Spring is here!  Can I get a woot woot from the crowd?

Time to open the windows, air out the house, clean those corners, and wipe down the fridge.  There is something so exciting and fun about spring and the newness it brings.  The other day the birds were chirping like crazy outside my window.  It put a smile on my face to hear how happy they sounded.  I am now waiting excitedly for tree buds, green grass, and flowers to start popping up.    Although with the winter we have had, I am sure more snow will head our way before long. Right now we are living in a winter wonderland.  The last few days it has snowed quite a bit.  The ground is covered in fluffy white, and the trees are glistening with the snow.  It looks beautiful…but can I be honest with you?  I am a snow hater.  (Ducks as invisible snowballs are hurled)

Oh, I kind of like it at this time of year.  Who doesn’t want to wake up on Christmas morning to a white winter wonderland.  But then it can melt ;-)  But alas, I am in for a long few months of cold and ice and cold and snowy days…and did I mention cold?

The older I get the less I can handle being cold.  Although at least being cold, you can put layers and layers of clothes on and sit in front of a space heater.  I’ve got one blasting at my feet right now.  When you are hot, there is only so much you can take off.  So, I guess that is one bright spot to being cold.  Bring on the layers.   [Read more...]

One of my favorite things about the holiday season are all the holiday shows on TV.  I remember as a kid watching all the Christmas cartoons every single year.   We would sit and watch Frosty, Rudolph, and The Grinch every single year, even when I was a teenager.

When our kids were younger, we would do the same thing with them.  As they have gotten older, they kind of look at us funny when we turn these cartoons on.  Where has the magic of childhood gone?  I think it died out when hand held devices became the rage.   Time to institute the no gaming devices again, and plan a fun family movie night.  Cake included!   [Read more...]

As we head into one of the busiest seasons of the year, I wanted to just remind us to stop and be thankful for all the things that God has allowed in our lives.  Sometimes it is easy to focus on all the negative and bad that we see happening and not to see all the good that we actually have.

I want to remember to be content with the things that are in my life.  I want to be thankful for the good and the bad.  Does that mean I am joyful and a delight to be around all the time?  No way.  I have my bad moments/days/weeks too.  I have to make it a point daily to be happy in the things God has placed me through.   [Read more...]

Do you like cheesecake?  What about pecan pie?

Do I ever have the pie for you then!!!

The other day I asked a question on Facebook about whether you would eat apple or pumpkin pie first on Thanksgiving.  The response seemed to be split between the two pies, but it turns out a whole lot of people actually prefer pecan pie instead.  The amount of pecan pie lovers was news to me.  I have to admit that is one of my favorites too, but I have actually never made one before.  Time for that to change. I realized that the holidays are still a little ways off, but I have been busy thinking of new holiday treats to try out for this year.

With my entire being completely enamored with peppermint right now, I have been including it into everything I bake.  Cookies, truffles, and now cheesecake.  Nothing is safe in my kitchen from this peppermint craze.  I sure hope you are all stocked up on peppermint chips and baking ingredients.  My list might end up being pretty long.  Maybe I should just get those fat pants out now… [Read more...]

No Bake Caramel Mud Pie Cups

These Caramel Mud Pie Cups are the perfect no bake treat for when you only have a few minutes to make a chocolate dessert or a Valentine’s Day treat.

Caramel Mud Pie Cups - pretzel crust, caramel cheesecake, and chocolate pudding in a fun jar treat www.insidebrucrewlife.com

Last week I didn’t bake anything at all.  I know!  I was just as shocked as you.

Over the past few weeks I have made so many pink and red treats to share with you, that I was kind of ahead of the game in baking.  All I had to do was edit and post each day.  Plus, I thought no baking means no yummy chocolate treats in the kitchen tempting me from my diet.  Because we all know that sugar talks to me…and the sad thing is that I listen to whatever it tells me to do.  ”Oh hello, delicious cookie.  Why yes, I do want to eat you.  And your friend?  Of course, I’ll see what I can do.”   It’s ok. I know I’m a little off my rocker.  It’s the sugar talking again.

I knew the no baking would end in me making something. The last time I tried to do no baking, the week ended with these Chocolate Avocado Muffins.  It was only a matter of time before I made something sugary.

Caramel Mud Pie Cups - pretzel crust, caramel cheesecake, and chocolate pudding in a fun jar treat www.insidebrucrewlife.com

Now my kids have gotten used to all these cookies and treats being around.  So a week of no baking was so foreign to them.  They kept asking where the snacks were.  We kept pointing at the bananas and carrots and told them to have at it.  Apparently they don’t want veggies and fruit after a long day at school.  But we didn’t budge…well, until I had this brilliant idea to make these yummy No Bake Caramel Mud Pie cups for an after dinner treat.   I found the original idea for this pie in a Holiday Jello booklet that I was looking through.

Caramel_Mud_Pie_Cups_sprinkles

FYI…looking through cooking magazines and books when you are trying to stay away from baking is not the best possible thing you could do.  I now have about 30 new ideas of things to make…like I needed more things on my list.

Caramel Mud Pie Cups - pretzel crust, caramel cheesecake, and chocolate pudding in a fun jar treat www.insidebrucrewlife.com

We had everything I needed for these no bake cups.  Well, I didn’t have nuts and that’s what the original called for.  Honestly I am not a huge nut fan for a crust or in anything for that matter.  Don’t quote me on that though, because every once in a while I will add nuts to some things.  Just doesn’t happen often.

