M&M Nutella Popcorn

This Nutella Popcorn is the perfect movie night snack.  You won’t be able to resist eating this sweet and salty treat.

 Last week my husband asked me to make a sweet popcorn munch for one of his church meetings.  He knows I love making popcorn munches.

I’m sure you have noticed how obsessed with fun popcorn I have become.  Have you seen this Reese’s Popcorn,  this Coffee Toffee Popcorn, and this S’mores Popcorn.  Yeah, I love creating (and eating) fun new popcorn.

I decided to cover this popcorn with a healthy coating of white chocolate and Nutella and some salt.  I couldn’t stop eating handfuls of this while it was in our kitchen.  Something kept drawing me back to the bowl for more and more.  And for research purposes, I just kept munching.  This Nutella Popcorn is magical I tell you!

I love a good sweet and salty treat, and this popcorn has both covered.  The salt helps balance out the super sweet coating and M&M candies.   I love how the candy gave it a fun and bright pop of color.  This would be the perfect snack for watching the Oscars this weekend.  You might want to make a double batch if you have anyone else watching with you :-)   I know we will be munching the night away.

This popcorn would also make a great St. Patrick’s day treat.

Yes, I know Valentine’s just ended, but I was over the pink and red, so of course I thought of the next holiday.  The best thing with this popcorn is that you can tint that extra drizzle of chocolate any color for any holiday.  The M&M’s can be changed out for the different holidays too.  I just happen to love those plain mini M&M’s…and it’s what I had in the cupboard that day.

If you are giving this away for St. Patty’s Day, place it in clear plastic bags or jars and tie with a ribbon or some green twine.  Thank you Pick Your Plum for keeping me supplied with fun twine colors.

M&M Nutella Popcorn

Prep Time: 15 minutes

Yield: 8 cups

M&M Nutella Popcorn

Nutella popcorn gets a fun sweet and salty twist from salt and M&M's.

Ingredients

8 cups popped popcorn
13 oz. white CandiQuik, divided
1/2 cup Nutella
1/2 teaspoon salt
1/2 cup miniature M&M candies, divided
green gel food coloring (I use Wilton)

Instructions

  1. Line a large baking sheet with parchment paper and set aside. Place the popcorn in a large bowl. Follow the package directions to melt 12 oz. CandiQuik in the microwave. When melted and smooth, stir in the Nutella. Stir until melted and smooth again. Pour over the popcorn and toss until completely coated. Place popcorn on lined baking sheet. Sprinkle with salt and 1/4 cup M&M's and toss again. Let set in refrigerator for 5 minutes.
  2. Place the remaining 1 oz. CandiQuik in a small bowl and melt. Using a toothpick, add a drop of gel food color to the melted chocolate. Stir. Repeat if you want a darker color. Place in a plastic bag and cut the tip off. Drizzle over set popcorn and sprinkle with the other 1/4 cup M&M's. Let set. Store in a sealed container for 3-5 days. Makes 8 cups.

Peanut Butter Blasted Oreo Popcorn Munch

Happy Halloween!  The one day a year we let our kids take candy from strangers…in fact, we even let them knock on the strangers doors begging for the candy.  Does anyone else find the irony in this holiday?  That being said…my kids are going out with us right behind them, watching every move everyone makes.  This year we attempted to create their costumes using only what we had on hand.  For some reason they are obsessed with the show “My Babysitter is a Vampire”, so vampires all around.  I’m just glad my son gave up the werewolf costume…I couldn’t find anything here in the house to recreate that.  Vampires are so much easier to come up with.

Monster Mix Popcorn Munch

One of my favorite things to make is chocolate covered popcorn.
It is such a blank canvas for so many different variations!

Every fall I buy the three seasonal cereals Count Chocula, Boo Berry, and Franken Berry.
And every fall they sit there, because for some reason ours kids will only eat one bowl.
It’s marshmallow cereal…why don’t they eat more of it?
I remember as a kid eating this cereal and loving it.

