No Bake Nutella S’mores Granola Bars

Mini chocolate chips and marshmallows add a fun twist to these no bake granola bars.  S’mores for breakfast or after school will have everyone smiling.

 Lately I have become obsessed with making everything granola.  We have had granola bites and granola bars every single week for the past month.  I’m trying to space them out sharing them here because I’m sure you are not as obsessed as I am.

It all started with these Skinny Peanut Butter Granola Bites and has just spiraled out of control.  Let’s just say that the big container of rolled oats is down to the last few oats.  Mental note:  add that to the grocery list.

Peanut butter, cranberry, coconut, sprinkles, chocolate chip, blueberry…just a few of the things that have made their way into our granola bars/bites recently.

Today I thought I would share my “at the moment” favorite granola bar.  Nutella S’mores is my go to combo right now.  The creamy hazelnut spread, the chewy rolled oats, the chocolate and the marshmallow bits spread throughout is enough to make anyone swoon.

Definitely don’t picture me eating the entire pan of bars.  No, I would never do that.

Fine.  I’m big enough to admit that these granola bars were the cause of my demise.  I seriously could not stop munching on them.  These no bake bars happen in about 15 minutes tops!  Just think, you are only a few minutes away from indulging yourself in Nutella bars.

Have fun with the mix ins and use whatever you have in your cupboard.  Summer and spring activities have been on my mind with our recent heat wave.  Woot woot for temperatures reaching 50 degrees.  My husband keeps saying we should have a campfire to celebrate.  That must be why s’mores keep jumping into my thoughts.  My kids love the little marshmallow bits for their hot chocolate, so I always have a container of those in my cupboard.  And of course chocolate chips are a staple on our grocery list.  I have learned to buy 2 bags of the mini chips at a time because I go through them so fast.  Gotta have that chocolate!

Are you convinced that you need no bake bars today?  I’ve convinced myself that we need another batch too.  See you in 15 minutes with Nutella smears on your face.  I know you eat it by the spoonfuls too 🙂

No Bake Nutella S’mores Granola Bars

Prep Time: 15 minutes

Yield: 10 granola bars

No Bake Nutella S’mores Granola Bars

These easy no bake granola bars are perfect breakfast or any time snacks.

Ingredients

  • 1/4 cup butter
  • 1/4 cup honey
  • 1/4 cup Nutella spread
  • 2 1/2 cups rolled oats
  • 1/2 cup miniature chocolate chips
  • 1/2 cup miniature marshmallow bits

Instructions

  1. Place the butter and honey in a saucepan and heat over medium low heat until melted. Stir in the Nutella spread and stir until melted. Pour in the oats and stir until completely coated. Let cool 5 minutes.
  2. Add the mini chocolate chips and mini marshmallow bits. Stir gently until mixed. Press the mixture firmly into a greased 8x8 baking dish. Let set. Cut into 10 bars. Store in a sealed container.

    Okay these look amazing Jocelyn, I am obsessed with all things granola too but have given up on bars because my granola bars do not want to seem to hold together anymore. I like this version because there is no peanut butter and my husband does not care for it so I try to limit my use. Definitely need to try these!

    These granola bars look and sound great….I do not like Smores, but I just may make these, as my granddaughter loves them, she has a basketball game tomorrow and this would be a treat for her and her friends 🙂 and probably would be better than a candy bar eh?

        No I did not get to, but the next Fri. she spends the nite, this is something her and I can do 🙂 We try to make a new fast easy recipe every week , she doesn’t stay when she has a game, has to be there by 8:00 and she’d never make it if she stayed her LOL…..we stay up late….I
        let her stay up as late as she wants to when she stays with me 🙂 and I really think she could stay up all nite…..she loves my big high bed, so when I get ready to go to bed, I let her get in my bed until she falls almost asleep and then I tell her she has to go to her own bed room….can’t sleep with her she tosses and turns and takes up the whole bed LOL….we just lay in bed and watch the FOOD CHANNEL 🙂 she like to watch GUY cook and that’s about the only decent thing on tv for her to watch…….thanks for asking Jocelyn …..

    No bake bars are amazing! I have tried a variety of recipes way more complicated and the no bake bars always ultimately win the taste test! I know this flavor combination will receive rave reviews at my house! (From personal experience: those who can’t eat Nutella due to tree nut allergy….chocolate peanut butter can be substituted with great results! )

    I tried doing this but all my chocolate chips melted :(. My granola bars became too sweet.
    Does let it cool means leaving it there for 5 mins or putting it in the fridge ?

      Oh, no! I just let my mixture sit on the counter for 5 minutes before stirring them in. You do have to work very quickly once you stir them in, so they don’t melt!

    These are really yummy! My daughter who isn’s crazy about granola bars, loves these. I’ve even added a few TB of cocoa powder to the honey mixture to give them a deeper chocolate flavor.

    Where do you get the teeny marshmallows?

      I am so excited to hear your daughter loves these bars. And awesome idea to deepen the chocolate flavor 🙂 The marshmallow bits are usually in the same aisle as the regular marshmallows. They are in a container usually on the top shelf. Hope you are able to find them.
