Main Ingredients Needed
Make sure you have all the ingredients before starting this churro cookie recipe. Most of the items should be things you already have in your pantry.
- Butter - We prefer to use unsalted butter, so we can control the amount of salt in the recipe. If you use salted butter, reduce the amount of salt by ¼ teaspoon.
- Sugar - You will need granulated sugar for the sugar cookie dough and powdered sugar for the cinnamon frosting.
- Egg - One large egg adds liquid and helps to bind the ingredients together.
- Cinnamon Syrup - This is a cinnamon infused maple syrup that can be found in stores or you can make our homemade cinnamon syrup.
- Baking Powder - Adds the lift needed as the cookies bake.
- All Purpose Flour - Fluff and loosen the flour before measuring. For full instructions, see our post on how to measure flour.
- Cinnamon Sugar - You can buy this in grocery stores or make our cinnamon sugar ratio.
How to make Churro Cookies
These cut out churro sugar cookies are so easy to make. All you have to do is follow our simple instructions and in no time at all you'll be enjoying some fresh-baked goodness from your very own oven.
The best part is that the dough is really easy to work with, so you can cut out any shape you want. Transform this churro cookie recipe into a fun holiday cookie by using different cookie cutters like stars, trees, or reindeer.
Step One: Make Cookie Dough
- Beat the softened butter and sugar until creamy. Add vanilla and egg and mix again.
- Add the flour, baking powder, and some cinnamon sugar and mix until a soft dough forms.
Step Two: Roll it Out.
- Pat the dough into a ball and cut in half.
- Roll one ball out on a lightly floured surface to around ⅜" thick.
- Use a 2 inch round cookie cutter (or glass cup) to cut out circles.
- Re-roll dough to get more circles.
Step Three: Bake.
- Place cookie dough circles on baking sheets.
- Bake 8-9 minutes or until edges are just slightly brown.
- Remove and let cool on hot pan for 3-4 minutes before placing on wire rack to cool.
Step Four: Frost
Of course, the best part of sugar cookies is the frosting. A swirl of frosting and cinnamon sugar makes this the best churro cookie.
- Beat softened butter, shortening, and salt until creamy. Add 1 tablespoon cinnamon sugar and syrup and beat again.
- Slowly add the powdered sugar it is mixed in.
- Spoon the frosting into a piping bag with icing tip #21. Swirl frosting on cooled cookies.
- Sprinkle with cinnamon sugar before frosting sets up.
How to Store Frosted Sugar Cookies
Store the frosted sugar cookies in a tightly sealed container on the counter for 3-4 days. They will keep for 4-7 days if kept in the refrigerator.
Freeze unfrosted cookies in an airtight container for 1-2 months. Thaw before frosting and enjoying.
Recipe Tips
- Do not over mix your cookie dough. Over mixing will make tough and dry cookies.
- Roll the sugar cookie dough out on a lightly floured surface, so it doesn't stick.
- Do not roll the dough too thin. You want it to be at least ⅜" thick.
- Bake the cookies until they are lightly brown on the edges. The tops will not look done, but that is what you are looking for.
- Make sure the cinnamon sugar cookies are completely cool before adding frosting to the tops.
- The good thing about these cookies is that you can put as little or as much frosting on them as you like. Spread it thin with a spatula or swirl it thick with a piping bag.
- Use a piping bag and icing tip 27 to swirl cinnamon butter cream on top of each cookie and top with a generous coating of cinnamon sugar mixture.

Can you use all butter in the frosting?

Churro Cookies Recipe
These homemade Churro Cookies are topped with a thick swirl of cinnamon frosting. The best part is that they are sprinkled with cinnamon sugar, so they taste just like the Crumbl churro cookies. You won't be able to stop at just one!
Ingredients
For the Cookies
- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg
- 2 tablespoons cinnamon syrup
- 2 teaspoons baking powder
- 3 cups all purpose flour
- ½ teaspoon table salt
- 4 tablespoons cinnamon sugar
For the Frosting
- ½ cup unsalted butter, softened
- ½ cup vegetable shortening
- 3-4 tablespoons cinnamon maple syrup
- 3 tablespoon cinnamon sugar, divided
- ¼ teaspoon table salt
- 4 cups powdered sugar
Instructions
For the Cookies
- Preheat oven to 400 degrees.
- Cream the butter and sugar until light and fluffy. Add the egg and syrup and beat again.
- Mix in half the flour, baking powder, and 2 tablespoons cinnamon sugar, then mix in the rest of the flour and the remaining cinnamon sugar.
- Divide the dough in half. Place one dough ball on a floured surface and roll out to ⅜" thick. Use a 3 inch round cookie cutter to cut out circles. Remove cut outs from dough and place on nonstick baking sheet.
- Pat the dough back together into a round disc and roll again. Repeat with all remaining dough until you have 20 circles.
- Bake cookies for 9-10 minutes. Let the cookies cool 3-4 minutes on the hot pan, then move carefully to a wire rack.Make sure the cookies are completely cool before adding frosting.
For the Frosting
- Beat the butter, shortening, and salt until light and creamy.
- Add 1 tablespoon cinnamon sugar and syrup and beat again. Slowly add the powdered sugar it is mixed in.
- Spoon the frosting into a piping bag fitted with icing tip #21. Swirl frosting on cooled cookies. Sprinkle with cinnamon sugar.
- Store cookies in a sealed container.
Notes
- You can use all butter for the cookies if you prefer that instead. The frosting will be a little bit more yellow colored and softer.