Coffee Toffee Popcorn Munch

It was a sad day on Sunday…
our Keurig coffee maker decided to die.
We have no idea what happened…
my husband made his coffee and everything was fine.
But when I came out an hour later,
nothing was working.
We tried unplugging it for a few minutes…nothing.
We tried unplugging it for over an hour…nothing.
We tried cleaning it out…nothing.
We tried jiggling the plug…nothing.
We tried calling Keurig…nothing…because it has been more than a year:-(
My hubby tried smacking the side of it…there was a flicker and then…nothing.
We think it is dead for good:-(
It is a good thing that I drink decaf, because I am not having huge withdrawal problems.
Although the first night I was starting to feel some crankiness set in towards evening.
(I guess even a small cup of decaf has enough caffeine to keep you a little addicted.)
 
Thank goodness for an awesome hubby who made a Starbucks run for us.
Maybe if I still had some of this yummy coffee popcorn,
I could have munched on that for a caffeine fix.
Chocolate covered coffee beans are a coffee lover’s dream…
especially ones mixed into white chocolate, popcorn, toffee, and marshmallows.
Bring on the caffeinated sugar high!!!  I am all about that!
I totally recommend making large batches of this…
the coffee buzz will get you through just about anything!!

Coffee Toffee Popcorn Munch

Ingredients
  • 8 c. popped popcorn
  • 2 c. miniature marshmallows
  • 3/4 c. toffee baking bits
  • 2 c. chocolate covered coffee beans
  • 1 1/2 c. white chocolate chips, divided
  • 2 Tbsp. sweetened condensed milk
  • 1 Tbsp. instant coffee
  • 2 tsp. shortening, divided
Instructions
Place 1 1/4 c. white chocolate chips in a microwave safe bowl with 1 tsp. shortening. Heat for 30 seconds and stir. Repeat until melted. In a large bowl, combine the popcorn, marshmallows, and coffee beans. Toss with the melted white chocolate. Spread out on a large cookie sheet covered with wax paper. Sprinkle with the toffee chips and toss lightly again. Place in the refrigerator for 5 minutes to set up. Remove and break into chunks.
In a small microwave safe bowl, combine the 1/4 c. white chips and 1 tsp. shortening. Heat for 30 seconds and stir until creamy. Set aside. In another small glass bowl, heat the condensed milk for 15-20 seconds. Stir in the instant coffee until dissolved. Stir into the melted white chocolate. Spoon into a small ziplock bag and cut a small hole in one corner. Drizzle the coffee chocolate over the popcorn. Let set for another 5 minutes before eating.  Store in an airtight container.

Fluffernutter Popcorn Balls

It’s the last Monday of the month…
do you know what that means???
It means it’s the Secret Recipe Club reveal day for my group!!!  Go group D!!!

Today I can finally tell you what blog I have been stalking reading through this past month.
The fun twist to this club is that you have to keep your lips zipped on who you have.
This month I was assigned Kimberly’s blog Rhubarb and Honey.
As soon as I saw she was addicted to shoes and magazines, I knew this would be a happy place:-)
Plus we are celery hating twins!!!  Fast friends in no time I tell ya!!!

Can I tell you how much fun she is to read through…the crafts, the photography,
and the recipes!!!!  It was tough to pick just one thing to make for this.
I mean look at this Peanut Butter & Jelly Banana Bread!
Or this Sweet Potato and Chorizo Lasana!!!  Yum!!!

But I procrastinated, yet again, and so as I was looking through Kimberly’s recipes…
I came across these fun Popcorn Baseballs.

If you have been reading my blog for very long…you know I am addicted to fun popcorn!
It was fate…I mean just Friday I shared Monster Cookie Dough Popcorn Munch!!!
Any chance I get to jazz up plain popcorn, I’m going to take it!!!!
THIS. WAS. THE. RECIPE. for me this month!!!

