Ingredients
For the Cake
- ½ cup granulated sugar
- ½ cup brown sugar
- 1 cup applesauce
- 2 large eggs
- 1 teaspoon maple extract
- 2 cups all purpose flour
- 1 teaspoon baking soda
- ½ teaspoon table salt
- 2 teaspoons apple pie spice
- 4 cups diced apples
- 1 cup finely chopped walnuts, divided
- ½ cup raisins
- ½ cup golden raisins
For the Frosting
- ½ cup unsalted butter
- 4 ounces cream cheese, softened
- ¼ teaspoon maple extract
- ½ teaspoon table salt
- ½ cup brown sugar
- 3 ½ cups powdered sugar
- 1 teaspoon apple pie spice
- 4 tablespoons heavy whipping cream
Instructions
- Preheat the oven to 350 degrees. Spray a 9x13 pan with nonstick spray.
- Beat the sugars, applesauce, eggs, and maple extract in a mixing bowl.
- Stir together the flour, baking soda, salt, and apple pie spice. Slowly mix it into the sugar mixture.
- Stir in the apples, ¾ cup walnuts, and raisins by hand. Spread in the prepared pan and bake 45-50 minutes or until a toothpick inserted in the center comes out mostly clean. Let the cake cool completely.
- Beat the butter, cream cheese, and extract until creamy. Slowly add the powdered sugar, apple pie spice, and heavy whipping cream until mixed in. Then beat on high for 2 minutes or until light and fluffy.
- Spread on top of the cooled cake. Sprinkle with the remaining nuts. Cut into 24 squares.

I am having a heck of a time finding maple extract. Is it possible to substitute maple syrup for the extract?

I bought the maple extract at Walmart in the baking aisle with all the other extracts. Maple syrup would probably work, but you might not be able to taste it as well as an extract. I hope you enjoy the cake!
