- 1 cup butter, unsalted
- ½ cup granulated sugar
- 1 cup packed brown sugar
- 1 teaspoon table salt
- 1 teaspoon vanilla extract
- ½ teaspoon orange extract
- 2 large eggs
- zest of 2 navel oranges
- 1 tablespoon cornstarch
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 ½ teaspoons cinnamon
- ½ teaspoon nutmeg
- 3 ½ cups all purpose flour
- 1 ½ cups white chocolate chips, divided
- ⅔ cup pomegranate arils
Instructions
- Preheat oven to 375°. Line a baking sheet with parchment paper or a Silpat.
- Beat butter and sugars in a mixing bowl until light and creamy.
- Mix in the vanilla extract, orange extract, orange zest, and eggs until smooth.
- Slowly mix in cornstarch, baking powder, baking soda, salt, and flour. Gently stir in white chips by hand.
- Use a 2 tablespoon scoop to make 28 dough balls. Press 5 extra white chips onto the top of the ball. Press 12 pomegranate arils into the top and sides of the balls.
- Place 8 on the prepared pan and bake for 11 minutes. Remove the pan from the oven and let the cookies rest on the hot pan for 5 minutes; then move them to parchment paper on the counter to cool completely.