Simple, FUN, and easy to use whatever is in your baking cupboard.

We got back from camping on Saturday, so I knew time wasn’t on my side.
Can we say procrastinator…big time!!!!

Whatever was in the cupboard was going to have to do.
I dug through and found a few bags of Reeses peanut butter chips and mini M&M’s.
(yes, I always have a few bags or each kind just waiting around for inspiration or in this case disaster:-)

Peanut butter and marshmallow is definitely a favorite combo around these parts,
so I knew that I would have a winner for sure.
Now my first thought was to eliminate some marshmallow from the recipe and
make them into bars…BAD IDEA!!!

The first batch fell apart when I started cutting into them.
Bad for the post, but oh so yummy for our tummies!
The kids had no problem polishing off my little recipe “fail”!!!

So now it is Sunday and the post is due in ONE day….aaaaaahhhh!
Good thing I still had enough baking supplies to make it again…not time for a grocery store run.
This time I  was USING the marshmallows.
I figured that would make it hold together for a bar for sure!!!

Wouldn’t you know the minute I cut into them…
yup, you guessed it, they kind of crumbled.
Not as bad as the first batch…
but still not very picture worthy!!!
WHAT was I going to do???

You can imagine the panic that was starting to creep into my body.
So I grabbed a bunch and started to compress it into a popcorn ball…
this was going to work if I had anything to say about it!

And you know what…turns out I should have just followed Kimberly’s recipe
in the first place:-) They were super easy to make into popcorn balls.
But not as hard and crunchy as the ones I used to get in my Christmas stocking every year…
you know the ones right?  The ones that sat around until Easter when you finally threw them out!
I have no idea why my parents bought them every year? :-)

Not these popcorn balls…they are soft and easy to pull apart!

Now because I can’t leave well enough alone,
I started digging in my cupboard again.
I knew somewhere up there I had thrown a bag of wooden popsicle sticks.

In my head these popcorn balls would be so fun with a stick, a cupcake liner, and a washi flag!!!
EEEEEIIIKKK!!!  Love it so much when something goes from my head into real life!
I knew I bought that washi tape for a good reason:-)

These turned out absolutely adorable…and super duper delicious too!!!
So good, that I have the rest wrapped up to send out the door ASAP!
I can’t be around such cuteness without devouring one each time I go into the kitchen!!!

Fluffernutter Popcorn Balls

Prep Time: 20 minutes
Cook Time: 5 minutes

Ingredients
  • 8 c. popped popcorn
  • 6 c. miniature marshmallows
  • 2 Tbsp. butter
  • 1 c. peanut butter chips
  • 1 Tbsp. shortening
  • 2 tsp. sea salt
  • 1 c. miniature M&M’s
Instructions
In a large saucepan, combine the butter and 4 c. of marshmallows. Heat over low/medium heat until melted and creamy. Set aside for a minute. In a microwave safe bowl, combine the peanut butter chips and the shortening. Heat for 30 seconds and stir. Repeat.
Place the popcorn in a large bowl. Pour the melted marshmallow over the popcorn and stir. Add the melted peanut butter chips and stir again. Toss in the m&m’s, salt, and the extra 2 c. of marshmallows and stir really well. Let cool. Squeeze handfuls into large balls and set on a baking tray. Garnish with popsicle sticks, washi tape, and cupcake liners. Keep covered. Makes about 12 large popcorn balls.
Note: I pressed my popcorn into a 9×13 pan while it was warm. After it was chilled, I cut it into squares and then made each square into a ball.

