Summer is here, so it's a great time to enjoy all the fresh, juicy fruits. I love buying extra fruit during peak season to make different kinds of desserts, such as fruit butter and berry coffee cake.
A few of my favorite summer desserts are blueberry cobbler and cherry crisp because they are easier than pie. There is no need to create or roll out a pie crust here. Just make a sweet fruit mixture and sprinkle it with an oat topping.
I decided to switch up the easy, crisp dessert by adding both berries to the filling and coconut to the topping. It's now my favorite way to use fresh summer fruit.

How To Make Cherry Berry Crisp
Make a lasting impression on your dinner guests with a cherry blueberry crisp. Add the crisp topping and pop it in the oven while you're enjoying your meal. It's guaranteed to be a crowd-pleaser!
- Prepare the fruit. Wash the fruit and then pat dry. Use a cherry pitter to remove the pits from the cherries, then cut them in half.
- Assemble the filling ingredients. Stir the cherries, blueberries, granulated sugar, flour, and cinnamon in a baking dish.
- Make the topping. In a small bowl, stir the topping ingredients until they resemble wet sand. Use your hands to clump the oat mixture together.
- Bake and enjoy. Sprinkle the sweet topping on top of the berry mixture. Then bake until the fruit is thick and bubbly, and the topping is crispy and golden brown.

Ingredients
For the Berries
- 2 cups blueberries
- 2 cups pitted, halved cherries
- ½ cup granulated sugar
- ¼ cup all-purpose flour
- 1 teaspoon cinnamon
For the Crisp Topping
- ½ cup all-purpose flour
- ½ cup rolled oats
- ½ cup packed brown sugar
- ½ cup shredded sweetened coconut
- 1 teaspoon cinnamon
- 6 tablespoons unsalted butter, melted
Instructions
- Preheat oven to 375°. Spray a 2-quart casserole dish with nonstick baking spray.
- Stir the blueberries, cherries, sugar, flour, and cinnamon in the greased dish.
- Stir together all the topping ingredients until they resemble wet sand. Crumble evenly over the top of the fruit mixture.
- Bake for 40-45 minutes. Remove and serve warm with vanilla ice cream, if desired.

Such a gorgeous crisp Jocelyn!! They're my favorite fruit desserts, mainly because I can pretend they're "healthy" since I'm eating a full serving of fruit.
