
This past week my husband challenged me to try
eating JUST fruits and veggies.
Hhhhmmm, I think he knows that I have been letting
my sweet tooth rule my diet lately.
So last Tuesday I began.
The first day was not really a problem.
But by the end of the second day,
all I wanted to do was raid all the Easter baskets
and pillage every single reeses egg/cup.
Instead I went to bed and the urge went away!
Then it was strange…the rest of the week I didn’t
really have a big desire to go all crazy on chocolate.
(I think keeping my coffee/creamer was what kept me going)
I also found that if I wasn’t in my kitchen
being the crazy baking lady,
there were no goodies to munch on.
But then Friday night came and I just wanted to bake…
something…anything!!!
We had some avocados sitting on the counter,
so I decided to work them into a “healthy” chocolate muffin.
Google is such a great thing right?
It totally bursts my bubble every time I think I have a great idea…
turns out lots of people thought avocados were a
great addition to chocolate muffins:-)
But how about adding some other stuff like
applesauce, yogurt, and coconut oil…
that makes anything healthy right?
Time to get our green on…muffin style.
Isn’t this batter freaky looking???
It is a really good thing that chocolate is getting added to it
because there was no way my kids would have touched this otherwise.
My first batch had some baking issues…
they were undone when I first pulled them out.
So they went back into the oven for more time
in an attempt to save them.
They still didn’t seem to be setting up right,
but I let them cool and put them in a container for the morning.
I really thought I would have to redo the ingredients, BUT…
The next day…oh my goodness!!!!!
These were so amazing!!!
Think fudge breakfast brownie…on steroids!
I made another batch right away to fix the baking issues
because I knew that I had to share these with you…
and yup those were much better!
You just HAVE to give these muffins a shot!
Don’t let the thought of avocados
in your breakfast scare you away!
Seriously all you taste is chocolate!

Chocolate Avocado Muffins

Prep Time: 15 minutes
Cook Time: 26 minutes
Ingredients (15 muffins)
- 1/2 c. coconut oil
- 1/2 c. sugar
- 1/4 c. applesauce
- 1 tsp. vanilla
- 1 ripe avocado, smashed
- 1/3 c. yogurt
- 2/3 c. milk (I used almond milk)
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. cocoa powder
- 2 c. flour
- 1 c. mini chocolate chips
Instructions
In a mixing bowl, cream the coconut oil and sugar until combined. Add the applesauce, vanilla, yogurt and smashed avocado and beat until creamy. Whisk together all the dry ingredients in another bowl. Add the dry ingredients alternately with the milk to the mixture, slowly beating it in. Stir in the chocolate chips by hand. Divide the batter into 15 muffin liners. Bake at 400* for 26 minutes. Let cool for about 2 minutes in the pan and then remove to a wire rack to cool completely. Store in a tightly sealed container overnight. They are much better when they have had time to set up.

I totally need to make these. I’ve been trying to “diet”–to no avail. Blogging sweets makes it way too hard for me; I don’t have enough willpower to bake something and not eat it.
Okay, I need to take your husband’s challenge. But can I make these muffins for my attempt at fruit and veggies???? OMG I have to make them. I kinda have a love affair with avocados…
Ah! I hear it from my husband, too. And my daughter…. and now my grand daughter. Why do people seem to think that sugar is so evil? I mean… it gives you energy and every Mom and Grandma doing half her job NEEDS energy. Plus – it’s derived from a plant! That’s vegetation. I can’t wait until they someday prove that it’s actually healthy!

I am definitely going to try these! I use avocado mixed with light cream cheese in cornbread muffins instead of butter and they really taste great

Have just tried these – I had some avocados as I’m on a health kick but back to work Monday was a killer and so I needed some serious chocolate! Haven’t tasted them yet – but the batter tasted good!

how fun! i love sneaking ‘good stuff’ into sweets – my most successful sneak to date was when i hid a bunch of beets (my husband’s most hated food) into a spiced chocolate cake with ganache. he loved it! =) these look fantastic, too – will have to try ‘em soon!

The muffins were great! They didn’t last long enough to freeze here, but I don’t see why you couldn’t. I think as long as you wrap them and put in a freezer bag, they should be fine:-) Let me know if you try it.
Muffins are in the oven. I am curious how they’ll turn out. The dough was light and fluffy.
They bake up with a dense fudge like texture. They are even better the next day. I can’t wait to hear what you think of them
