is hard for everyone up north. Everyone is so ready for the warm weather to just be here and stay. I remember when we lived in Indiana and would have those teaser days. One day it would be really nice and warm and then it would get cold again.
Thank goodness that life in Florida isn't that temperamental right now. Just give it time. In a month or two the humidity will come back in full force, and I will be wishing for those cool Midwest days.
This easy breakfast cake comes together in no time at all. Now I do need to warn you. The dough is very sticky, so make sure you use an angled spatula to spread the dough in the pan.
This snack cake is also so easy to customize. I've use the base to create this Apple Butter Crumble Cake and this Banana Nutella Snack Cake. The next one I want to do is a blueberry version.

The pie filling really doesn't take that much time, and there is so much more fruit in the homemade version. Plus, you will have extra to spread on toast or just eat with a spoon. I vote for the spoon method!
How to make a Strawberry Lemon Snack Cake
- Line a 10x15 pan with foil and spray with nonstick spray.
- Beat the butter and sugar until creamy. Add the eggs and beat again.
- Add the flour, salt, and baking powder and mix until a sticky dough forms.
- Reserve 1 cup of the dough for the top.
- Spread remaining dough in the prepared pan using an angled spatula.
- Add the pie filling on top and spread out. Make sure to leave a 1 inch border all around the edge of the cake.
- Drop the reserved dough on top of the pie filling and bake. Remove and cool.
FYI: Before serving cut the cake into slices, then drizzle the lemon glaze on top so it runs down the sides of the cake. It soaks into the sides of the cake and mixes with the pie filling on top. It really does add a little bit of extra something to this homemade strawberry cake recipe.

Strawberry Lemon Snack Cake

Ingredients
- 1 cup unsalted butter
- 1 ¾ cups granulated sugar
- 4 large eggs
- 3 cups all purpose flour
- 1 teaspoon table salt
- 1 ½ teaspoons baking powder
- 1 ½ cups Homemade Strawberry Pie Filling
- 1 ¼ cups powdered sugar
- 2 tablespoons lemon juice
Instructions
- Preheat oven to 350°. Line a 15x10 baking sheet with foil and spray with nonstick spray.
- Beat the butter and sugar until creamy. Add the eggs and beat again.
- Add the flour, salt, and baking powder to the butter mixture and mix until a sticky dough forms.
- Reserve 1 cup of batter for the top. Spread the batter in the bottom of at the prepared pan with an angled spatula.
- Top with pie filling, leaving 1 inch all around. Drop small spoonfuls of the reserved batter on top. Bake for 22-25 minutes. Cool.
- Cut the cake into 30 bars. Whisk together the powdered sugar and lemon juice. Drizzle over the top of the bars. Let set. Store in a sealed container.

One of my families' favorite desserts now. We have made this multiple times now.
I use Bob Red Mills 1 to 1 Gluten Free baking flour and make no other alterations and it comes out perfect and gluten free.
I always add blueberries to it as well.

For the 4th of July party I stirred in fresh blueberries into the cooled jam before spreading on batter. Cut cooled cake into pieces in 3" rounds using biscuit cutter. The shape and colorful red,white, blue cakes are perfect for the party. Tastey and fresh, lite dessert. Will make again. Like!

You could use margarine in place, although I think it will affect the texture slightly because margarine has more water in it than butter.

I made this recipe. Seriously, these bars are OUT OF CONTROL good. I feel like the name doesn't do it justice. I really thought it would be your standard coffee cake-with-fruit, and after I put them in the oven, I even worried a little because they didn't even call for vanilla. Oh how wrong I was. OMG, these snack cakes are A-M-A-Z-I-N-G!!!!! My husband and I are having a small dinner party with friends tonight, & I decided I would bring dessert; since I had a taste for something lemony, I took a look on Pinterest for inspiration, and I stumbled upon this recipe. I figured the ingredients were readily available, and it seemed simple enough to make, so I decided to give it a try, and BOY OH BOY, they turned out scrumptious! I brought them in to work to test them out before presenting them at the dinner party, and everyone enjoyed them! It certainly is a refreshing spring treat, & that’s what I love about these not too sweet goodies. However, I did make a couple of adjustments to the recipe. I added lemon zest, lemon juice, & 1 tsp of vanilla into the batter. I love the fact that the topping’s focus is the sweetness from the strawberries. LOVE, LOVE, LOVE, will definitely be making these yummy delights again! Thanks so much for sharing!
