Strawberry Cobbler Recipe
This Easy Strawberry Cobbler has a homemade strawberry pie filling and cinnamon sugar biscuits on top. It is a delicious treat for breakfast, or you could add ice cream and enjoy it for dessert. It's your choice.
Ingredients
For the Strawberries
- 5 cups fresh sliced strawberries
- ยพ cup granulated sugar
- 2 tablespoons cornstarch
- pinch table salt
For the Biscuits
- 1 ยฝ cups all purpose flour
- ยผ cup granulated sugar, divided
- 2 teaspoons cinnamon, divided
- 2 teaspoons baking powder
- ยฝ teaspoon table salt
- ยผ cup unsalted cold butter
- 1 cup heavy whipping cream
Instructions
- Preheat the oven to 400°. Butter the bottom and sides of an 8x8 or 9x9 baking pan. (see note below)
- Place the sliced strawberries and sugar in a saucepan and let sit for 5 minutes to let the juices come out. Stir in the cornstarch and salt.
- Bring the mixture to a boil over medium to high heat. Cook 1 minute, stirring constantly. Pour the berries into the prepared dish and set aside.
- Mix together the flour, 2 tablespoons sugar, 1 teaspoon cinnamon, baking powder, and salt in a bowl. Cut the cold butter into the dry ingredients with a fork or pastry blender until there are small crumbs.
- Stir in the heavy cream gently until soft dough forms. Drop the mixture by spoonfuls on top of the strawberry filling.
- Mix together the remaining sugar and cinnamon and sprinkle it over the top of the dough.
- Bake 25 minutes. Remove and serve hot with vanilla ice cream.
Notes
*The strawberries may bubble up the sides of the pan. Place a baking sheet on the oven rack under your dish just in case it boils over.

Are you near Lubbock? It's a little late, but the South Plains Food Bank has a farm with greenhouse where they grow strawberries. I was there in the end of April and could not tell if they had finished harvesting. They sell their produce as well as banking it. Might be worth a look as it is hard to find good berries!
