These baked strawberry granola bars can be made with a few simple ingredients. Here are some of the basic things you will need for this recipe.
- Quick Oats - These are the primary base. The small oats hold together better, but you can also use rolled oats.
- Flour - Helps to give the dough a thicker structure.
- Eggs - Binds the ingredients together.
- Butter - We like to use unsalted in our recipes because it gives a better control over the saltiness in a recipe.
- Brown Sugar - Adds some sweetness to the treats and helps with the moist chewy texture.
- Freeze Dried Strawberries - This gives the delicious strawberry flavor and color without adding extra moisture to the dough.
- White Chocolate Melts - Adds a pretty and delicious topping to the treats. It's totally optional, but I highly recommend it.
How to Make Granola Bars
The dough for these strawberry granola bars can be prepared in less than 10 minutes. Grab a bowl and let's get baking!
- Mix the wet ingredients. In a mixing bowl, beat the butter and sugar until creamy. Add the eggs and strawberry and vanilla extract and mix again.
- Stir in the dry ingredients. In another bowl, stir together the flour, oats, and salt. Slowly add it to the creamed mixture. It will be very thick.
- Add the strawberries. Chop the freeze dried strawberries into small pieces. Set ¼ cup chopped strawberries aside. Stir the rest of the strawberry pieces gently into the batter.
- Bake and decorate. Press the dough evenly into the prepared pan and bake. Remove and let cool completely on a wire rack. Cut into 12 bars. Drizzle with melted white chocolate and add the reserved strawberry pieces.
Storage
On the Counter - Store the baked oatmeal squares in an airtight container at room temperature for 3-4 days.
In the Refrigerator - Wrap each one tightly in plastic wrap and keep in the refrigerator for 4-5 days.
In the Freezer - You can freeze these snacks in a ziplock bag for up to 3 months. How in the refrigerator overnight.
Tips and Tricks
- Line the pan with parchment paper, so you can easily remove the entire pan of oat bars before cutting.
- Experiment with different mix in flavors like chocolate chips, nuts, or freeze dried marshmallows.
- Love chocolate covered strawberry? Try adding ½ cup of mini chocolate chips to the dough before baking. Then drizzle dark chocolate on the tops instead of white chocolate for a chocolate covered strawberry granola bar.
- Want more crunch? Add toasted nuts to the dough for a crunchier texture. You can also toast the oats ahead of time for a nutty flavor.
- Do not over bake these bars, or they will become hard and crumbly.

Yes. Feel free to use any freeze dried fruit that you like for your oatmeal bars. Have fun trying different fruit flavors like raspberry or blueberry.
I recommend using quick oats for this recipe. Rolled oats will give you a coarser, chewier texture. If you only have rolled oats you could break them down in a blender.
This is not necessary. For the best soft and chewy texture you do not need to toast the oats.

Strawberry Granola Bars
Ingredients
- ¾ cup unsalted butter, softened
- ¾ cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon strawberry extract
- 1 ½ cups all-purpose flour
- 2 ½ cups quick oats
- ½ teaspoon salt
- 2 ounce bag freeze dried strawberries, chopped into small pieces
- ¾ cup white chocolate melts (5 ounces)
Instructions
- Preheat oven to 350°. Spray a 9x13 pan with nonstick baking spray.
- In a mixing bowl, cream the butter and sugar. Add the eggs and extracts and beat again.
- In another bowl, stir together the flour, oats, and salt. Slowly add to the creamed mixture. It will be very thick.
- Remove ¼ cup chopped strawberries and chop very finely. Place in a sealed bag and set aside.
- Stir the rest of the strawberry pieces gently into the batter.
- Press the dough evenly into the prepared pan. Bake for 15-18 minutes. Remove and let cool completely on a wire rack.
- Trim the outside edges off the entire block of bars, then cut into 12 even bars.
- Melt the white chocolate wafers according to the package directions. Spoon into a plastic baggie and cut one corner off.
- Drizzle over the tops of the bars and sprinkle with the reserved strawberry pieces. Store in a tightly sealed container on the counter.
Notes
Optional: Melt ¼ cup white chocolate melting wafers and drizzle over the tops of the cooled bars.
