For the Muffins
- ½ cup vegetable oil
- ½ cup packed light brown sugar
- 1 ¼ cup apple butter, divided
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all purpose flour (240g)
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon table salt
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- ½ teaspoon ground cloves
For the Topping
- 3 tablespoons light brown sugar
- ¼ cup all purpose flour
- 1 teaspoon cinnamon
- ¼ cup quick oats
- ¼ cup chopped nuts
- 2 tablespoons melted butter
Instructions
- Preheat oven to 375°F. Spray a 12-count muffin tin with nonstick baking spray. Wipe out any excess with a paper towel.
- Mix the oil and brown sugar until combined. Add 1 cup apple butter, eggs, and vanilla and beat again.
- Stir the dry ingredients in another bowl and slowly mix them into the wet ingredients until combined.
- Spoon the batter evenly into the prepared pan. Add one teaspoon of the reserved apple butter to each one and swirl gently with a toothpick.
- Mix the crumble ingredients in a small bowl. Use your hands to clump it together, then sprinkle it evenly over the muffin batter.
- Bake for 16-18 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Remove and let cool in the hot pan for 5 minutes, then place on a wire rack to cool completely.
