A few weeks I was at Walmart, and they had boxes of "baking" bananas on sale. I already have 2 large ziplock bags of ripe bananas in our freezer, but I decided to purchase a few more bunches.
It's safe to say we will be making lots of banana recipes for the next week. I'm not going to lie. I cannot wait for another slice of the Best Banana Cake, so that one is first on my list to make again.
So far this week we have made Chocolate Banana Bread, Peanut Butter Cup Banana Bread, and then we made this Banana Toffee Cake twice. And there are still a few bananas waiting to be use up...
I have a feeling I'm going to need to freeze the few ripe bananas on the counter because I'm a little over baking with bananas right now.
Plus, that way we can make more Peanut Butter Banana Ice Cream. It's our daughter's favorite way to make a quick "ice cream" dessert.
This banana cake recipe is one I found in an old Quick Cooking cookbook years ago, and we have been making it ever since then. The original recipe has you stir some of the topping ingredients into the batter, but I like to layer it instead.
The center bakes up gooey and delicious with that little cinnamon sugar swirl in the center and on top. Trust me. It's the best way to bake this cake.
How to make Banana Toffee Cake:
- Stir together toffee bits, chocolate chips, brown sugar, and cinnamon. Set aside.
- Beat the cream cheese, butter, and sugars until creamy.
- Add eggs, banana, and vanilla and beat again.
- Slowly mix in the dry ingredients and beat until everything is mixed in.
- Spread half the batter in a 9x13 pan. Sprinkle half the topping ingredients evenly over the top.
- Repeat the layers and bake.
This easy banana cake is one that tastes amazing fresh out of the oven, but it also seems to get better as it sits covered on the counter.

Banana Toffee Cake
Enjoy a slice of this Banana Toffee Cake with a hot cup of coffee. This easy banana cake recipe has a sweet cinnamon sugar swirl with toffee bits and chocolate chips in the center and on top that bakes up gooey and delicious.
Ingredients
For the Cake
- 8 ounces cream cheese, softened
- ½ cup unsalted butter, softened
- ¾ cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 cup mashed ripe bananas (2-3 medium)
- 2 teaspoons vanilla extract
- 2 ¼ cups all purpose flour
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- ½ teaspoon salt
For the Topping
- 1 cup toffee baking bits
- ½ cup mini chocolate chips
- 2 Tablespoons packed brown sugar
- 2 teaspoons cinnamon
Instructions
- Preheat the oven to 350 degrees. Spray a 9x13 pan with nonstick spray.
- In a small bowl combine the topping ingredients and set aside.
- Beat the cream cheese, butter, and sugars until light and fluffy.
- Add the eggs, banana, and vanilla and cream again.
- Stir together the salt, flour, baking powder, and baking soda. Slowly add the flour mixture to the cream cheese mixture.
- Spread half the batter in a greased pan. Evenly sprinkle half the topping ingredients over the top.
- Repeat the layers and bake for 40-44 minutes or until a toothpick inserted in the center comes out with a few crumbs. Remove and let cool.
- Store cake in a tightly sealed container on the counter for 2-3 days.

Hi, sorry, is it supposed to be how much of cream cheese? I see 1 - 8 ounces which is quite a difference haha!

can you use fat free cream cheese?

I would recommend using the neufchatel cheese in this, but the fat free might work too. I hate to say yes without actually trying it though. I hope that helps.

I've dealt with the fruit flies! The crunches have left me in pain sitting up at work all day! I've forgotten about cookies one too many times before! I can relate on so many levels Jocelyn! Oh, and did you know that I love banana cakes so much? I've never tried with with toffee before though! It looks perfectly moist.. I wouldn't have banana cake any other way.

Mm, this cake looks like something I need on my plate right now! Yummy bananas, toffee, and that bubbling top... delish. Also, I do that car thing ALL the time. One time, a car exactly like mine was parked two from my actual car, and the imposter car had it's windows down, doors open, and a dude chilling in the backseat. I walked right up to the driver door, looked inside (with a face that was surely priceless for that dude in the back) and began frantically looking around to make sure it wasn't my car (it was much dirtier ;)) so I know the feeling!