Anyway, I started looking in our cupboards and I found a bag of holiday pretzels.  Yes, people we still had jingle bell pretzels in our cupboard.  The bag was unopened, so I thought this was the perfect way to get rid of them.

And since I am slightly addicted to salted caramel, I decided to add caramel topping to the no bake cheesecake layer.  Best.idea.ever.  Well, not for the diet eating plan but that was just silly any way!

The holidays are ahead of us.  That means one thing…I want to eat cookies, fudge, popcorn and cheesecake every single day until Christmas.  Who’s with me?  :-)

It would seem that I have a huge sugar problem.

My jeans are starting to realize this addiction and are starting to protest a little bit.  I’m pretty sure sweets for dinner isn’t the best idea…especially when it happens on a regular basis.  Given the choice of soup or some sweet yummy dessert, I will choose the dessert every.single.time.  Don’t judge my sweet loving problem.  I can’t be the only one with this affliction.  Please tell me you have been there, done that too:-)  [Read more...]

Carrot Cheesecake Muffins – SRC

Today is the Secret Recipe Club reveal day for Group D.
I was assigned  Karen’s blog Lavender and Lovage.
Although we come from completely different backgrounds and cultures,
I felt better connected to her when I read her about me page and learned she has been
interested in food since she was a little girl.
My kids love to see all the pictures I have of me when I was little and baking.
It was fun to read her post’s, and I could feel her food excitement through her words.

Caramel Pretzel Cheesecake Brownies

Caramel Pretzel Cheesecake Brownies from www.insidebrucrewlife.com - these brownies are an amazing dessert that you have to try
The summer Olympics are just around the corner…
There is something so fun in waiting every 4 years for the summer Olympics to come back around.
My favorite sport to watch has always been the gymnastics.
When I was younger I always dreamed of being a world famous gymnast…
it didn’t help that I watched Nadia over and over and over.
Has anyone seen that movie recently?
I would love to watch it with my daughter after the Olympics are over,
but I can’t seem to locate it.
Caramel Pretzel Cheesecake Brownies from www.insidebrucrewlife.com - these brownies are an amazing dessert that you have to try
It’s a good thing I decided to pursue my baking dream instead.
That one has worked out much better :-)
Especially since I never even took gymnastics.
So, since I need to get prepared for hours of Olympic watching,
I made some brownies.
Oh, but not just any brownies.
These got a little bit more fun added to them.
Fun…like being sandwiched between a salty pretzel crust
and a caramel cheesecake.
That’s the kind of fun stuff that happens in my kitchen.
Just one bite of this and you might be doing flips down the hall…
even if you have never done them before.
Want to know my favorite part?
The salty pretzel bottom.
And the best part is that it stayed crunchy and salty even after a few days in the fridge.
Gotta love it when that happens.
What are you still doing here?
You have some baking to do before the Olympics officially start :-)
(don’t let the recipe length scare you…these really are super easy to do)

1/2 cup butter, melted
1/4 cup sugar
For the Cheesecake Brownies
1 box brownie mix (9x13 size)
2 packages cream cheese, softened
1/2 cup sugar
2 eggs
2 Tablespoons sour cream
1 teaspoon vanilla extract
1/4 cup caramel ice cream topping
For the Topping
1/2 cup caramel candies (about 12 squares)
2 Tablespoons heavy whipping cream
1/4 cup chocolate chips
1 teaspoon shortening
For the Pretzel rings
2 cups pretzel rings
12 ounces vanilla Candiquik coating
blue, black, red, yellow, and green gel food coloring
5 teaspoons shortening

Instructions

  1. Stir together the crushed pretzels, sugar, and melted butter. Press into the bottom of a 9×13 pan that has been sprayed with non stick spray. Bake at 350 degrees for 8 minutes. Remove from the oven and let cool.
  2. Prepare the brownie mix according to the directions on the back of the box. Spoon 2/3 of the brownie batter on top of the cooled pretzel crust. Set aside.
  3. In a mixing bowl, beat the cream cheese and sugar until creamy. Add the eggs, sour cream, vanilla, and caramel ice cream topping and beat again. Gently spoon the cheesecake on to the brownie batter in the pan. Drop the rest of the brownie batter by spoonfuls onto the cheesecake. Swirl very carefully with a knife. Bake at 350 degrees for 45 minutes. Remove from the oven and let cool completely. Refrigerate until firm. Cut into squares or circles.
  4. In a saucepan over medium heat, stir together the caramel squares and the heavy whipping cream until melted. Drizzle over the cheesecake bars and let set.
  5. In a microwave safe bowl, heat the chocolate chips and shortening for 30 seconds. Stir and continue to heat 20 seconds at a time, stirring in between each time. Drizzle over the caramel. Let set. Store in the refrigerator in a sealed container.
  6. Melt the vanilla Candiquik coating according to the package directions. Divide it into 5 bowls and stir a little bit of gel color into each bowl until you reach your desired color. Stir in 1 teaspoon shortening per bowl and heat in the microwave for about 15-20 seconds. Stir. With a fork dip the pretzel rings in the colored coating. Let set on wax paper.
  7. Serve the cheesecake squares with Cool Whip and a pretzel ring if desired.

Notes

Top with Cool Whip and candy coated pretzel rings right before serving. The color from the rings will off on the Cool Whip when they are refrigerated.
