Our whole family loves Alfredo sauce, so we usually reach for that first. A few of our favorites are these sausage stuffed shells and chicken Alfredo gnocchi.
Recently, I found a box of lasagna noodles in the pantry, so I decided to make some lasagna rolls for dinner. I added Alfredo sauce, canned tomatoes, chicken, bacon, and a bunch of cheese.
The cool thing is that this dinner is easy to throw together ahead of time. It can chill in the fridge until everyone is back home. Then, just toss it in the oven to bake while everyone gets ready!

Our Alfredo roll-ups use simple ingredients and a few store-bought items to save on prep time.
- Lasagna Noodles: Cook the entire box so you have extra noodles in case the pasta breaks or tears. Do not purchase the lasagna sheets.
- Alfredo Sauce: Use your favorite jar of alfredo sauce or make a homemade sauce.
- Milk: A little bit helps to thin the sauce down.
- Ricotta Cheese: One whole container creates the cheesy base for the filling. Full-fat cottage cheese with small curd will also work.

How To Make Chicken Alfredo Lasagna Rolls
Follow our simple steps to assemble this lasagna dish in minutes. To save time in the kitchen, use a rotisserie chicken.
- Mix the ricotta, shredded cheese, sauce, chicken, Italian seasoning, tomatoes, and cooked bacon in a large bowl. Add salt and pepper to taste, if desired.
- Lay the cooked noodles on a baking sheet, patting them dry with a paper towel if needed. Spoon and spread the creamy chicken mixture evenly onto the noodles.
- Roll up gently and place seam side down in a baking dish. Pour the rest of the Alfredo sauce over the top of the rolls. Top with the remaining cheese and bake until it is melted and the creamy sauce is hot and bubbly.
- Turn on the broiler and broil for 1-2 minutes until the cheese is golden brown and crispy. Watch carefully, as it will burn quickly.

Chicken Alfredo Lasagna Rolls
Ingredients
- 12 regular lasagna noodles
- 1 - 15 ounce jar Alfredo sauce
- ½ cup milk
- 1 ½ cups ricotta cheese, drained if needed
- 2 cups freshly shredded mozzarella cheese, divided
- 3 cups cooked chopped chicken (I used rotisserie)
- 1 teaspoon Italian seasoning
- 1 tablespoon minced garlic
- 1 - 14 ounce can petite diced tomatoes, drained well
- ½ cup cooked crumbled bacon
- salt and pepper, to taste
- Fresh parsley
Instructions
- Preheat oven to 375°F. Spray the bottom and sides of a 9x13 pan with nonstick spray.
- Boil water and cook the noodles al dente according to the package directions. Drain the cooked noodles well, but don't rinse. Then, separate them so they don't stick.
- Whisk together the Alfredo sauce and milk and spread ¾ cup in the bottom of the prepared pan.
- Mix the ricotta cheese, ¼ c Alfredo, 1 cup mozzarella cheese, chicken, seasoning, drained tomatoes, and cooked bacon in a large bowl. Add salt and pepper to taste, if desired.
- Lay the cooked noodles on a baking sheet, patting them dry with a paper towel if needed. Spoon an equal amount of the chicken mixture evenly onto the noodles, then spread it evenly over them.
- Roll up gently and place seam-side down in a baking dish. Pour the rest of the Alfredo sauce over the noodles in the pan.
- Top with the remaining mozzarella. Bake uncovered for 20-22 minutes or until the cheese is melted and everything is hot and bubbly.
- Turn on the broiler and broil for 1-2 minutes until the cheese is lightly browned and crispy. Watch carefully, as it will burn quickly.
- Garnish with fresh chopped parsley and serve hot with garlic bread. Refrigerate leftovers.

How do you suggest reheating these? I want to bake the night before, and reheat at a potluck next day.

Will you have access to an oven the day of the potluck? I think they would be better cooked the day of. You could put them all together the night before, and then cover it with foil and refrigerate it over night. The next day let it sit out on the counter for about 30 minutes before baking.