S’mores Popcorn Munch

We have a YMCA membership that I reluctantly use.
I say reluctantly, kind of…
with all the sweets that keep pouring out of my kitchen
I need the gym more than ever now.
I work out…I eat cookies for lunch.
I work out…I eat donuts for snack.
See how vicious the cycle is?  I’m thinking that isn’t the best plan.
Unfortunately the working out is only keeping me at the same weight…
believe me, there is no weight loss going on over here:-)

I have a confession to make…
when I go to the gym, I kind of sort of people watch, while I run on the treadmill.
I can’t help it.
Want to know some of the stuff that goes on at my gym?
*There are your die hard work out girls…sweatbands and no smiles.  All work.  These are the serious ones…they are probably putting a good dent in their new year’s resolution.  I’m going to say it is safe to say they don’t blog about desserts and just maintaining their weight.  They look a little too “muscle-y”!
*One lady comes to the gym with a cute flower headband on…yea, I don’t see her working very hard.  The flower in her hair makes me giggle every single time I see her though.
*Next there are a few ladies who come in cute matching gym outfits…and make up.  They are very color coordinated.  I really don’t think they plan on sweating much either.  Don’t get me wrong…I am all for cute gym clothes, but that much coordination shouldn’t happen if you are really just planning on sweating.
*One day I saw a man walking down the hall in bare feet…eeeewwww on so many levels.  It was seriously disgusting!!!  You will never see me walking without shoes in a fitness place…or in any public place!
*How about the mom who was texting her son?  Turns out he wanted to know if I was married or single…not sure which is funnier…sort of being asked out by a teenager at the gym through his mom or being asked out by some old dude who still goes to the gym with his mom.  I’m really kind of glad I never saw him…could have creeped me out more!  *shiver*
*Then we have the high school/college couple that makes out in the fitness room.  Really?  Are the weight machines really the place for this?  I think not.  Step away from the machines, so I can attempt to lift something other than cookies and cakes.

The only thing that would make this people watching show better…
having a big ole bag of this yummy popcorn on the front of my treadmill.
The problem with that…then I become the one people look and laugh at and probably blog about:-)

I better keep the popcorn home where I can fully enjoy
all the chocolate covered goodness!
Running becomes so much better when you know you can go home and
eat marshmallows, chocolate bars, and golden grahams:-)
Plus, then I am not distracted by all the gym people!

S’mores Popcorn Munch

Ingredients
  • 8 c. popped popcorn
  • 2 c. miniature marshmallows
  • 1 1/2 c. chocolate candy bar chunks (about 16 snack sized)
  • 2 c. Golden Grahams cereal
  • 12 oz. white almond bark (I use Candiquik)
  • 1 tsp. shortening
  • blue gel food coloring
  • 1/4 c. colored sprinkles
Instructions
In a large bowl, combine the popcorn, marshmallows, candy bar chunks, and cereal. In a microwave safe bowl, place the white almond bark and shortening. Heat and stir every 30 seconds until melted. Remove 1/4 c. melted almond bark and set aside. Pour 1 1/4 c. melted bark over the popcorn. Toss until everthing is coated. Pour out onto a wax paper lined baking sheet. Refrigerate about 5 minutes. Break into chunks.
In a bowl, combine the leftover 1/4 c. melted almond bark and tint with the blue food coloring, until it is the color you want. Place the blue chocolate into a plastic baggie and cut off the tip. Drizzle over the popcorn and sprinkle with colored sprinkles. Store in a sealed container.

Fudge Mint Popcorn

It’s time to eat your greens.  And by greens, I mean girl scout cookies in this Fudge Mint Popcorn.  It is the best way to eat those greens.

