I'm always looking for fun and delicious ways to make s'mores without all the mess. These s'mores blondies and these cookie dough s'mores are a few of my favorites.
This summer, I turned my favorite summer treat into an adorable cookie cup. I modified the dough from my favorite chocolate chip cookie cake to create the base for the treats. Every bite contains graham crackers, marshmallows, and milk chocolate baked into a soft, gooey cookie.
The best thing about these cookies is that you can make them at home without having to start a fire. So, these s'mores cookies are the perfect choice for a summer barbecue, a pool party, or just relaxing on the couch.

How To Make S'mores Cookie Cups
These easy s'mores cookie cups are a fun and tasty twist on a classic summer tradition. They are perfect for any occasion and are super easy to make.
- Beat the butter and sugar in a large bowl until creamy. Slowly mix the wet and dry ingredients, then gently stir in the chocolate chips.
- Use a 1-tablespoon scoop to divide the dough evenly into 24 balls. Roll each ball in crushed graham crackers and then place them in a greased mini muffin pan.
- Pull the pan out of the oven. Gently press an indent in the tops of each cup with the back of the cookie scoop or a tart shaper. Place 4-5 mini marshmallows in the middle of the cookies and then broil for 1-2 minutes.
- Remove and let cool in the pan for 5 minutes, then use a butter knife to gently remove the cookies from the pan. Place on a wire rack and cool for another 5 minutes. Press mini Hershey's bars into the center of the toasted marshmallow.

Chocolate chip cookie cups rolled in graham crackers and filled with chocolate and toasted marshmallows make it easy to enjoy a delicious campfire treat without all the mess.
Ingredients
- ½ cup unsalted butter, softened
- ¼ cup granulated sugar
- ½ cup packed light brown sugar
- 1 large egg
- ½ teaspoon vanilla extract
- ¼ teaspoon baking soda
- ½ teaspoon table salt
- ½ teaspoon cinnamon
- 1 ½ cups all purpose flour
- 1 cup milk chocolate chips
- ½ cup crushed graham crackers (3 full sheets)
- 1 cup mini marshmallows
- 6 miniature Hershey's chocolate bars, broken into 24 pieces
Instructions
- Preheat oven to 350°F. Grease a mini muffin tin that has 24 cavities.
- Beat the butter and sugar until creamy. Add the egg and vanilla and beat again.
- Slowly mix in the baking soda, salt, cinnamon, and flour until a soft dough forms. Stir in the chocolate chips gently.
- Use a 1-tablespoon scoop to divide the dough into 24 balls. Roll the balls in the crushed graham cracker crumbs and place each one in the prepared mini muffin tin.
- Bake for 10 minutes. Remove the pan and gently press in the centers of the cookies with the back of the cookie scoop or a tart shaper.
- Turn the broiler on. Top each cookie with 4-5 miniature marshmallows. Place the pan on the lower shelf of the oven so the marshmallows don't burn. Toast for 30-60 seconds. Watch carefully and remove them once they start to get golden.

Oh, man! I haven't made them in a while, so I didn't know the spread wasn't available anymore. Hot fudge or Nutella would work in the in the centers too!
