Baked Cauliflower
I love how versatile cauliflower is. It's a tasty substitute for so many ingredients. Plus, this veggie is always in season, so you can always find it at the grocery store. Over the past few years, we have enjoyed it in so many different ways.
Cauliflower is delicious when pureed in cauliflower soup. It can also be used to make cauliflower rice for dishes like coconut curry shrimp or mashed and served with chicken stroganoff meatballs.
I like eating healthy dinners with cauliflower, but I also love the taste and texture of roasted vegetables. Coat cauliflower with oil and spices, then bake for a quick and easy dinner with minimal effort.
Why You'll Love This Recipe
- Roasted cauliflower tastes amazing and is so easy to make.
- Cauliflower holds up under high heat, and even if it gets a little bit charred and crispy, it still tastes great.
- You can also add different seasonings to change the flavor of the roasted cauliflower.
- It pairs well with different meats. Serve it with steak, parmesan chicken tenders, or stuffed pork tenderloins.
- It is flavorful and healthy, making it an excellent choice for any eating plan.
Main Ingredients
This baked cauliflower recipe needs just a few ingredients, most of which you probably already have in your kitchen.
Main Ingredients
- Fresh Cauliflower - We usually buy an extra-large cauliflower head at Sam's Club to get 6-8 cups of florets.
- Avocado Oil - Allows the spices to stick and creates the roasted texture outside.
- Spices - We used oregano, dried basil, onion powder, garlic powder, a pinch of salt, and black pepper for this recipe. Coarse sea salt can also be used.
How To Roast Cauliflower
You can prepare a healthy side dish in minutes with just a few simple ingredients.
- Cut the florets. Place the whole head of cauliflower on a cutting board and cut it into bite-sized pieces. If the florets are bigger, cut them in half to have a flat side. This will help to get more crispy caramelized edges while cooking because the flat sides will be on the pan.
- Season and shake. Add the pieces to a large mixing bowl, then drizzle olive oil. Season the cauliflower with your favorite seasonings, and then stir to coat everything.
- Bake. Place the cauliflower florets in a single layer on a large prepared baking sheet pan. Do not crowd the pieces. Bake for 30-35 minutes, flipping halfway through so they roast evenly and turn golden brown.
- Serve. Remove and serve immediately with your choice of meat. Or make it early and snack on it all day because it's so good.
Storage Recommendations
In the Refrigerator: Keep the cooled vegetables in an airtight container in the fridge for 4-5 days.
To Reheat: Reheat the chilled veggies in the oven, microwave, or air fryer.
Tips and Tricks
- Line a rimmed baking sheet with aluminum foil for easy cleanup later.
- Wash the veggies gently, then pat dry with a paper towel.
- Cut the cauliflower into even pieces so everything roasts evenly.
- Use enough oil to coat the pieces lightly. Start with a little, then drizzle more if needed. Dry veggies can burn, while too much oil can make them mushy.
- You can also put the small florets, oil, and spices in a large ziplock bag and shake until well-coated.
- Do not crowd the veggies on the sheet pan. This will cause them to steam instead of roast.
Variations
Cauliflower is a mild vegetable. So, you can use different spices, seasonings, or cheese to make this roasted cauliflower recipe taste different every time. Choose one of these options.
- Taco Seasoning
- Parmesan Cheese
- Italian Seasoning
- Ranch Powder
- Curry Powder
What to Serve with Roasted Cauliflower
Baked vegetable sides go with just about any protein or casserole. Choose spices and seasonings that will also pair with the main dish on your dinner table.
- Shrimp Burgers
- Sheet Pan Cod
- Stuffed Pork Tenderloins
- Pork Chops
FAQs
Do not boil or soak the vegetables before baking because they will become soggy.
400° is a great temperature to bake and crisp any vegetable. Start with veggies that take longer to cook, then add the other ones a little later.
Overcrowding the florets on the baking sheet will cause the veggies to steam instead of roast. Leave more room around each piece so they do not get mushy.
