Fudge Mint Popcorn

It’s time to eat your greens.  And by greens, I mean girl scout cookies in this Fudge Mint Popcorn.  It is the best way to eat those greens.

You didn’t think I meant the  spinach, kale,
broccoli or cucumbers that are all rotting away in my fridge crisper.
Veggies! Who needs them anyway?
Oh yea, my sugar laden body that is supposed to be eating them
so it will be ready for our cruise and beach vacation!
Maybe a padlock on my baking cupboard would help?
Oh, and maybe if I stopped hiding food for research purposes.
Or better yet, if I was just good and didn’t buy it.
Like that’s going to happen:-)

and really it is THAT much!
Seriously though…back to eating some green this weekend.
It is kind of a holiday so I’m thinking about celebrating
by popping green m&m’s and bowls of Fudge Mint Popcorn
while chilling on the couch with my little family!
Wait, did I say green coated popcorn?
Now there is a great idea…
I should have coated the entire thing
with the green chocolate instead of just drizzling.
Hhhhmmmm maybe next time.
My brain doesn’t think that fast when sugar is near.
Basically I have to keep lots of scraps of paper and notebooks
around for when an idea pops into my head.
There is no rhyme or reason to when this might happen.
Commercials, at the gym, junk food, cereal boxes, sadly even sitting in church.
All of a sudden it just pops in…
and could pop back out if I don’t write it down.
This popcorn jumble happens to be one of those moments.
Sadly I don’t remember where I was or what I was doing
when I thought, “Hey, fudge mint popcorn would be awesome
if it had m&m’s, marshmallows, cookies, AND sprinkles in it!”

Now I know that cookie inspired popcorn is not a new thing…
in fact there are quite a few versions on pinterest.
So in no way am I trying to claim something that is already around.
This popcorn does have a little secret though…
come a little closer and I will whisper it in your ear.
(I used walmart cookies because I refuse to pay $4-5 for a tiny little box of those “other” cookies)
 
 
No siree, I am good with generic brand cookies.
Especially when I am throwing all sorts of other goodies in with it,
and because I think they taste just as good.
 
If I had gotten the good ones, I wouldn’t have had enough money
for the extra ingredients…
and really the extra stuff in it really sets it apart!
Gives it the WOW factor!!

If donuts count as breakfast,
then why not popcorn???
Fudge Mint Popcorn

Prep Time: 20 minutes

Yield: 10 cups

Fudge Mint Popcorn

Chocolate covered popcorn loaded with thin mint cookies, mint candies, and more chocolate.

Ingredients

8 c. popped popcorn
1 c. miniature marshmallows
3/4 c. chocolate candies, divided
1 1/2 c. fudge mint cookies, chopped & divided
1 1/2 c. white chocolate chips
1 tsp. shortening
1/4 c. green candy melts
3 Tbsp. sprinkles

Instructions

  1. Combine popcorn, marshmallows, 1/2 c. chocolate candies, and 1 c. fudge mint cookies pieces in a large bowl. Crush the extra 1/2 c. cookies into crumbs and set aside with the extra chocolate candies.
  2. In a microwave safe bowl, combine the white chips and shortening. Heat slowly, stirring every 30 seconds until melted. Pour over popcorn mixture and toss until everything is coated. Spread out on a wax paper lined cookie tray. Sprinkle with the crushed cookies and the extra 1/4 c. chocolate candies. Let set.
  3. Heat the green candy melts in a microwave safe bowl. Spoon into a plastic bag and cut the tip off one corner. Drizzle over the popcorn and top with sprinkles. Let set before eating.
