Summer officially started this weekend.  We are in full swing with high temperatures, thunderstorms, and lots of humidity.  Those are three good reasons why I do not want to start my oven right now.  I do love coming up with easy no bake desserts for these hot summer days though.

Every summer I make a light fruit salad using a combination of Cool Whip and lemon yogurt.  So, when Lucky Leaf contacted me about creating a recipe using one of their pie fillings, I started thinking how easy it would be to substitute the lemon pie filling for the yogurt.

I couldn’t wait to go shopping at the grocery store to look for a fun twist to my fruit salad.  I knew that I wanted to create a parfait that would still be easy to make.   As soon as I saw the cream filled cloud cakes, I knew that those would be the perfect compliment to the pie filling in the parfait.

Strawberries and blueberries were a given for the parfaits.  I cannot keep those two fruits in our house.  There are little fruit monsters that like to steal the berries when I’m not looking.  This time I made sure everyone in our house knew that the berries were off limits until I made the fun parfaits.   They were excited when I finally made the parfaits and the fruit was fair game.

After spending time in the hot sun during the day, a cold no bake parfait is a wonderful treat to end the day with.  My family finished these off in no time at all.

Lemon Mousse Fruit Parfaits

Prep Time: 20 minutes

Yield: 5 large parfaits

Lemon Mousse Fruit Parfaits

Lemon pie filling and Cool Whip makes a delicious mousse that you can layer with cake and fruit.

Ingredients

1 can Lucky Leaf lemon pie filling
2 1/2 cups Cool Whip, divided
10 cream filled sponge cakes
1 1/4 cups sliced strawberries
1 1/4 cups blueberries

Instructions

  1. Place the pie filling in a large bowl. Fold in 2 cups Cool Whip to make a lemon mousse.
  2. For each parfait, cut 2 sponge cakes and layer them in jars with strawberries, blueberries and lemon mousse. Top with extra Cool Whip and fruit if desired. Keep refrigerated. Makes 5 large parfaits.
