- Stir the sugar and melted butter into the crumbs.
- Press the mixture evenly in a foil-lined 8x8 baking pan.
- Bake for 8 minutes, then cool.
Make Banana Fudge
- Add the white chocolate chips, butter, and sweetened condensed milk in a pan over low-medium heat. Stir until melted and creamy.
- Sprinkle in the dry pudding mix and stir for 1-2 minutes while the fudge is still on low heat.
- Pour onto the crust.
Make Vanilla Fudge
- Melt a small amount of white chocolate chips, butter, and sweetened condensed milk in a small pan over low heat. Stir until melted.
- Pour on top of the banana fudge layer and spread out gently.

- Place on the counter for 4-6 hours or until completely set.
Set and Serve

Ingredients
For the Crust
- 1 ½ cups Nilla wafer crumbs (35-40 cookies)
- 2 tablespoons granulated sugar
- 5 Tablespoons unsalted butter, melted
For the Banana Fudge
- 2 cups white chocolate chips
- 2 tablespoons butter
- ⅔ cup sweetened condensed milk
- 8 tablespoons instant banana cream pudding mix
- ⅔ cup marshmallow cream
For the Vanilla Fudge
- 1 cup white chocolate chips
- 1 tablespoon unsalted butter
- ⅓ cup sweetened condensed milk
- ⅓ cup marshmallow cream
- 2-3 crumbled Nilla Wafers
Instructions
- Line an 8x8 baking pan with foil or parchment paper. Preheat oven to 350°.
- Combine the cookie crumbs, sugar, and melted butter. Firmly press the mixture into the pan. Bake for 8 minutes. Remove and cool.
- Combine the white chocolate chips, butter, and sweetened condensed milk in a large saucepan. Stir over low-medium heat until melted and smooth.
- Add the dry pudding mix and stir for 1-2 minutes longer to help dissolve the powder.
- Spoon in the marshmallow cream and stir until melted and smooth again.
- Pour the banana fudge mixture onto the prepared crust. Set aside.
- Place the white chocolate chips, butter, and sweetened condensed milk in a small pan. Heat over low-medium heat until melted and smooth. Stir in the marshmallow cream.
- Slowly pour on top of the banana fudge layer. Spread out carefully. Sprinkle with crumbled cookie pieces. Let set completely before cutting into squares.

I have made this fudge twice now and it has turned out grainy each time. What am I doing wrong?

You are not doing anything wrong. The pudding mix will never fully dissolve because it isn't being mixed with milk. I usually add it and continue to stir for at least 2 minutes with the pan over low heat. This helps to dissolve it a little more, but it will still have a slight gritty/grainy texture.

I haven't actually tested this particular recipe with real bananas. It is actually on my list to test sometime though. My husband and I tried a banana fudge at Buccee's, and I'm pretty sure it had real bananas because it tasted so good.

Hi, I love fudge and unusual fudge flavors. I use the frosting recipes quite often. Do you think vanilla icing and white chips could be microwaved and used instead of the butter/sweetened condensed milk if it's what I had on hand? And do you ever find that your frosting fudge is too soft? I live in the very humid south and I wonder if the weather affects the fudge?

Yes vanilla chips and vanilla frosting would be perfect. Here is my basic frosting recipe. https://insidebrucrewlife.com/frosting-fudge/ I do like to add a little butter to help melt the chips and to make the fudge creamier, but you could leave it out. And yes, I have noticed certain ones being softer. Humidity is definitely one reason, another one that I have noticed is different brands of chocolate chips can affect how the fudge sets up.

Not a weird question at all. Marshmallow cream is a confectionery spread similar in flavor, but not texture, to regular marshmallows. It is gooey and spreadable and so delicious. You can buy it on amazon or I have seen some recipes to make it homemade.

I live in Canada and everything here is done in grams (grrr:) and the pudding mix is sold in 32g boxes. I would need 3 boxes for this recipe. It looks like a lot of pudding mix. No, it needs to be the instant pudding because it dissolves in the fudge mixture. You can use vanilla pudding in place of it if you need to.
