were the most made cupcake in our house...until now!
A few weeks ago I made like a million cupcakes for an adoption party at church.
Ok, fine it was only about 120...but it felt like millions
when I was piping on the frosting.
It would have been easier if it was all one kind,
but no, it was five or six kinds.
I have forgotten how many now!!
All I remember was it was enough to put me into a sugar coma.
And if I go into sugar shock...
you are coming with me!!!

yea, of course that happened.

It was totally worth all the extra time on the treadmill.

Reese's Fluffernutter Cupcakes
Peanut butter cupcakes with a hidden peanut butter cup and topped with a marshmallow butter cream.
Ingredients
For the Peanut Butter Cupcakes
- 1 white cake mix
- ¾ cup water
- ⅓ cup oil
- 4 eggs
- ⅓ cup creamy peanut butter
- ⅓ cup greek yogurt
- 24 Reese's peanut butter cups
For the Marshmallow Butter Cream
- 1 cup butter, softened
- 1 - 7 ounce jar marshmallow cream
- 3 cups powdered sugar
- 1 teaspoon vanilla
- ⅛ teaspoon salt
- chocolate sprinkles
Instructions
- Preheat oven to 350 degrees. Place 24 liners in muffins tins. Unwrap 24 peanut butter cups and place in the bottom of the liners.
- In a mixing bowl combine water, oil, and eggs. Add the dry cake mix and beat for 1 minute on low.
- Add the peanut butter and yogurt and beat on medium for 2 more minutes.
- Fill cupcake liners with batter and bake for 18 minutes. Cool completely.
- In a mixing bowl beat the butter, marshmallow cream, vanilla, and salt until creamy.
- Slowly add the powdered sugar until completely mixed in. Frost cupcakes and top with sprinkles.

White Chocolate Goo Goo Cluster Brownies
I have been trying to eat healthy this month. Ok, ok, healthier at least.
Usually I buy the veggies, and then they sit in the fridge drawers for weeks until they mold and then I have to throw them away.
But for the last month we have actually eaten all the veggies we bought. Thank goodness for bowls of Italian Veggie Salad for dinner.
My sweet tooth has even died off to some degree...and that makes me kind of sad!
There have been a couple desserts that I have tried, and they were good, but I didn't want any more after a bite or two.
Shoot! I had 4 Reese's peanut butter eggs hidden away for a snack attack... and now I don't even want those. Who am I now???
At least it has been good for the hips and thighs! Sigh!

Banana Oreo Pancakes
These Banana Oreo Pancakes are the perfect over the top breakfast treat! Sprinkles, cookies, and bananas give this pancake recipe a fun flair.
Pancake night really means no dinner inspiration or no cooking desire was found in me for the night. Breakfast for dinner comes in handy all the time!
We all have our own little pancake eating quirks too.
Our littlest guy only likes butter. Our daughter has to have butter and sugar. The oldest likes peanut butter and chocolate syrup.
Me, I just go for the straight syrup...maybe some butter. And the hubby, well, he does syrup most of the time, then chases it down with the butter and sugar method.

