Every day about 2 o’clock I start to think about dinner.  Now you have to realize I said “think” about dinner.  In our home, my husband makes most of our meals.  He really enjoys cooking, and I am content to do the baking.  But there are those days that I wonder what I could do for dinner to help out.  I think and think and most of the time just come up with one of our usual meals.  There are only so many pots of spaghetti and plates of salad one can consume before being bored with that meal.

Using a veggie dip for the sauce on a pizza takes pizza night to a whole new exciting level.

1 refrigerated pizza crust (13.8 oz.)
1/2 teaspoon olive oil
1/2 cup Marzetti Southwest Ranch Veggie Dip
1 1/2 cups shredded cooked chicken
1/2 teaspoon cumin
1/4 teaspoon chili powder
1/2 teaspoon paprika
1 cup chopped cooked bacon
1/3 cup chopped sweet onion
1/4 cup sliced black olives
2 cups shredded mozzarella cheese
2 cups shredded pepper jack cheese
1 cup shredded iceberg lettuce
1 cup chopped roma tomatoes

  1. Grease a 10x15 inch pan with olive oil. Press the pizza dough onto the pan. Bake at 400* for 8 minutes.
  2. Stir together the chicken, cumin, chili powder, and paprika. Spread the veggie dip over the partially baked pizza crust. Sprinkle the chicken, bacon, and onion over the top. Cover the pizza with both cheeses. Sprinkle the olives over the cheese. Bake again for 15-18 minutes.
  3. Remove and cut into squares. Top with shredded lettuce and tomato before serving. Makes 8 servings.

You have SAVED our suppertime, Jocelyn! We eat a lot of chicken around here, but it’s usually with some kind of Oriental sauce and rice or as chicken fajitas or quesadillas. We will gladly add this to our chicken repetoire (but I’m going to put all the olives on the pieces meant for my husband because he’s the only one in the family that really cares for them)!

    Have a great week!

Wow that sounds like such a cool site! I always end up making Easy Mac or some other boring dish when I find myself staring at the fridge lol, so I could def. use some help in that area. And this pizza looks like a fantastic weeknight meal! As if I needed a reason to love pizza more. ;)