You didn’t think I meant the  spinach, kale,
broccoli or cucumbers that are all rotting away in my fridge crisper.
Veggies! Who needs them anyway?
Oh yea, my sugar laden body that is supposed to be eating them
so it will be ready for our cruise and beach vacation!
Maybe a padlock on my baking cupboard would help?
Oh, and maybe if I stopped hiding food for research purposes.
Or better yet, if I was just good and didn’t buy it.
Like that’s going to happen:-)

and really it is THAT much!
Seriously though…back to eating some green this weekend.
It is kind of a holiday so I’m thinking about celebrating
by popping green m&m’s and bowls of Fudge Mint Popcorn
while chilling on the couch with my little family!
Wait, did I say green coated popcorn?
Now there is a great idea…
I should have coated the entire thing
with the green chocolate instead of just drizzling.
Hhhhmmmm maybe next time.
My brain doesn’t think that fast when sugar is near.
Basically I have to keep lots of scraps of paper and notebooks
around for when an idea pops into my head.
There is no rhyme or reason to when this might happen.
Commercials, at the gym, junk food, cereal boxes, sadly even sitting in church.
All of a sudden it just pops in…
and could pop back out if I don’t write it down.
This popcorn jumble happens to be one of those moments.
Sadly I don’t remember where I was or what I was doing
when I thought, “Hey, fudge mint popcorn would be awesome
if it had m&m’s, marshmallows, cookies, AND sprinkles in it!”

Now I know that cookie inspired popcorn is not a new thing…
in fact there are quite a few versions on pinterest.
So in no way am I trying to claim something that is already around.
This popcorn does have a little secret though…
come a little closer and I will whisper it in your ear.
(I used walmart cookies because I refuse to pay $4-5 for a tiny little box of those “other” cookies)
 
 
No siree, I am good with generic brand cookies.
Especially when I am throwing all sorts of other goodies in with it,
and because I think they taste just as good.
 
If I had gotten the good ones, I wouldn’t have had enough money
for the extra ingredients…
and really the extra stuff in it really sets it apart!
Gives it the WOW factor!!

Fudge Mint Popcorn

Prep Time: 20 minutes

Yield: 10 cups

Fudge Mint Popcorn

Chocolate covered popcorn loaded with thin mint cookies, mint candies, and more chocolate.

Ingredients

8 c. popped popcorn
1 c. miniature marshmallows
3/4 c. chocolate candies, divided
1 1/2 c. fudge mint cookies, chopped & divided
1 1/2 c. white chocolate chips
1 tsp. shortening
1/4 c. green candy melts
3 Tbsp. sprinkles

Instructions

  1. Combine popcorn, marshmallows, 1/2 c. chocolate candies, and 1 c. fudge mint cookies pieces in a large bowl. Crush the extra 1/2 c. cookies into crumbs and set aside with the extra chocolate candies.
  2. In a microwave safe bowl, combine the white chips and shortening. Heat slowly, stirring every 30 seconds until melted. Pour over popcorn mixture and toss until everything is coated. Spread out on a wax paper lined cookie tray. Sprinkle with the crushed cookies and the extra 1/4 c. chocolate candies. Let set.
  3. Heat the green candy melts in a microwave safe bowl. Spoon into a plastic bag and cut the tip off one corner. Drizzle over the popcorn and top with sprinkles. Let set before eating.

Almond Joy Popcorn Munch

Coconut popcorn
So the other day I was driving to pick my kids
up from school when I realized my hands
really could use some lotion.

I have been driving for so many years…no problem.
I knew that I could handle getting in my bag,
grabbing the lotion, and staying in my lane.

Like I said, no problem at all.
The problem comes as I keep my eyes
on the road and squeeze the lotion on my hands.

I drop the tube in my lap and start
to rub the the lotion on my hands.
Immediately I realize that I squeezed
way too much out…and my hands were WHITE.
I didn’t even want to touch the steering wheel.
It was bad…really bad.

My mind is racing with my options…
do I should just wipe it on my jeans or
just wipe it on the van seat?

Both sounded bad…
I don’t want lotion spots in my jeans forever, and…
I don’t want my husband to “kill” me for wiping it on the seat.

Then I remembered…I shaved this morning.
So, very carefully…remember I am still driving…
I pull up a pant leg and rub some lotion in.
Then I repeated on the other side.
All better:-)

What?
It seemed like a good idea at the time.
It’s just a good thing there wasn’t that much
traffic on that road.

