We go through quite a few apples in our house.  Lunches, after school snacks, and baking are a few ways we get that apple a day.

Our kids have never gone through that really picky stage where they wouldn’t eat fruits and vegetables.   There are a few things that they don’t like, but they know that they will still have to eat some.  Apples are one thing they have liked from the beginning, so we always keep them in our refrigerator.

Apple Snickers Cake

How many of you have had this Snickers Salad before?  It is a definite favorite with our kids.

Of course it always made me laugh every time I heard people talking about this salad, because Snickers and salad just don’t sound right together.  But then I had some of the deliciousness, and I was a believer.   The creamy Jello pudding and Cool Whip mixed with apple chunks and Snickers bars…now that’s the kind of salad I can get behind every night.  That’s one way of having your apple a day right?

The other day I bought more Crunch Pak apples for school lunches and after school snacks.  As much as the kids would like to have cookies and cake every day, we have been trying to enforce more healthy options and I love how convenient the bags are for kids to eat.  Nothing wrong with encouraging the kids to eat more healthy snacks with individual portion sizes. I also picked up an extra bag of apples because I also wanted to make some muffins or bread too.

But then I wandered into the Easter aisles at Walmart, and I had this crazy desire to put Snickers into said muffins or bread.  Of course a bag of those Snickers went into my cart in quite a hurry.  What was that I said about eating more healthy snacks?

My husband just shakes his head in disbelief every time I come home with more candy.  I realize I have issues if you are wondering.  This time I was telling him about my crazy need to bake some apple bread with Snickers when he stopped me.  His suggestion was an apple cake with the Snickers Salad on top as frosting.  The more I thought about it, the better it sounded!  Let me tell you people, he is a genius because this cake is simply to die for.

This Apple Snickers Cake is actually quite healthy…if you forget that it has candy bars and sugar in it.  I used a mixture of applesauce and yogurt in place of any oil and butter.  And 3 cups of chopped apples means lots of apple in every bite.  See totally healthy right?  Ok, fine, now you are shaking your head at me in disbelief too.

Whatever. This cake is amazing!  Case closed on whether it is really healthy or not!

Apple Snickers Cake

Prep Time: 30 minutes

Cook Time: 35 minutes

Yield: 16 pieces of cake

Apple Snickers Cake

Apple Cake with a fun Snickers Salad twist on top.


1/3 cup applesauce
1/3 cup plain yogurt (Chobani)
2 eggs
2 teaspoons vanilla
3 cups peeled and diced apples
3/4 cup sugar
3/4 cup brown sugar
1 3/4 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 1/2 cup chopped Snickers bars, divided
1 cup milk
1 box Jello instant vanilla pudding (3.4 oz.)
1 Cool Whip (8 oz.)


  1. In a large mixing bowl, combine the applesauce, yogurt, eggs, vanilla, and sugars. Beat until creamy. Stir in the diced apples. Combine the flour, baking soda, salt, and cinnamon. Slowly add to the apple mixture until thoroughly combined. Stir in 1 cup of chopped Snickers by hand.
  2. Pour the apple batter into a 9x13 pan that has been sprayed with non stick spray. Bake the cake at 350* for 35 minutes. Remove from the oven and place on a cooling rack. Cool completely.
  3. Whisk together the milk and pudding mix for 2 minutes. Fold in the Cool Whip gently. Spoon on top of the cooled cake and spread out. Place in refrigerator for about on hour to thicken. Serve with extra candy bar pieces. Makes 16 pieces.

So I hear there is this big game coming up this weekend?    Basketball right?  Haha!  Just kidding!  I know it’s Super Bowl weekend.  We are actually headed to two parties that night.  Booyah!  Two tables full of yummy snacks and appetizers!  That’s what I’m going for!  And these Apple Whiskey Chicken Meatballs are one of the appetizers I want to bring this weekend.

Apple Whiskey Chicken Meatballs

 A couple weeks ago I was walking down the aisles at Walmart when I saw this Apple Whiskey barbecue sauce from Open Pit.  Since it was just $1, into the cart it went.

I decided to make some chicken meatballs and add some shredded apples to the mix.  I always keep a bag of Crunck Pak apples in our fridge for the kids to snack on.  I peeled the skins off and put them in my Ninja food processor.  5 seconds and the apples were ready to be mixed in.

Salt, pepper, garlic, and some shredded parmesan cheese give the meatballs a great flavor along with the apples and the barbecue sauce.  You bake them in the oven for about 20 minutes, and then put them in a crock pot with some of the Apple Whiskey barbecue sauce.

Cute tooth picks are not required, but they sure do make meatballs more fun!  You could even pick out the ones that match the team colors…if you like to match and all!

Apple Whiskey Chicken Meatballs

Prep Time: 20 minutes

Cook Time: 20 minutes

Yield: 24 meatballs

Apple Whiskey Chicken Meatballs

Apple chicken meatballs get their flavor from ground chicken and shredded apples. The apple whiskey barbecue sauce compliments it very well.


1 pound ground chicken
1 cup shredded parmesan cheese
1/2 cup shredded apples
1/2 cup plain breadcrumbs
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon diced garlic
1 egg
1 Tablespoon dried parsley flakes
1/2 cup Open Pit Apple Whiskey barbecue sauce


  1. Combine all the ingredients in a bowl and mix very well. Shape the meat mixture into 24 good sized meatballs. Place on a baking sheet that has been sprayed with non stick spray.
  2. Bake the meatballs for 20 minutes at 400* Remove from oven and place in a crock pot. Add the barbecue sauce and stir. Keep warm. Refrigerate leftovers


Feel free to use more or less barbecue sauce according to your taste.

I have a small confession to make…

Biscoff Apple Muffins

Biscoff Apple Muffins are a great way to start the morning….or the afternoon.

I love that we don’t usually have too much going on Sunday afternoons.
Today I got to snuggle on the couch with my youngest
and watch a Disney movie.
Even though he is getting older,
he still likes to cuddle and hold my hand.
It will be a sad day indeed when he decides his mom isn’t cool.

He is my little buddy after all!
So we sat and drank our coffee and had a movie date.
It was a really good day.

AND filled with biscoff and apples.
Just recently grocery stores in our area
started carrying the deliciousness that is Biscoff.
(I may have bought a few jars.)

Biscoff Apple Muffins

Prep Time: 15 minutes

Cook Time: 28 minutes

Yield: 15 mufins

Biscoff Apple Muffins

Apple muffins made with Biscoff spread and topped with a streusel topping.


For the Muffins
1/3 c. quick oats
1 2/3 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 c. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1/3 c. oil
2 eggs
1/4 c. buttermilk
1/4 c. biscoff
1 tsp. vanilla
1 c. apples, peeled and diced
For the Topping
3/4 c. quick oats
1/2 c. flour
1/2 c. sugar
1 tsp. cinnamon
1/3 c. butter, chilled


  1. Whisk all the dry ingredients in a large mixing bowl. Make a well and add all the wet ingredients. Beat on low until mixed. Stir in the apples by hand.
  2. Combine all the topping ingredients and cut the butter in with a fork until crumbly. Fill 15 muffin cups 3/4 full. Top with a large spoonful of topping. Bake at 350* for 28-30 minutes. Cool on a wire rack. Store in an air tight container. Makes 15 muffins.
