A few months ago, my husband kept saying we needed to create another queso dip since we all loved this chicken queso dip so much. His idea was to create a Philly cheese steak version.
The mixture of melted cheese, meat, and peppers was incredible served with crusty slices of bread. Everyone around our table gave the steak queso two thumbs up.

Key Ingredients
This steak queso dip is a cheesy dip that is made with a few simple ingredients. Make it ahead of time, then reheat in a crock pot before serving.
- Peppers and Onion - Use red and green bell peppers for a great color and flavor.
- Roast Beef - Deli meat makes this dip very simple to make. You could also grill up some thinly sliced ribeye for an authentic Philly cheesesteak flavor.
- Cheese - Our recipe uses White Velveeta cheese to make this queso dip extra creamy and delicious!
- Milk - Add a little milk to thin out the melted cheese until it is the perfect dipping consistency.
- Green Chilies - One small can adds just a little spice and a whole lot of flavor. Feel free to leave them out, if you don't like spicy peppers.
How to Make Cheesesteak Dip
A pan of cheesesteak dip can be ready to serve to your guests in less than 20 minutes. Serve it with your favorite chips or crackers. It's even delicious with veggies, if you need a low carb appetizer.
- Heat a little bit of olive oil in a skillet and sauté the onions and peppers until soft.
- After the veggies are soft, add the chopped roast beef and green chilies. Once everything is warm and sizzling, remove it from the heat and set it aside.
- Add the Velveeta cheese cubes and milk to a saucepan. By adding a little bit of milk, it helps make the cheese a little bit more creamy for dipping.
- Once the cheese is melted and smooth, stir in the meat and pepper mixture.
- Season to taste with salt and pepper, if needed. Serve hot with your favorite dippers.
Philly Dip Tips
- Dice the veggies and meat into small, bite sized pieces to make it easy to scoop with chips.
- If you love mushrooms, saute ½ cup diced mushrooms with the peppers and onions.
- Cook thinly sliced ribeye steak in a skillet in place of using deli meat for a more robust and traditional flavor.
- Have leftover steak from a previous dinner? Dice it up and use that instead of the roast beef.
- Add a splash of Worcestershire sauce to the meat mixture as it cooks to season the mixture.
- Use any color peppers you want. A mixture of red and green gives the dip a nice color.
- Control how thick your queso dip is by adding milk to thin it out.
- Don't like beef? Try using grilled chicken or shredded rotisserie chicken instead.

Storage Recommendations
In the Refrigerator - Store any leftover cheese dip in an airtight container in the refrigerator for up to 3 days.
To Reheat - Place a single serving in a microwave safe bowl and heat for 30-60 at high power. Stir and repeat until the cheesesteak dip is warm. You can also heat this on a stovetop for 5-10 minutes. Stir occasionally, so the cheese does not stick to the bottom of the pan.
Recipe FAQs
Ribeye is the traditional meat in a cheesesteak. You can also use roast beef, sirloin, flank steak, or round bottom steak. For a cheaper option, use ground beef.
Cheese tends to separate and has a different texture when thawed after freezing. For this reason, I do not recommend freezing cheese dip.
Make this Philly cheese dip ahead of time and stored in the fridge for up to 3 days. Place everything in a slow cooker or in a pan on the stove top to reheat when ready.

Philly Cheesesteak Dip
Enjoy the taste of a Philly cheesesteak in this awesome Philly Cheesesteak Dip. Loaded with onions, peppers, and beef, this cheesy queso is perfect for your next game day party or potluck.
Ingredients
- 2 tablespoons olive oil
- ½ cup diced red and green peppers
- ¼ cup diced onions
- 1 - 7 ounce package finely chopped deli roast beef (1 cup)
- 1 - 4 ounce can diced green chilies
- 1 pound white Velveeta Queso cheese, cubed
- ¼ cup milk
- ½ teaspoon black pepper
- baguette or chips
Instructions
- In a skillet saute the onions and peppers in the olive oil until tender.
- Add the roast beef and green chilies and stir until heated through. Set aside.
- In a large sauce pan combine the cheese and milk over medium heat. Stir until melted and creamy.
- Stir in the beef mixture and cooked veggies.
- Serve immediately with baguette slices or chips.