Hey, I stayed in my lane the entire time.
I just was very preoccupied.
You know what else seemed like a good idea at the time?
Almond Joy Popcorn!!!!
And truly it was a great idea!!!
I mean, 2 kinds of chocolate, 2 kinds of Almond Joy,
toasted coconut and almonds. Be still my heart!!!!

The only problem…is trying to stop once you start:-)

Almond Joy Popcorn Munch

Prep Time: 20 minutes

Cook Time: 10 minutes

Yield: 10 cups of popcorn

Almond Joy Popcorn Munch

White chocolate covered popcorn with coconut, almonds, and Almond Joy bars and pieces...for the serious coconut lover.

Ingredients

1 c. shredded coconut
7 c. popped popcorn (I used extra butter flavor)
1 1/2 c. chopped Almond Joy bars
1/2 c. slivered almonds
1 c. Almond Joy pieces
1 c. white chocolate, melted
1/4 c. dark chocolate chips, melted

Instructions

  1. Spread coconut on a baking sheet and place in 400* oven for 10 minutes. Stir occasionally so the coconut does not burn. Cool on pan.
  2. In a large bowl combine the popcorn, Almond Joy bars and almonds. Pour the melted white chocolate over the popcorn and toss to coat. Spread on a large baking sheet that has been lined with wax paper. Sprinkle with the Almond Joy pieces. Place in the refrigerator to set up quickly.
  3. Break the popcorn into large chunks. Drizzle with the melted dark chocolate and let set again. Store in a tightly sealed container.

Reeses Popcorn Munch

There is a debate that goes on in our household
every year about this time.
It is the question of,
what color lights go on our tree?
Unfortunately I am the only one who wants white lights,
so that makes me the bad guy.
This year my husband wanted to put the white lights on…
and then put the colored lights on too.
Now in my head this sounded like a bad idea,
but no way was I going to admit that.

Target is almost always the first place
to start for some shopping magic.I’ve said it before…
and I still stand by it…
I think there is magic time dust in the air there.
Because it is like time stands still for me…
of course then I leave and realize that 4 hours have passed,
and I don’t have time to go to any other stores:-)

I was wandering in the Easter candy aisle
and I came upon what I thought would be a yummy little treat.
Have you seen the Peepsters???
They say dark chocolate covered marshmallow creme…
apparently I was in lala land and missed the word “creme”.
I picked up a bag of them envisioning
yummy chocolate covered marshmallow peeps…
my bubble got popped as soon as I ate one.
They weren’t horrible…
just not what I was expecting.

So I decided to raid my cupboards and use them
up in some sort of popcorn munch…
because everything becomes better
when covered in more chocolate.

Can I get an amen on that? :-)

One one my shopping ventures where I skipped Target…
it is the only way I can get to other stores:-)…
I found big bags of sixlets at the $ Store.
These are like a blast from my past.
I actually remember buying these
at a small Five and Dime store when I was way younger.
Does anyone else remember .5 and .10 stores?
I know I’m not that old.
But it was a blast as a kid to be able to buy lots of candy
for little money…
because little money is what I always had!

Anyway, back to the munch mix…

 

 

Easter Popcorn Crunch and Munch

Ingredients
  • 6 cups popped popcorn
  • 1 c. peanuts
  • 1 c. sixlets
  • 1 bag peepsters, chopped up
  • 1 c. melted white chocolate
Instructions
Lay the popcorn out on a wax paper lined baking sheet…preferably the biggest one you have. Drizzle with 1/2 c. melted white chocolate. Sprinkle with 1/2 of the peanuts, sixlets, and peepsters. Toss with your hands…prepare to be a mess. Drizzle with more white chocolate and sprinkle the rest of the candy on top. Toss again. Place the tray in your refrigerator, so that it sets up even faster, because you want to munch on it right away:-) Store leftovers in a tightly sealed container.
