Neapolitan Fudge
This pretty layered fudge will always have a sweet spot in my heart.
Years ago I entered this Neapolitan Fudge into a Duncan Hines Spring Bake-Off contest! Imagine my surprise and pure delight when I got the email notifying me that my recipe had been chosen as one of the 10 winners!
We were at the movies when I opened my email. I think I just about knocked my husband over when I ran over to tell him that Duncan Hines had invited me to a fun event for the bake-off winners, their blog program, and some trip giveaway winners.
The first night of the event we had a big meet and greet with dinner and dessert. Any guesses what they served us for dessert? The chefs made all the winning bake-off recipes for us to sample.
It was so exciting to see my fudge with a fun name tag on the winner's table. This night seriously goes down in my books as one of the best days of blogging!
The next morning when we got off the bus we walked down a red carpet and found our "Sweet Star" and balloons.
The idea for this winning fudge actually started with my husband. He is great at throwing out fun baking ideas for me to create. I have to say this was one of my favorite ideas that he came up with when we were thinking of something to make for the bake-off.
As I was thinking about different fudge recipes I have made, this Twix Fudge came to mind. The cookie crust was such a great addition, so I decided to add an Oreo cookie crust to the strawberry and vanilla fudge layers.
It truly made this one of the best fudge recipes I have ever had.
What You'll Need
- Crust - Oreo cookies, butter
- Vanilla Fudge - white chocolate chips, butter, sweetened condensed milk, marshmallow cream
- Strawberry Fudge - white chocolate chips, butter, sweetened condensed milk, marshmallow cream, strawberry extract, pink gel color
Originally, this Neapolitan Fudge used the Duncan Hines frosting creations. Since those have been discontinued, we like to use strawberry extract to flavor the strawberry fudge layer. A little bit of pink food coloring adds the fun color.
How to make Neapolitan Fudge
Step One: Oreo Crust
- Mix together cookie crumbs and butter.
- Press into the bottom of a pan that has been lined with foil or parchment paper.
Step Two: Vanilla Fudge
- Place white chocolate chips, butter, and sweetened condensed milk in a pan over low heat. Stir until melted and creamy.
- Add marshmallow cream and stir again.
- Pour onto the prepared crust and spread out evenly.
- Refrigerate the fudge for 30 minutes.
Step Three: Strawberry Fudge
- Add more white chips, butter, and sweetened condensed milk to a pan over low heat. Stir until melted and creamy.
- Add marshmallow cream and strawberry extract and stir again.
- Pour on top of the vanilla fudge layer and spread out evenly.
- Refrigerate the fudge for at least 4 hours or until completely set before cutting into squares.

Ingredients
For the Chocolate Crust
- 2 cups Oreo cookie crumbs
- 6 tablespoons unsalted butter, melted
For the Vanilla Fudge
- 1 ยฝ cups white chocolate chips
- 1 tablespoon unsalted butter
- ยฝ cup + 2 tablespoons sweetened condensed milk
- ยพ cup marshmallow cream
For the Strawberry Fudge
- 1 ยฝ cups white chocolate chips
- 1 tablespoon unsalted butter
- ยฝ cup + 2 tablespoons sweetened condensed milk
- ยพ cup marshmallow cream
- 1 ยฝ teaspoons strawberry extract
- pink gel food coloring
Instructions
- Combine the cookie crumbs and melted butter. Press into the bottom of an 8x8 pan that has been lined with parchment paper. Set aside.
- In a saucepan combine the white chocolate chips, butter, and sweetened condensed milk for the vanilla layer. Stir over medium low heat until melted and creamy.
- Stir in the marshmallow cream. Pour over the crust in the prepared pan. Refrigerate 20 minutes.
- In another saucepan combine the white chocolate chips, butter, and sweetened condensed milk for the strawberry layer. Stir over medium low heat until melted and creamy.
- Stir in the extract and the marshmallow cream. Add a little bit of food coloring and stir until you get the desired color. Gently pour over the vanilla layer.
- Refrigerate 4 hours or until completely set. (It can also sit on the counter until set.) Cut into 36 small squares. Store at room temperature in a loosely covered container.

This looks incredible and Iโm excited to try. Just curious, if the strawberry extract gives it a sickly sweet strawberry nesquick flavor? I donโt enjoy that, but in the event it does, what about using fresh strawberries and cooking them down and straining them? Would that still work? Congrats on your win!

Thank you so much! This fudge has just the right amount of strawberry flavor. It's there but not overpowering at all. And it definitely does not taste like Nesquick. Real strawberries would not work in this fudge as the excess liquids from them would not let the chocolate set up right. I hope you try and enjoy this fun fudge flavor!

Could you use dried strawberries instead of fresh strawberries? I try to avoid food dye if at all possible. I used dried strawberries with a strawberry cupcake recipe and they really make an incredible flavor addition to the recipe.

This recipe does not use any fresh strawberries. The strawberry flavor comes from the strawberry flavored extract. I think using crushed freeze dried strawberries would work just fine for the color and taste. It may give it a slightly crunchy texture though...

I will add coconut to one of the fudge layers to make it like the old fashioned candy, made by Brach's, I remember as a child. They were little squares and they were my favorite. My dad got it as a little surprise for me.

I am so sorry to hear you cannot get the ingredients for this fudge. Unfortunately there is not a substitution for this. You could google it and find a recipe for homemade marshmallow cream that you could use in place of the store bought.

This fudge looks incredible! I wouldn't have thought of using frosting or marshmellow cream to make fudge. genius! I have never been that great with recipes that require layering, but I'd be willing to try to pull this off:)

While this fugde looks like it will taste amazing, I followed the recipe to the letter and it does not turn out.
The proportions of the crumb bottom and each of the fudge layers is incorrect. If you glance at the proportions of each layer, you can see that each of the fudge layers is not even 75% of the cookie volume (~4 cups cookie to less than 3 cups fudge). This makes it nearly impossible to spread each layer of fudge. Perhaps the cookie layer should be halved and done in a much smaller pan.
Also, to attain the colours in the photo, you must have used food colouring. The flavour packet alone did not produce that pretty pink.

I have actually made this a few different times and the head chef at Duncan Hines made this too without any problems. I am sorry to hear you had problems with the recipe. The measurements are all right. If you look at the picture again, you will see that the crust is smaller than both layers of fudge together. What size pan did you make yours in? And did you allow enough time for it to set up properly? And no, I did not use any food coloring at all in my recipe. The frosting packets will give a pretty pink.

I made the fudge in a 9x13. After setting all afternoon, I cut some for dessert and found the crust too crumbly as well. It tasted great, but doesn't look anything like the photos. My strawberry layer looks salmon coloured. But it was delicious!

I am really sorry it didn't work out for you. You could always use more butter in the crust. As for not setting up, honestly I always make fudge the night before and let it set up in the refrigerator overnight. It does take a little longer for it to get hard. I am glad you enjoyed the taste. Food coloring would help get a brighter pink if you like. It must have been my lighting and camera...but I do remember mine being pretty pink.

Ok, so the texture of this fudge is what I love the absolute most. You are right that it is from the marshmallow...it is seriously addicting. I haven't tried baking the crust, but I definitely think it would help it set up more and be harder like what you are looking for. Maybe 8 minutes or so?
