We love adding girl scout cookies to our desserts. This thin mint cheesecake and these thin mint granola bars are some of our favorites.
Now you can enjoy your favorite brownies with thin mints! We added creamy mint fudge loaded with thin mint cookie crumbles to a chewy chocolate brownie.
Why This Recipe Works
Thin mints are one of the most popular Girl Scout cookies, but they are only available for a limited time each year. If you love these mint chocolate cookies, you know the wait for them every year is torture.
Our thin mint brownies are the perfect solution when you are craving those mint cookies. We added a creamy mint fudge and topped it with a healthy dusting of crumbled mint chocolate cookies, so you can enjoy your favorite girl scout flavor all year long.
This brownie recipe is the perfect treat for any occasion. Plus, they will impress all your family and friends.
What You Need
You can make a pan of these fudge brownies using ingredients you probably have in your pantry already.
- Brownies - Use a box brownie mix that will make a 9x13 pan of brownies. You can also make a double batch of these chocolate chip brownies if you prefer homemade.
- Sweetened Condensed Milk - It makes the fudge sweet and creamy.
- Extracts - A combination of mint extract and vanilla extract gives it the perfect mint flavor without giving you a toothpaste taste.
- White Chocolate Chips - You will need to buy 2 small bags or one large bag of white chips to have enough.
- Butter - Helps the chocolate chips melt down smooth.
- Marshmallow Fluff - Gives the fudge a light and fluffy texture.
- Chocolate Mint Cookies - Thin Mints, Grasshoppers, or Mint Oreos are all good options.
How to Make Thin Mint Brownies
These mint brownies are very simple to make. Follow our step by step instructions, so you can have a pan ready for dessert.
- Make the brownies. Mix together the brownies and bake. Let cool completely. Once the brownies are cool, press the top down so it is completely even all over.
- Melt the mint fudge mixture. Stir together the sweetened condensed milk, extracts, white chocolate chips, and butter in a large pot over low heat. Stir until everything is melted and creamy. Add the marshmallow fluff and stir again. Tint the fudge green using a little bit of green food coloring.
- Assemble the mint brownies. Spread the mint fudge evenly on the cooled brownies. Sprinkle the top with chopped cookies. Gently press them into the fudge. Refrigerate until set.
This fudge is easy but it does take some time to set up. I recommend making these ahead of time if you need them for a party the next day.
Storage Recommendations
- Counter - Keep the mint fudge brownies at room temperature in a tightly sealed container for 2-3 days.
- Fridge - Place the brownies in an airtight container in the fridge for 5-6 days.
- Freezer - Wrap the fudge topped brownies in plastic wrap and place in a freezer safe bag or container and freeze for 1-2 months. Thaw in the fridge overnight.

This past weekend I decided to do a sort of brownie dessert with mint... talk about an epic failure! Let's just say the batter was green, and green batter doesn't look to great once it's baked. Putting the mint fudge on top of brownies sounds like a WAY better idea, and these look incredibly good! I would have no patience waiting to cut the brownies either!
Jocelyn Brubaker
It definitely sounds like and awesome brownie idea! Gotta hate baking fails and not so great colors! I kept trying to cut into these early and it wasn't a good thing. Tasted great but presentation was a little messy ๐

Jocelyn Brubaker
I am with you...mint doesn't usually do it for me. But those DH packets don't have that strong of a mint flavor...it was actually just perfect for all the chocolate in the brownie. I still have 1/2 a pan left, so come on over for a shoveling fest!!!
Cindy Harris
I saw this photo at a linky party and knew it had to be from your blog! This look perfectly delicious!

Jocelyn Brubaker
My thoughts exactly! Wanna come over and help me finish off the pan? ๐
Elizabeth @ Confessions of a Baking Queen
I will come over for some brownies but I'll take some tea instead of coffee ๐ Thin mint cookies never last long in my house either.. in fact I was going to use one sleeve to bake with and when I went to grab it only half were left ๐ Mind you I bought the cookies maybe 2 hours prior to that! The creamy fudge layer looks delicious and yes I would have to take these to a party because I would definitely make myself sick eating all of these ๐
Jocelyn Brubaker
I have plenty of tea choices too. Come on over and eat brownies with me until we are sick. I knew the actual Thin Mints wouldn't last long enough for me to bake with, but thank goodness Walmart and Keebler have fabulous knock offs!!!
Aimee @ ShugarySweets
Oh man I want some of these brownies! I haven't had brownies in weeks, I think that needs to change. Today! These look amazing girl, love that you used Walmart cookies and not the real deal. Guess that means I can make and eat them all year long!
Jocelyn Brubaker
No brownies in weeks? Girl are you ill? You need to make and eat brownies immediately. Come on over...I have a whole pan of these mint brownies waiting!!!
