Peanut Butter Smore Blondies


Every month I get in my car
drive downtown to pay my water bill,
and every time I FORGET
what street to turn on….
It’s not like it’s a new thing.
I go every month to the exact same office.

I blame it on SAHM mush brain.
That or it is probably just old age creeping in
at an alarmingly fast pace!

Yesterday was “pay the water bill” day,
and yup, you guessed it.
I got down there and second guessed myself,
and sure enough, turned on the wrong one.
The thing is…
as soon as I passed the right street I knew:-)

Now I could avoid this whole thing
and just put it in the mail,
but I usually have library books to return
or errands to run,
so why not just swing on by there too:-)

Now I wish that I could FORGET
about my peanut butter and chocolate love affair!!!
I have a diet confession for you!
(hangs head in shame)

The other night I was working on some flowers for my shop
when I heard it calling out to me
in a sweet sing songy voice.
“Please come dip a spoon into my yummy chocolatey goodness!”

What you have never had chocolate frosting talk to you????
Hhhhhmmmm, like I said old age is catching up to me fast!
(I might end up in the loony bin sooner than I think)
Anyway, I walked right to the kitchen,
got out a spoon,
and scooped out 1 spoonful.
(I was planning on being good)

Then I turned around
and the pantry door was wide open!
It was like angels singing or something
and there was a glow of light coming from
the peanut butter and marshmallow cream jars!!!

I lost all self control
and went crazy!!!
Let me tell you that a spoonful of
fudge frosting, peanut butter, and marshmallow cream…
HEAVEN on a spoon ♥

So then all I could dream about was somehow pairing those flavors
into some sort of delicious goodness!!!
And these bar cookies is the result of my diet fail…
see some good came out it right?

Plus I got to send them away to a dinner right away
so that I couldn’t stuff my face again…
at least with these tempting treats!!!!

Peanut Butter Smore Blondies

Prep Time: 10 minutes
Cook Time: 22 minutes
  • 1/2 c. butter, softened
  • 1 c. brown sugar
  • 1/2 c. peanut butter
  • 2 eggs
  • 1 tsp. vanilla
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/2 c. flour
  • 1 c. chocolate chips
  • 2 c. marshmallow cream
  • 1 c. hot fudge ice cream topping
  • 10 graham crackers
Preheat oven to 350*. Spray a 9×13 pan with non stick baking spray. Place the graham crackers in the bottom of the pan and set aside.
Cream the butter, sugar, and peanut butter until light and fluffy. Add the eggs, vanilla, baking powder, and salt and beat again. Add the flour a little bit at a time until all incorporated. Stir in the chocolate chips. Spread half of the batter on top of the crackers in the baking pan. Spoon on the marshmallow cream. Drizzle with the hot fudge.Start putting small spoonfuls of the rest of the cookie batter on top of the cream and fudge. Carefully spread it out. It is ok if the marshmallow and fudge is showing just a little.
Bake for 22-24 minutes. Let cool on a wire rack. Before cutting these, refrigerate for at least an hour. It just helps you cut the bars better. Then let come to room temperature before eating.

    Get out! You totally married my two favorite things. Peanut butter and smores. OMG. I truly have died and gone to heaven. Diet? What diet?

    I do the same thing when I got o my husband’s office. There is one road that I always second guess myself. Problem is, if I miss the road, I have to backtrack over a mile. How often to I miss the road? Every.single.time. Sigh.

    How delicious is this!!! Im glad to know I’m not alone in my perpetual state of forgetfulness!!! I finally started paying my water bill through online banking… No stamps, no gas and no need to remember street names. I highly recommend it! : )
