Banana Toffee Cake

Things I’ve learned recently are…
banana cake, sweet recipes, dessert recipes
1.  Don’t set the kitchen timer for your cookies and then go out of the room, down the hall, and into the bathroom.  Chances are you won’t hear the timer go off and then your cookies will be slightly overdone when you remember that you have cookies in the oven.
2.  If you do 100+ crunches on an exercise ball on day 1, don’t laugh, sneeze, or cough for at least 3 days after these said crunches.
3.  Don’t let sick babies slobber all over your necklace and cough in your face, unless you like being sick for 2 weeks straight.  (it’s ok…he was really, really cute:-)
4.  When you buy 4 bunches of already ripened bananas on discount, you need to bake with them very soon or your kitchen will become home to fruit flies very quickly.
5.  If you come out of the gym, don’t just assume the first black van you see is yours.  There are other black van owners that go to your gym too.   Always look inside the window first to see if you recognize the items in the front cup holder:-)

Back to the bananas…
so last week I was at Walmart and they had boxes of “baking” bananas on sale.
Never mind the fact that I already have 2 large ziplock bags of these bananas in my freezer,
I decided to purchase 4 more bunches.
It’s safe to say bananas are in my top 3 favorite fruits list.

So we have had muffins, smoothies, cake, and fruit flies.
One of these days I will actually try this easy tip to get rid of the flies,
instead of chasing them with a sponge.
(yes, laugh, it is a funny mental picture, I know:-)

This cake I found in an old Quick Cooking cookbook
was the perfect way to get rid of 3 bananas quickly.

I love easy to mix it up and toss it in a pan kind of recipes.
My kids love when I add chocolate chips to any kind baked good.
This was a win win for all of us!!!

Banana Toffee Cake

Prep Time: 15 minutes

Cook Time: 30 minutes

Yield: 16 squares

Banana Toffee Cake

Banana Cake with a Chocolate Chip Toffee mix swirled inside

Ingredients

1 pkg. cream cheese (8 oz.)
1/2 c. butter
3/4 c. brown sugar
1/2 c. sugar
2 eggs
1 c. mashed bananas (3 medium)
2 tsp. vanilla
2 1/4 c. flour
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
1 c. toffee baking bits
1/2 c. mini chocolate chips
2 Tbsp. brown sugar
2 tsp. cinnamon

Instructions

  1. Cream the cream cheese, butter, and sugars until light and fluffy. Add the eggs, banana, and vanilla and cream again. Sift together the salt, flour, baking powder, and baking soda. Slowly add the flour mixture to the creamed mixture.
  2. In a small bowl combine the toffee bits, chocolate chips, brown sugar, and cinnamon. Stir 1/2 c. of this into the batter. Spread the batter in a greased 9×13 pan. Top with the rest of the topping ingredients. Bake at 350* for 30-35 minutes.

  1. Yum! Funny about your van. My brother was visiting a few months ago and totally walked to the wrong car and GOT IN! I stood there and completely dissolved into laughter. He got out and pretended that he had meant to do it! Oh man. His red face was even funnier!

  2. Mm, this cake looks like something I need on my plate right now! Yummy bananas, toffee, and that bubbling top… delish. Also, I do that car thing ALL the time. One time, a car exactly like mine was parked two from my actual car, and the imposter car had it’s windows down, doors open, and a dude chilling in the backseat. I walked right up to the driver door, looked inside (with a face that was surely priceless for that dude in the back) and began frantically looking around to make sure it wasn’t my car (it was much dirtier ;) ) so I know the feeling!

  3. I’ve dealt with the fruit flies! The crunches have left me in pain sitting up at work all day! I’ve forgotten about cookies one too many times before! I can relate on so many levels Jocelyn! Oh, and did you know that I love banana cakes so much? I’ve never tried with with toffee before though! It looks perfectly moist.. I wouldn’t have banana cake any other way.

  4. Yummy. This looks good. We have had fruit flies in our kitchen the past couple weeks. Kids have been laughing cause I chase the flies with the vacuum. It works well :)

  5. Since I started banana bread fest 3 weeks ago, I have made about 6 diff kinds of banana breads and cakes (and some of them needed more than 1 trial…Lol) and so this cake looks RIGHT up my alley! I can’t get enough banana cakes lately!

  12. I made this yesterday and it is DELICIOUS!! Warm out of the oven was a treat, but even today it is just as yummy. Super moist cake and easy to make, I always have a few bananas on hand for banana recipes. Thanks so much for this recipe, I have passed it on to many already! This is a keeper in my recipe box!