White Chocolate Oreo Brownie Parfait
You look like you could use some sugar. Maybe some Oreos or a brownie or two? Of course, if the week has been extra rough, 5-6 brownies.
Even if you think you don't need this extra sugar, trust me on this.
You want some of these sitting in your fridge just waiting for you to come home to.
I don't know why, but brownies are my one of my most favorite things. The only thing slightly better than a chocolate brownie are gooey Loaded Blonde Brownies (see still a brownie:-)
For these bad boys you need to bake up the brownies in a larger pan and then cut out circles with a 2 inch cookie cutter. Each jar is going to get two circles.
What you do with the leftovers is up to you!!! I hear they are good right from the pan or crumbled up over ice cream.
But that's just what I hear;-)
Have you had a chance to try the new cream cheese indulgences? I tried out the chocolate cream cheese in this cheesecake s'mores danish.
And the leftover cream cheese just sort of disappeared...someone with a spoon took over.
I have been to Walmart like every day this week. Maybe if I kept a running list of what I needed, I could avoid this place. Because for some reason I end up buying something extra EVERY TIME.
This time the white chocolate cream cheese begged to come home with me. I was powerless to resist its sweet talking. The minute I got it home, I had to open it and try a spoonful.
Oh my...it's a good thing I had an agenda for the stuff because I could have kept on shoveling it into my mouth.
Oh yea, guess what else I bought? These chocolate cream filled cookies decided they needed a new home! I felt it was only right as a food blogger to fulfill their life long dream.
And what better place to house them, but in a jar with brownies and cream cheese.
Everything just looks so much better in cute little jars, right?
I think these White Chocolate Oreo Brownie Parfaits would be perfect for Mother's Day. Or any other day....like a Wednesday maybe?
Make up about a dozen for mom...because she totally deserves it...and another dozen for everyone else.
And if you don't have any jars or just want to make it easier, layer it all in one giant glass bowl and go to town on it.

White Chocolate Oreo Brownie Parfait
Brownies layered with white chocolate cream cheese, Cool Whip, and Oreo cookies...these are a great summer dessert!
Ingredients
- 1 brownie mix (for a 9x13 pan)
- 2 - 8 ounce containers Philadelphia White Chocolate cream cheese (softened)
- 1 - 16 ounce container Cool Whip, thawed and divided
- 5 cups Oreo cookie crumbles
- ½ cups mini Oreo cookies for topping
Instructions
- Preheat oven to 350 degrees.
- Prepare brownie mix according to the back of the package.
- Spray a 12×17 jelly roll pan with non stick spray and spread the batter out. Bake for 12-13 minutes. Let cool completely.
- Use a 2 inch round cookie cutter and cut out 24 brownie circles.
- In a large mixing bowl, beat the cream cheese until creamy.
- Fold in 3 cups Cool Whip. Divide the mixture in half and place in two bowls.
- Chop up enough cookies to make 5 cups. Divide the cookie crumbs evenly into two bowls.
- Start layering your dessert by placing one brownie round in 12 jars. Use one bowl of cream cheese mixture and divide it evenly in the jars. Using one bowl of cookie crumbs, divide that evenly on top of the cream cheese.
- Repeat the layers again with the remaining brownies, cream cheese, and cookie crumbs.
- Top with extra Cool Whip, a mini cookie, and sprinkles when serving. Keep refrigerated. Makes 12 parfaits.

Do you need a donut pick me up? I have been eating so many veggies that they are now showing up in my breakfasts and desserts!
My thinking is that I'm getting all the nutrients I need this way! Don't burst my bubble by telling me any different!
Trust me! You want your nutrition to come in the form of this baked donut! These Sweet Potato Donuts were sweet with a touch of spice!
They also were soft and dense, but had a slight crunch because of the chocolate on top.
Doggone it! Now I am wanting more of these, and they are long gone.

I used to decorate cakes for other people. Real life people. Do you know how stressful that is?
I am kind of a perfectionist (in some areas of my life). So when I would have a cake order, it would make me kind of neurotic. I would spend hours at a time making sure everything looked absolutely perfect. There were times I would scrape it off and start over if there was a line that I couldn't make right.
Then I had to make sure that I was doing it exactly how the customer wanted it.
My most fun cakes were the ones that they said "just do whatever". Actually those were fun but also VERY stressful because what if they hated what I came up with?!?!?
Reality set in and I realized that I couldn't charge enough to balance out the time I was putting into these cakes. So now I just bake when I want to and what I want to. There is waaaay less stress baking for my family.
Although, every once in a while I will take a cake order and then kick myself when I actually have to work on it. In fact, I will try to talk people into cupcakes 9 times out of 10 because they are much easier to do. Plop a swirl on top, and they are good to go.
