Oreos and strawberries are the two things that get “stolen” in our house.

I have hiding places for the Oreo cookies, but my children have gotten wise to my ways.  It’s probably definitely time to find a new hiding place…or learn Jedi mind tricks to keep them out of the “blog” food.

And don’t get me started on the strawberries.  There are only so many places to “hide” things in a refrigerator.  My little fruit monsters sneak berries like there is no tomorrow.  Not that I mind them eating the healthy stuff!

This dessert was one of those “must make” dessert ideas.  You know the kind that can’t wait any longer!

My hubby and I were running errands and happened to stop in Walmart for a few items for his next trip to Haiti.  (You can read about our past trip HERE and HERE.)

I can’t go in Walmart without going down the cookie and baking aisle.  Seriously, I go down it every.single.time.  It’s not like I don’t know what’s there…I just HAVE to do it!  Perks of having a dessert track mind all the time!

I was really trying to find the new Reese’s Oreos, but unfortunately my store is lame.  No new Oreos for us!

The Berry Oreos are actually a favorite of mine.  I picked up a bag of them…AND then put it back on the shelf.  I know…I can’t believe that either!!!  So of course the next day when my hubby texted me and said he was at Walmart again (yes, we like to make multiple trips and use our gas frivolously) I texted back immediately and asked him to buy 2 packages.

This crazy no bake dessert was slowly taking shape in my head.  It was one of those ideas that had to be made that very minute.  Well, the minute he got home with the cookies that is.  Most of the time I have a reason or place for a dessert.  This time it was purely because I couldn’t get this dessert out of my head.

I don’t know who’s idea it was first to dunk Oreos in milk and layer them with a Cool Whip based mixture…but clearly that person was a genius!!!

For the layers in between the cookies, I made a no bake strawberry cheesecake.  Cream cheese, mashed strawberries, a little bit of sugar, and some Cool Whip all whipped together makes a pretty tasty no bake cheesecake.

The dark pink berry Oreos, light pink cheesecake, and white Cool Whip gave this dessert the prettiest neapolitan look when you cut into it.  I may have done a happy dance when I cut…ok, when I butchered this cake trying to get a good piece for the pictures.  It still tastes good even when hacked to pieces.  #lifeofafoodblogger

More fresh berries on top totally made this dessert a winner.  You could even use raspberries if you wanted.  I had a hard time not eating very much of this yummy cake.  Between the youth group girls and my son, it was gone in record time!

Berry Oreo Icebox Cake

Prep Time: 15 minutes

Yield: 12 pieces of cake

Berry Oreo Icebox Cake

Layers of berry cheesecake and berry Oreos creates a fun no bake cake that is perfect for hot summer nights.


1 - 8 ounce package cream cheese, softened
1/4 cup powdered sugar
2 cups diced strawberries, divided
4 cups Cool Whip
32 Berry Oreos (1 package + 2 extra cookies)
1/4 cup milk


  1. Beat the cream cheese and sugar until creamy. Take 1 cup diced strawberries and smash with the back of a fork. Add to the cream cheese mixture and beat again. Fold in 2 cups Cool Whip.
  2. Spoon 1/3 of the berry cheesecake in the bottom of an 8x8 pan. Dip the Oreos one at a time quickly in the milk and place in the bottom of the pan. Cover with 1/3 of the cheesecake. Repeat with the remaining Oreos. Cover with the last 1/3 of cheesecake.
  3. Cover the top of the cake with 2 cups Cool Whip. Refrigerate for a few hours to set up. Top with extra diced strawberries. Cut into 12 squares. Refrigerate remaining cake in a sealed container.

Right now we are living in a winter wonderland.  The last few days it has snowed quite a bit.  The ground is covered in fluffy white, and the trees are glistening with the snow.  It looks beautiful…but can I be honest with you?  I am a snow hater.  (Ducks as invisible snowballs are hurled)

One of my favorite things about the holiday season are all the holiday shows on TV.  I remember as a kid watching all the Christmas cartoons every single year.   We would sit and watch Frosty, Rudolph, and The Grinch every single year, even when I was a teenager.

No Bake Caramel Mud Pie Cups

Last week I didn’t bake anything at all.  I know!  I was just as shocked as you.

Over the past few weeks I have made so many pink and red treats to share with you, that I was kind of ahead of the game in baking.  All I had to do was edit and post each day.  Plus, I thought no baking means no yummy chocolate treats in the kitchen tempting me from my diet.  Because we all know that sugar talks to me…and the sad thing is that I listen to whatever it tells me to do.  “Oh hello, delicious cookie.  Why yes, I do want to eat you.  And your friend?  Of course, I’ll see what I can do.”   It’s ok. I know I’m a little off my rocker.  It’s the sugar talking again.

I knew the no baking would end in me making something. The last time I tried to do no baking, the week ended with these Chocolate Avocado Muffins.  It was only a matter of time before I made something sugary.

Now my kids have gotten used to all these cookies and treats being around.  So a week of no baking was so foreign to them.  They kept asking where the snacks were.  We kept pointing at the bananas and carrots and told them to have at it.  Apparently they don’t want veggies and fruit after a long day at school.  But we didn’t budge…well, until I had this brilliant idea to make these yummy No Bake Caramel Mud Pie cups for an after dinner treat.   I found the original idea for this pie in a Holiday Jello booklet that I was looking through.


