Cherries and chocolate chips add a fun surprise inside these easy to make Cherry Chocolate Chip Cupcakes. The fluffy chocolate frosting on top looks fancy, but is easy to swirl on the cupcake tops.

Whenever we travel we look up different restaurants and bakeries to visit while we are there. We will usually buy a few things to sample. Just stopping and looking at the treats is what I enjoy the most. There are so many different and fun ideas in those shops.
If you ever see me in one of these shops, you might see me typing away on my phone. No, I’m not texting. That usually means I saw a unique flavor combo or decorating idea that I don’t want to forget to try in my kitchen. There are so many ideas swirling in my head that I just can’t remember it all these days. Thank goodness for cell phones with list apps, right?
I love baking fun cupcakes for different parties and events.
Now sometimes I will make them from scratch, but most of the time I like to use a cake mix. I am all about the pre-packaged items that I can give a homemade flair. The fun part is finding things to add to these mixes that make the cupcakes taste gourmet without lots of extra work.
When I was asked to create a recipe for the Cake Boss Baking site for their “Love is in the Baking” campaign, I knew I wanted it to be some sort of chocolate and cherry combo. But I also knew I wanted to show you how easy it is to customize a cake mix and create a bakery quality cupcake in your own kitchen.
I was able to test out this 12 cup muffin pan to bake my cupcakes in. I love the non stick quality of the bakeware, and that it came with a red snap on lid. Perfect for taking my treats away from my house and my sweet tooth!
To give these cupcakes a cherry flavor, I substituted some cherry juice with the water and added diced maraschino cherries to a white cake mix. (You can always add a little cherry extract and a drop of red food coloring too, if you want them to be brighter and stronger.)
Chocolate chips and a fluffy chocolate frosting take this from a sweet cherry cupcake to an over the top chocolate covered cherry cupcake! Make sure you do not over fill your decorating bags with too much frosting. You need enough room to twist the bag into the palm of your hand while holding it closed with your thumb and fingers.
For these cupcakes I used the 1M tip in this 6 piece decorating set. I piped the frosting on in a circle, but I didn’t mound it up. You want to leave room to pipe on some Cool Whip to finish off the frosting.
To give this cupcake the final touch, sprinkle on more mini chips and plop a cherry on top. I love using the cherries with stems on baking projects like this. Don’t they just look so much more fun with that stem coming off the top of the cupcakes?
