Ingredients
- 2 ¾ cups chicken broth
- 1 ¼ cup uncooked long grain white rice
- 1 - (10.5 ounce) can cream of chicken soup
- ⅔ cup heavy cream
- 1-2 teaspoons Italian seasoning
- 3 cups shredded medium cheddar cheese, divided
- 2 ½ cups cooked chicken, shredded or diced into 1” cubes
- 2 cups frozen broccoli
Instructions
- Place the chicken broth and rice in a large saucepan. Bring to a boil over medium heat. Cover the pan and reduce to low. Simmer for 15-18 minutes or until liquid is absorbed and rice is soft.
- While the rice is cooking, preheat the oven to 400°F. Lightly spray a 9x13 baking dish or 6 qt casserole with nonstick spray.
- In a large mixing bowl, stir together cooked rice, cream of chicken soup, heavy cream, and seasoning until combined.
- Add the 2 cups of shredded cheese, cooked chicken, and frozen broccoli to the rice mixture. Spoon into the prepared dish and top with remaining cheese.