FYI…looking through cooking magazines and books when you are trying to stay away from baking is not the best possible thing you could do.  I now have about 30 new ideas of things to make…like I needed more things on my list.

We had everything I needed for these no bake cups.  Well, I didn’t have nuts and that’s what the original called for.  Honestly I am not a huge nut fan for a crust or in anything for that matter.  Don’t quote me on that though, because every once in a while I will add nuts to some things.  Just doesn’t happen often.

Anyway, I started looking in our cupboards and I found a bag of holiday pretzels.  Yes, people we still had jingle bell pretzels in our cupboard.  The bag was unopened, so I thought this was the perfect way to get rid of them.

And since I am slightly addicted to salted caramel, I decided to add caramel topping to the no bake cheesecake layer.  Best.idea.ever.  Well, not for the diet eating plan but that was just silly any way!

If you are not wanting to make a bunch of little pudding cups, feel free to double the recipe and put everything in an 8 inch pie plate.   Your sweetie will love you when you make this for a Valentine’s Day treat.

No Bake Caramel Mud Pie Cups

Prep Time: 20 minutes

Yield: 8 servings

No Bake Caramel Mud Pie Cups

Easy No Bake Caramel Mud Pie cups with a Pretzel Crust


3/4 cup crushed pretzels
4 Tablespoons butter, melted
1/2 Tablespoon sugar
1 package cream cheese (8 oz.)
3/4 cup powdered sugar
1/4 cup caramel ice cream topping
3/4 cup Cool Whip
1 box chocolate pudding (3.4 oz.)
1 1/3 cups milk


  1. Stir together the pretzels, butter, and sugar. Spoon into 8 small jars. Set aside.
  2. In a mixing bowl, combine the cream cheese and sugar. Beat until creamy. Add the caramel and beat again. Fold in the Cool Whip. Spoon into the 8 jars.
  3. In a mixing bowl, combine the pudding mix and milk. Whisk for 2 minutes. Spoon evenly on top of the cream cheese layer. Refrigerate.
  4. Top with more Cool Whip and sprinkles (if desired) before serving.


Feel free to double the ingredients and make it in an 8 inch pie plate.

The holidays are ahead of us.  That means one thing…I want to eat cookies, fudge, popcorn and cheesecake every single day until Christmas.  Who’s with me?  :-)

It would seem that I have a huge sugar problem.

My jeans are starting to realize this addiction and are starting to protest a little bit.

I’m pretty sure sweets for dinner isn’t the best idea…especially when it happens on a regular basis.  Given the choice of soup or some sweet yummy dessert, I will choose the dessert every.single.time.  Don’t judge my sweet loving problem.  I can’t be the only one with this affliction.  Please tell me you have been there, done that too :-)

This fudge was one of those ones that was too good for it’s own good.  I have to sadly admit that I ate my fair share of this one.  I decided it was better if I got rid of this as fast as I could.  It went with us to Thanksgiving, but even there I couldn’t help myself from snagging a piece every time I walked by the dessert table.

This fudge is so perfectly soft.  It isn’t your traditional hard and heavy fudge.  It is actually very soft and light.  Sugar laden, yes, but what fudge isn’t?  The pecans on top help add just a little bit of saltiness to tame the sugar down a bit.

The idea for this fudge came from a little booth we visited at a craft fair earlier this fall.  I have a confession…I don’t usually buy fudge at places like these. Most times I go in these shops for the free samples and for the fun new ideas.  Last year I found this cappuccino fudge at a fair, and I had to come home and make it in my kitchen.  I may or may not have snapped some pictures of the fudge booth while I was in there scoping out some new ideas.

Just means I have a few more fudge ideas up my sleeves for you in the coming weeks and months :-)  It is becoming one of my favorite things to make!!!  I blame thank Aimee for making me love fudge with pudding in it!

Easy Turtle Cheesecake Fudge

Prep Time: 15 minutes

Cook Time: 5 minutes

Yield: about 49 pieces

Easy Turtle Cheesecake Fudge

Easy fudge recipe made from white chocolate chips and instant cheesecake pudding mix.


3 c. white chocolate chips
1 1/2 Tbsp. butter
pinch of salt
1 cup sweetened condensed milk
1 1/2 c. marshmallow cream (fluff)
1 box (3.4 oz) instant cheesecake pudding mix
1/4 c. caramel baking bits
4 tsp. water
1/4 c. chopped pecans


  1. Combine the chocolate chips, butter, salt, and condensed milk in a saucepan. Heat over medium-low heat until melted and smooth. Stir in the pudding mix and stir until combined. Stir for another minute while the pudding mix dissolves into the mixture. Add in the marshmallow fluff and stir until melted and smooth.
  2. Pour fudge mixture into a wax paper lined 8x8 pan. Refrigerate until set. Remove from refrigerator and cut into small squares.
  3. Combine the caramel and water in a small saucepan. Heat until melted. Cool slightly and drizzle over fudge squares. Sprinkle with pecan chips before the caramel hardens.
