Our kids love it when we make monkey bread muffins or cinnamon sugar pull-apart bread for a fun breakfast treat on the weekends. It's also a family favorite for the holidays too.
For this pull-apart bread recipe, we are starting with a homemade dough made with quick-rise yeast. This step skips a rise time, making it faster to make the gooey apple cinnamon bread!
I used the dough recipe from this raspberry pull-apart coffee cake for the base of this bread. This sweet bread features layers of apple pie filling and is topped with a sweet glaze, making it irresistible.

What is pull apart bread?
Pull-apart bread has indentations that allow it to be "pulled" apart into individual servings. It can be baked in different pans, but loaf pans and bundt pans are the most common.
It can also be called monkey bread, sticky bread, or bubble bread.
Most pull-apart breads use canned biscuit dough. If you are short on time, that works. But trust me, and make this gooey bread with homemade bread dough.

How to Make Apple Pull Apart Bread
- Pull Apart Bread Dough - Mix 2 cups flour, sugar, yeast, and warmed milk and butter in a mixing bowl until it comes together. Add the rest of the flour and mix until a soft dough pulls away from the bowl. Cover and let rise for one hour. Cut into 32 pieces and flatten to about 3 inches each. Dip each slice in cinnamon sugar before adding the apples.
- Cinnamon Apples - Sauté diced apples in butter until slightly softened. Stir in sugars, cornstarch, and cinnamon and cook until soft and thickened. Let cool slightly. Place a spoonful of apple filling on 30 of the dough circles. Fill TWO bread pans with 15 slices each. Add one dough slice without apples to the top and then bake.
- Glaze - Mix powdered sugar and milk until smooth. Drizzle over the warm apple bread and devour.
Storage Recommendations
This apple bread is best eaten the day it is made, but it can also be kept in a loosely sealed container and enjoyed the next day.
Warm it in the oven for 5-10 minutes or microwave slices for 10-15 seconds to get that fresh-from-the-oven taste.

Apple Cinnamon Pull Apart Bread
This Apple Cinnamon Pull Apart Bread is a delicious treat to make for breakfast or brunch. The apple pie filling and cinnamon sugar coated bread dough bake together into the most ooey, gooey Fall bread.
Ingredients
For the Dough
- 1 ¼ cups milk
- ¼ cup unsalted butter
- 4 cups all-purpose flour*, divided
- 1 envelope quick rise yeast
- ¼ cup granulated sugar
- ½ teaspoon salt
For the Apples
- 5 cups finely diced apples
- 5 tablespoons unsalted butter
- ⅔ cup Light brown sugar
- ¼ cup granulated sugar
- 1 tablespoon cornstarch
- 1 ½ teaspoons ground cinnamon
For the Coating
- ¼ cup granulated sugar
- ½ tablespoon ground cinnamon
For the Glaze
- 1 ½ cups powdered sugar
- 2-3 tablespoons milk
Instructions
- Place milk and butter in saucepan over low-medium heat until melted. Cool mixture to 110°F.
- Combine 2 cups flour, yeast, sugar, salt, and warm milk in a mixer bowl. Beat with a dough hook for 2 minutes until combined. Slowly add 2 more cups of flour until dough balls forms.
- Place dough on floured surface and knead 10 times or until smooth.
- Place in greased bowl, turning once to coat. Cover bowl with a towel and place in a warm place for an hour or until dough doubles in size.
- While dough is rising, place apples and butter in a skillet over medium heat. Sauté until butter is melted.
- Stir sugars, cornstarch, and cinnamon into apples. Cook until tender and thickened, stirring often. Remove from heat.
- Preheat oven to 375°F. Spray two 9x5 bread pans with nonstick baking spray.7
Punch dough down and cut into 32 pieces. Flatten each one into a 3-inch circle. - Stir together cinnamon and sugar. Dip both sides of dough circles in cinnamon sugar and place on a sheet pan.
- Spoon one tablespoon of apples on top of 30 flattened circles. Stack 4 circles together and place in greased loaf pan. Repeat with three more stacks, but on fourth stack place one circle without apples on top. There will be 16 circles in each pan when you are finished.
- Sprinkle any remaining cinnamon sugar over tops of dough.
- Bake for 25 minutes. Let bread cool in pans for 10 minutes, then flip out onto a baking sheet. Immediately place a plate on top of bread and flip it over again. Repeat with other loaf. Let cool slightly.
- Stir together powdered sugar and milk until creamy. Drizzle over tops of warm pull apart bread. Serve immediately. Store leftovers in a loosely sealed container.
