I love s'mores! There is something about a sticky, toasted marshmallow pressed between chocolate bars and graham crackers. However, I could do without the sticky hands, dirty sticks, and smoky clothes that usually accompany this sweet treat.
I'm always looking for fun and delicious ways to make s'mores without all the mess. These s'mores blondies and these cookie dough s'mores are a few of my favorites.
This summer, I turned my favorite summer treat into an adorable cookie cup. I modified the dough from my favorite chocolate chip cookie cake to create the base for the treats. Every bite contains graham crackers, marshmallows, and milk chocolate baked into a soft, gooey cookie.
The best thing about these cookies is that you can make them at home without having to start a fire. So, these s'mores cookies are the perfect choice for a summer barbecue, a pool party, or just relaxing on the couch.

These sweet little cookie cups can be made with a handful of ingredients, plus marshmallows and chocolate.
- Chocolate Chip Cookie Dough - Feel free to make the homemade dough or purchase ready-made dough.
- Graham Crackers - You will need three full sheets of graham crackers crushed into crumbs. Do not buy ready-made graham cracker crumbs because you want a slightly bigger texture.
- Marshmallows - For this recipe, I topped the cookies with miniature marshmallows because that's what I had on hand. If you only have regular-sized marshmallows, cut them in half before pressing one onto the cups.
- Hershey's Milk Chocolate Bars - These are mini cookie cups, so I used the snack-sized bars and broke each into four pieces.
How To Make S'mores Cookie Cups
These easy s'mores cookie cups are a fun and tasty twist on a classic summer tradition. They are perfect for any occasion and are super easy to make.
- Beat the butter and sugar in a large bowl until creamy. Slowly mix the wet and dry ingredients, then gently stir in the chocolate chips.
- Use a 1-tablespoon scoop to divide the dough evenly into 24 balls. Roll each ball in crushed graham crackers and then place them in a greased mini muffin pan.
- Pull the pan out of the oven. Gently press an indent in the tops of each cup with the back of the cookie scoop or a tart shaper. Place 4-5 mini marshmallows in the middle of the cookies and then broil for 1-2 minutes.
- Remove and let cool in the pan for 5 minutes, then use a butter knife to gently remove the cookies from the pan. Place on a wire rack and cool for another 5 minutes. Press mini Hershey's bars into the center of the toasted marshmallow.
Storage Recommendations
Keep the s'mores cookies in an airtight container at room temperature for 2-3 days.
Tips and Tricks
- Spray the pan with non-stick cooking spray, like Baker's Joy, so the cookies lift out easily.
- Save time using a roll of store-bought cookie dough instead of making your own.
- Use a cookie scoop to divide the dough into 24 cups evenly.
- Pulse the crackers in a food processor to get small crumbs/pieces. You can also place them in a ziplock bag and roll over it with a rolling pin.
- Do not overbake the dough; the cups will look undone when you remove them from the oven. Trust me and take them out for a softer center.
- Watch the marshmallows carefully when they are under the broiler! You do not want to burn your cookie cups. Well, unless you were one of those kids who always caught their marshmallows on fire, then have at it. Just remember that your house will smell like burnt sugar for hours.
- Allow the cups to cool in the pan for a few minutes so they come out without breaking.
- Wait to add the chocolate bar. The heat from the cookies and gooey marshmallows will cause the chocolate to melt so quickly.
- Press a miniature peanut butter cup into the center of the hot cookies so they look like these peanut butter brownie bites.

S’mores Cookie Cups
Chocolate chip cookie cups rolled in graham crackers and filled with chocolate and toasted marshmallows make it easy to enjoy a delicious campfire treat without all the mess.
Ingredients
- ½ cup unsalted butter, softened
- ¼ cup granulated sugar
- ½ cup packed light brown sugar
- 1 large egg
- ½ teaspoon vanilla extract
- ¼ teaspoon baking soda
- ½ teaspoon table salt
- ½ teaspoon cinnamon
- 1 ½ cups all purpose flour
- 1 cup milk chocolate chips
- ½ cup crushed graham crackers (3 full sheets)
- 1 cup mini marshmallows
- 6 miniature Hershey's chocolate bars, broken into 24 pieces
Instructions
- Preheat oven to 350°F. Grease a mini muffin tin that has 24 cavities.
- Beat the butter and sugar until creamy. Add the egg and vanilla and beat again.
- Slowly mix in the baking soda, salt, cinnamon, and flour until a soft dough forms. Stir in the chocolate chips gently.
- Use a 1-tablespoon scoop to divide the dough into 24 balls. Roll the balls in the crushed graham cracker crumbs and place each one in the prepared mini muffin tin.
- Bake for 10 minutes. Remove the pan and gently press in the centers of the cookies with the back of the cookie scoop or a tart shaper.
- Turn the broiler on. Top each cookie with 4-5 miniature marshmallows. Place the pan on the lower shelf of the oven so the marshmallows don't burn. Toast for 30-60 seconds. Watch carefully and remove them once they start to get golden.
- Let the cookies cool for 5 minutes, then use a butter knife to gently loosen them from the pan and lift them out. Cool 5 more minutes on a wire rack, then press a chocolate bar into the top of each one.

These s'mores cookie cups are totally genius Jocelyn -- pinning!! 🙂 I loved s'mores as a kid; we'd go camping at least twice a summer and always bring a cooler with the supplies each time. But as I grew older, I found I just wanted to toast the marshmallow... And give it away so I could have more chocolate and graham crackers. Strange, I know. But the pure sugar thing just didn't do it for me anymore. But I loved how soothing it was to sit in front of the campfire and concentrate on the perfect golden toastiness, and the friends and I family I handed them off to didn't mind at all!
