When it's hot outside I have zero interest in slaving over a hot oven. During the summer my go-to treats are always no bake desserts. I love keeping things like red hot Jello, no bake cookies, and a few different cheesecake cups in our fridge.

Get ready for the easiest cheesecake dessert cups you'll ever make! Layer cake, no-bake cheesecake, and pie filling in mini Mason jars to make the cutest peach parfaits.
- Cut the cake. Use a sharp knife to cut half the cake into small cubes.
- Make the filling. Beat the softened cream cheese and sugar in a bowl until smooth and creamy. Gently stir in the caramel ice cream topping and some Cool Whip.
- Assemble the parfaits. Divide 1 ¼ cups of the cake cubes into the jars. Top with ½ the cheesecake filling and peach pie filling. Repeat the layers again.
- Add toppings. Spoon whipped cream into a piping bag and add swirls to the top of each one.
Storage Recommendations
Place a lid on top of the parfaits and place in the refrigerator. They will keep for 2-3 days in the fridge, but they are best if served within 24 hours of making them.

Peach Cheesecake Parfaits
Peach pie filling layered with angel food cake and a caramel cheesecake filling makes a delicious no bake dessert for parties or picnics.
Ingredients
- 1 - 8 ounce package cream cheese, softened
- ¼ cup packed brown sugar
- ¼ cup caramel ice cream topping
- 1 - 8 ounce container Cool Whip, thawed
- 1 - 21 ounce can peach pie filling
- 2 ½ cups angel food cake cubes
- mint leaves, optional
Instructions
- In a mixing bowl, beat the cream cheese and sugar until creamy. Gently stir in the caramel topping and ½ cup Cool Whip.
- Open the can of pie filling and pour into a bowl. Use a knife to cut the peach slices into smaller chunks.
- Layer the cake cubes, pie filling, and cheesecake in 6 - 6 ounce jelly jars. Refrigerate for at least an hour before serving. Top with extra Cool Whip and mint leaves before serving.

Oh goodness, it sounds like we sent our weather your way! Where I live in California, we never seem to have more than about 2 weeks of spring. It goes from chilly and cold (although not arctic, thank goodness!) to 90°+ in just a few days. And then stays that way until we skip right through fall too. Our weird seasons always surprise me! Anyway, your cheesecakes are absolutely adorable! I've never actually made a dessert in a jar, although I've really really wanted to. I just don't have any jars right now -- time to change that! Peach pie reminds me of summer too. My grandma has the best peach pie recipe (I suppose all families say that about their grandmothers though), but hers was incredible because it used a shortbread crust! No pie crust to roll out; just pat-pat-pat it into the pie plate. And then sprinkle some on top.
